Super-Duper Strawberry Surprise Cupcakes

I came up with these creamy, dreamy, jam-filled, berry-licious treats because I wanted to make something NON-chocolate for Valentine's Day (crazy, I know!). Don't be frightened by the long directions; these cupcakes are quite easy to make. The batter is based on Kim D's recipe #36970. I hope you enjoy these as much as my BF and I did! -- posted by chiclet

Cherry Tiramisu Cups

I prepared these for my girlfriend and I for Valentine's Day, 2007. Easy to make, and visually stunning, this cherry tiramisu can be served in martini glasses, as a perfect finish to a perfect meal.
Note that the cherry sauce should be made a few hours earlier, as it will need time to cool in the fridge. -- posted by RalMiska

Mom's Oops-Tastic Red Velvet Cake

My mom has always made the best red velvet cake you've ever put in your mouth - really! I've had her recipe for years, and recently I searched other red velvet cake recipes to see what the differences were between those and mom's. The only difference I could find was in the amount of vinegar. I pointed out the difference to my mom, and she pulled out the old hand-written recipe that was given to her by one of her long-time friends and co-workers. Additionally, she pulled out the recipe where she re-wrote her friend's recipe. It was then that we discovered my mom had accidentally written "1 tablespoon" instead of "1 teaspoon" of white vinegar. I suppose it was an "OOPS" on her part, but it's the tastiest OOPS you've ever had.
Prep time includes the approximate time to frost the cake. -- posted by luvn-n-the-oven

Really these are more like a dessert than a waffle, top these with whippped cream and fresh berries for a fantastic weekend brunch, your family will rave! The batter can be cooked in a standard or Belgian waffle maker, servings is only estimated, because each waffle maker cooks at a different time, the cooking time for this recipe is not stated.
Kittencal's Strawberry-Glazed Pie

A long time family favorite, fresh strawberries in a delicious glaze piled onto a baked crust then topped with whipped cream, you can use a regular baked pie crust or a graham pie crust, a purchased graham cracker crust makes this easy but of coarse you may make your own crust --- I have even added in strawberry extract for even more flavor in the glaze, but that is only optional --- plan ahead the pie must chill for about 4 hours or until completely set before topping with the whipped cream, prep time includes chilling time. -- posted by KITTENCAL

My DH and I went into a liquor store and 2 little bottles of Cruzan black cherry rum caught his eye! This rum is aromatic, sweet and smooth with a distinct character of fresh cherry. It's sweet, yet slightly tart.

Speedy Brownie Bars

A chocolate explosion! These are by far the richest, gooeyest brownies I've ever tasted-- they don't last more than a day in my house! The recipe says to bake in a 9X13 in. pan, but I prefer an 8X8 in. dish-- packs a larger chocolate punch because it makes thicker brownies (but you might have to bake longer, depending on how set you like your brownies). Amazing recipe for chocoholics everywhere! -- posted by dulce_amore

DH told me late one evening that he needed a dessert to take to work the next day. I'd made a similar pie before, but couldn't find the recipe and didn't feel like searching. A quick trip to the store, ad-libbing as I went and here you go: a decadent chocolate, peanut butter and hot fudge pie that is good frozen or just chilled or heck! forget the pie crust and pour it into parfait glasses, top with hot fudge and whipped cream and enjoy. This is the reduced fat version and I gotta say- you can't tell the difference! -- posted by Houseblend

Fudge Pie With Peanut Butter Sauce for Valentine's Day

Great anytime but for Valentine's Day present this luscious dessert with words of love handwritten across the plate. To allow plenty of room for your message, choose an oversized dinner plate. Spoon remaining 2 oz. melted chocolate into a small Zip-Lock bag or a small squeeze bottle with a narrow tip. (If using a plastic bag, snip a tiny hole in bottom corner, using scissors). Write "Happy Valentine's Day" in chocolate around the rim of a large plate. Then serve placing 1 slice on prepared plate. Top with Peanut Butter Sauce, whipped topping and additional chopped peanuts. Serve with a kiss! -- posted by Chef #723491

Chocolate Amaretti Heartbreakers

"These are really waffled cakes—moist, cocoa-rich and flecked with ground amaretti (Italian macaroons) and bittersweet chocolate. They’re delicious as is with just a sprinkling of confectioners’ sugar, luscious with lightly sweetened, softly whipped cream, and downright indulgent with ice cream and hot fudge sauce." After that, there is no more to be said.
Valentines Day Linzer Heart Cookies

These vegan, dairy-free, gluten-free cookies use the same dough as yesterday’s recipe for Black and White Cookies. My favorite thing about this cookie dough is that it requires only 5 ingredients, keeping the recipe quite simple. You can make this easy, versatile dough into both the black and white cookies and linzer hearts.

Two types of cookies, more Valentine’s fun!

Chocolate Cayenne Truffles

This is a recipe I found on the Internet in several different places. I love it, though I've found that some people find it too intense to enjoy. If you know someone who likes spicy food, this might not be a bad Valentine's Day treat. It starts off cool and sweet, but is spicy when it melts on your tongue. The ginger on the outside helps give a little bite at the start. -- posted by korvus

Triple Chocolate Petit Fours

The recipe as written uses chocolate sponge cake, simple syrup, chocolate frosting, and chocolate glaze. The chocolate sponge cake recipe that I used was found here on Recipezaar from Derf and I added some additional guidelines and tips. The chocolate glaze recipe is from AllRecipes.com. Feel free to use the basic outline of the recipe to create your own petit fours. Just use the basic components (sponge cake aka genoise, simple syrup, some sort of filling like frosting/jelly/buttercream/fruit curd, and glaze such as marzipan/fondant/ganache) and follow the assembly instructions given. You can add flavored liquor, coffee, etc to the simple syrup recipe (equal parts sugar and water) to give a little extra flavor. -- posted by Eat Your Vegetables!

Flaming Volcano

This cocktail is usually served in a volcano bowl with long straws to be shared with a group. In the top center, high proof rum is ignited, giving the volcano a dramatic visual appeal. When the fire goes out, the clear rum in the top is ok to drink. -- posted by Sue L

Farmhouse Holidays Double Chocolate Praline-Fudge Cake

Snowflakes drifting by the frosty windows, but inside we're listening to Christmas carols and decorating cut-out cookies. Dad comes and stomps the snow from his boots. Christmas Saturday, and we're ready for a piece of this special fudgy cake to load up our plates, with a glass of icy milk alongside. COOKING TIME includes chilling the cake.
The Perfect Low-Sugar Kool-Aid Salt Water Taffy

I've worked at it and worked at it and 5 batches later, I think I've got it. It's the perfect salt water taffy flavored with kool-aid. It takes alot of work to get it to the right consistency so don't give up! And if it seems to hard when it cools down, as long as it's still pliable, it will work. If it cracks into pieces, you cooked it too long. Even 5 degrees can ruin the batch so keep an eye on it. Try again, or tell people you were going for painted glass candy all along.
Also, most taffy recipes will tell you that you don't need to keep stirring after the mixture starts boiling. I ruined 3 batches before I found out it's safer just to keep stirring. Even a little bit of burnt taffy in the mix ruins the batch, and if you don't stir, it will burn to the bottom of the pan.
**SIDE NOTE**
I sited strawberry kool-aid in my recipe, but you can use any kind as long as it's unsweetened. -- posted by InBlackAndLace

Menage a Trois (The Chocolate Chocolate Chocolate Cookie)

Take a bite of this cookie and go to Chocoholic Heaven. They will melt in your mouth in ways that you never thought possible for a cookie. Be aware that they only keep for a few days, and that they tend to be very fragile. Also, they can be somewhat finnicky to make; do not be dismayed if they do not come out right the first time. Good quality chocolate, proper oven technique, and parchment paper are all very important. And yes, the flour: chocolate ratio is correct - that is what gives it its texture (and makes it so expensive).
Thick Apple Pancakes With Raspberry Sauce

This is a fabulous and impressive recipe (both visually and in deliciousness). It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream! I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries. If you really want a decadent meal, top with whipped cream. You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. It's also great if you mix the apple topping right into the pancake batter. Really, it's hard to go wrong with this recipe. :)

This beautiful brunch dish is served at The Ahwahnee Hotel in Yosemite Valley, CA and was printed in "Bon Appétit" (Nov. 2000). If you are just cooking for one or two, leftover batter refrigerates well. -- posted by blucoat

Versatile Buttercream Frosting

This is a copycat recipe from another one I saw on here-- but not a duplicate, because this is intended to be made for frosting than for bonbons (though it certainly could be used that way.) By "extract", vanilla extract is the most commonly used one for traditional buttercream flavor. But this is a versatile recipe: you want almond-y buttercream? Use almond extract. Fruity buttercream? Try orange, strawberry, or pineapple extract. Why not chocolate extract or peppermint extract! Chocolate and vanilla extracts together taste great too. Frosts about 20-24 cupcakes or one 8" two-layer cake. -- posted by the80srule

This is a quick hot fudge recipe that I use when I really want to indulge. You can mix in any kind of 70% Cocoa and above chocolate bars (bars usually come as 2 oz, so you would need 2). I prefer to use Dagoba pure unsweetened chocolate. Whatever is available will work. -- posted by Southern Kitchen Gardener

Miniature Austrian Sachertorte

Sachertorte, one of Austria's most famous desserts, was created in the 1830s by baker Franz Sacher. Here is an updated version of the classic recipe, made into individual servings using a muffin tin. The moist, light cake is topped with a glistening chocolate icing and served with a dollop of warm Cointreau spiked apricot jam. A lovely special occasion dessert!
