2 Ingredient Pineapple Cake (With Pineapple Sauce)

From American Heart Association Healthy Recipes booklet. A cake that smells like a pineapple upside down cake but without all the fat and calories. The sauce really adds a lot to the cake but is optional if you just want a low-key dessert. -- posted by HokiesLady

Simple Organic Cranberry Sauce

This is a simple cranberry sauce recipe that can be made even easier by substituting 1 cup of orange juice for the fresh orange. Sweetness can be adjusted depending on taste. I'd recommend anywhere from 1/3 to 1 cup. All organic ingredients can be substituted, depending on availability. -- posted by Green Cuisine

Mixed Berry Sauce to Be Enjoyed With Meat

This is a sauce that my family and I enjoy eating with red meat, game or in particular, duck. It was a bit of an experiment but turned out great. The sauce itself takes only 10 minutes to make but it requires the juices from the meat so you have to cook your meat first. PLEASE NOTE: time cooking the meat will vary from meat to meat and person to person so I have not included this in cooking times, I have only included the timing of the actual sauce itself. As it is a fruity sauce do not expect it to be thick and creamy, it is quite fluid but its the flavour that we love. It is both sweet and savory atthe same time as the fruit and the meat juices used are a complete contrast to each other. -- posted by .x.
Versatile Berry Syrup

We use this on our pancakes and waffles but it could be used for crepes or ice cream too. It's very versatile as we've used blueberries, strawberries, blackberries and raspberries all with great success. We don't like our syrup runny either and it has just enough thickness to keep it from running off our plate. -- posted by Grace4Gayle

Mysterious Orange Red Chili Sauce

A lovely brick-red chili sauce that tastes good on everything (chicken, beef, turkey, sandwiches made with the above and probably vanilla ice cream). It's fast and easy to make, it's highly adaptable and uses everyday ingredients.
I made this one day after marinating a flank steak in a mixture of orange juice and cumin. I poured the marinade into a saucepan and reduced it, and decided to add chili powder for kick. Half a dozen batches later, and I think I have a recipe down.

You have to be sure that the sauce is brick red and a bit syrupy. To test this, take a cold spoon and dip it into the sauce. If it drips quickly, it's not ready yet. Feel free to expand the recipe and add other things- this is a speedy recipe that can be made while something else is cooking. -- posted by Ferrouswolf

Fresh Cranberry Relish (Substitute for Cranberry Sauce)

I've been making this for years, and is such a refreshing change from the standard canned cranberry sauce served on holiday tables. It comes together quickly with a food processor. Goes great with turkey or ham, and is especially good on turkey sandwiches! I'm guessing on the quantity this recipe serves, It's enough to make a large serving bowl, and fill 3 jars to give away too! Cooking time is just for boiling water. Hope you enjoy this beautiful addition to your Thanksgiving and Christmas buffet! (don't worry, the orange rind will not be tart, as there is substantial sugar!) -- posted by imatrad

Applesauce

I had some apples I wanted to use up, and I found this recipe for homemade applesauce in The Pillsbury Cookbook (1995). I used 1/2 cup turbinado sugar, but otherwise I followed the recipe exactly. This recipe actually calls for 1/2 cup to 3/4 cup of sugar, but I thought 1/2 cup was sweet enough (add more sugar if you prefer). I learned something new...if you want a chunky applesauce, cook the water and sugar with the apples because most fruits keep their shape when cooked in a sugar-water mixture. They become saucelike when cooked in water (and you add the sugar after it's cooked down). Personally, I thought this applesauce was sweet like a dessert, but it's also quite delicious (and your house smells great). Who knew making applesauce could be so simple and delicious compared to the tasteless stuff they sell at the store? -- posted by AmyZoe

Buttermilk Pancakes With Maple Syrup Apples

These delicious pancake recipe are thin, light, fluffy, and moist with a texture that is a cross between a crepe and a pancake. They are great with the apples or without. The recipe is from "Bon Appétit" (Oct. 2004). Don't overmix the batter (it's okay if there are lumps) to ensure that the pancakes will be airy. If you don't have buttermilk, add 1 T of vinegar to 1 cup (minus 1 T) of milk and let sit for 5 minutes.
Thick Apple Pancakes With Raspberry Sauce

This is a fabulous and impressive recipe (both visually and in deliciousness). It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream! I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries. If you really want a decadent meal, top with whipped cream. You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. It's also great if you mix the apple topping right into the pancake batter. Really, it's hard to go wrong with this recipe. :)

This beautiful brunch dish is served at The Ahwahnee Hotel in Yosemite Valley, CA and was printed in "Bon Appétit" (Nov. 2000). If you are just cooking for one or two, leftover batter refrigerates well. -- posted by blucoat

Strawberry Reduction Sauce

For those of you who don't know what a reduction is, it's a sauce that's cooked longer than normal sauce. This allows the water of the sauce to cook off, leaving a more syrupy sauce. Anyway this works great for crepes and pancakes. I got this recipe just by experimenting with the filling while I was cooking the crepes. -- posted by Smoothie_Man

Easy Slow Cooker Applesauce

I came up with this recipe after I had bought too many apples for me to eat before they started getting soft. I didn’t want to waste them or my money so I used what I had in my house for spices and poof! Out came this recipe. You can really use any kind of apple you want, Mac’s are usually less expensive than most other kinds of apples. The coriander and lemon juice add great brightness to the apples.
I like to eat it plain, but it’s great stirred into hot cereal, or on top of your favorite vanilla ice cream with a little caramel sauce on the side, it tastes like an apple turnover! I know that the spices seem minimal, but they add such a great flavor that’s not overpowering. -- posted by nicolygoay41
