Irish Potatoes (Candy Potatoes)

No, there are no potatoes in these addictive little candies. They are oblong shaped and rolled in cinnamon to resemble cute little potatoes! They are a tradition in our area and they are scrumptious. We wait all year for St. Patrick's Day so we can scarf these cuties down. Try them, you'll find yourself wishing you had made more.
Tried and True Caramel Candy

My aunt Cathy has been making caramel candies for us for Christmas for 25 years. I have never tasted caramels as good as hers. They are always soft and creamy with a wonderful flavor. With this recipe you can make your caramel as soft or as hard as you want to. Because confection recipes are always easily affected by altitude, my aunt, who lives at a much lower elevation than me, suggested I use the drop test method instead of a candy thermometer for figuring out how hard or soft my caramel is going to turn out. I went along with her suggestion because, for one I didn't want to Spring for a candy thermometer, and also because the temperature I would need to cook it to would differ for me from what she would cook it to and so she couldn't tell me what that temperature would be. (She says she cooks it to approx. 248 degrees F). So, instead of going through the trouble of trial and error, I have always used the drop test method, and it has worked for me every time. I will explain this method for those who don't know it in the directions. -- posted by alice Dave

Almond Brickle- Easy

Yummy! This is my all-time favorite homemade candy. I love the combination of buttery toffee with nuts and chocolate! It's REALLY EASY to make- you don't even need a candy thermometer for this one. Sometimes I use pecans instead of almonds and I love it that way, too. Feel free to substitute your favorite nut for the almonds- just chop them up small. -- posted by Realtor by day, Chef by night

Country House Fudge- Martha Dixon

My Mom makes this amazing fudge every year at Christmas. It's very smooth, creamy, gooey and rich- not all dry and hard like alot of recipes I've tried. It's unlike any recipe I've found. You'll love it. You'll blow everyone away when you serve this! It calls for 4 cups nut meats but you can substitute those for whatever goodies you like (my all-time favorite is cherries). You can also add different flavorings to make your favorite! My Mom has made this with crushed cookie crumbs, nuts, coconut, peanut butter, caramel, cherries, raspberry flavor, mint flavor, rum flavor marshmallows... there are so many I can't remember them all. The recipe comes from a cookbook called "Martha Dixon's Copper Kettle Cook Book" from 1963. Martha Dixon was quite well-known at that time and had a cooking TV show that was really popular back then. There was no Food Network back then. It was Julia Child and later the Galloping Gourmet... remember them? Anyway, her show was on TV for several years. Some of you may remember her. -- posted by Realtor by day, Chef by night

Chocolate Caramels - Anne of Green Gables

Taken from "The Anne of Green Gables Cookbook", written by Lucy Maud Montgomery's granddaughter Kate Macdonald. I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son). The recipes were written with precise instructions, geared for young cooks. All recipes were apparently tested by a 12 year old cook, with perfect results. Quote from the book: "I had one chocolate caramel once to years ago and it was simply delicious. I've often dreamed since then that I had a lot of chocolate caramels, but I always wake up just when I'm going to eat them." (from Anne of Green Gables, III) Other recipes are available in a cookbook prepared by chef #756627 - book #243014 *NOTE*: Posting to add to the cookbook. I have not personally made this recipe. Cooking time does not include time for chilling. -- posted by Diana #2

I found a similar recipe at another website, but I want to keep all the recipes I like and use in one place. Another note 1 lb of confectioner's sugar is equal to about 2 cups. You can use crunchy or creamy peanut butter depending on which you prefer. -- posted by Vyrianna

No-Cook Mocha Fudge

This recipe was actually an accident. I was making fudge frosting to top a cake, but it turned out a bit too thick. Instead of calling it a mistake, I made it into fudge. It is sinfully rich with a nice chocolate flavor enhanced by the addition of coffee.
Vanilla Cream Filled Caramels Bull's Eye Copycat (Gluten-Free)

Goetze's Bull's Eye caramels are delicious but I haven't eaten one since being diagnosed with Celiac Disease since they contain wheat. I missed them so I started searching for a copycat recipe. I couldn't find one, so I combined a caramel recipe and a cream recipe. The resulting caramels are a lot creamier than authentic Bull's Eyes, but I think are better for it. You'll want a helper for the final stage; it took me around 2.5 hours. -- posted by Andrew Mollmann

Vegan Marshmallows That Work!

This is an open-source recipe for vegan marshmallows that is available at:

http://veganmarshmallows.blogspot.com

The other recipe "vegan marshmallows" on this web site does not work because it ignores some basics of constructing a vegan marshmallow. It seems to be just a translation of a traditional marshmallow recipe replacing gelatin with agar agar. This substitution does not work.

Here is a recipe that actually works for vegan marshmallows. It is broken into three parts: PAN, FLUFF, and SUGAR SYRUP. -- posted by Chef #1270031

Not so Sweet Fudge-- Microwave Quick

I am a chocoholic. But can't eat much in the way of carbs. So most sweets, including baked goods are out. I came across a recipe for Chocolate Ice Cream without an ice cream freezer in Cook's Country Magazine. Looked great, simple, and had my mouth watering. I have tried 3 different ice cream freezers (even a fancy gelato maker) and never been happy with the results. I was so impressed with what looked like a great recipe I had to try it. Well, I wasn't that happy with it. Perhaps because I didn't use semi-sweet chocolate. I used 70% Scharfenbargers. I have stayed away from Sweetened Condensed Milk, again because of the carbs. Most fudge recipes call for all kinds of sugar. But I was trying to make ice cream and the only sweetener with a fair amount of cream was the SCM. So ...to make a long story short. The base for the ice cream was FANTASTIC FUDGE not too sweet, creamy, with excellent chocolate flavor that was very satisfying. (I know, why not just eat the chocolate?--too bitter, go figure). So here is the base recipe. I use instant espresso, which greatly enhances the chocolate flavor. Cook time is refrigeration time. I haven't tried variations yet, but that should be pretty easy. UPDATE: unsweetened bakers chocolate works well; tried orange rind and orange extract with excellent results. -- posted by Judy in WA Chef #763912

German Toffee (Sahne-Bonbon)

This recipe makes just a small amount of creamy, delicious toffee. A great back-to-school treat. I used to make this super simple toffee with my mother and grandmother when I was a child, and it was my favorite candy! I've translated the recipe from a very old and treasured German children's cookbook. -- posted by BecR

A quick and easy way to make the gooey sticky treat!

Since I'm aware that shortbread is a typically Scottish biscuit, and may not translate across the pond, I've included how to make it from scratch.
Dark Chocolate Cranberry and Cashew Fudge

I recently made JackieOhNo!'s recipe #386677 and that showed me that it can actually be pretty easy to make fudge. So, it got my creative juices flowing and I decided to try to play around and see what I can do come up with a new fudge recipe. I love dark chocolate and so that is the direction I went and threw in the other ingredients to try to cut through the richness. I included a couple hours chilling time in the cooking time but really the longer you leave it the better it gets. -- posted by Sarah_Jayne

Coco-Cocoa Fantasy Fudge (Clean Eating)

If you like chocolate, and you like coconut...this is for you! I found this recipe in my Clean Eating Magazine, and had to give it a try! It was super easy to make (only 4 ingredients! Wow!), and tastes wonderful. And the health benefits from eating coconut products make it well worth it, too! It goes well with a glass of red wine, or is a nice treat for the kids. Either way...it was a hit for everyone in our family (young and old). -- posted by MamaMeag

Bacon Caramels

“Where would we be without salt?” – James Beard
I casually sprinkled the thick-cut Hempler’s bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

Monastery of the Angels Peanut Brittle

The monastery is located in the Hollywood Community of Los Angeles at 1977 Carmen Avenue, where the nuns prepare candy and other food products to sell, with the proceeds going to charity. One can visit the monastary by doing a google search to find the hours when they are open to the public. Their heavenly candies are exceptional, which is no surprise because candy making was taught to the nuns by the former owners of Juliet's Candy Shop in Pasadena. When the shop was closed, the couple donated their equipment and recipe collection to the monastery.
The nuns make their peanut brittle only once a year, around Christmas time. This recipe has been published in the Los Angeles Times many times, usually around Christmas. Some cooking notes and comments which were provided to the Times by the sisters; raw peanuts are the key to making their brittle. Cooking the peanuts in the syrup gives the candy it's outstanding flavor. The nuns have also stated that this recipe which they have provided to the Times comes as close as any one can come to in duplicating their recipe in a home kitchen. Because the nuns use commercial ingredients and equipment, the end product will not be exactly the same. Note, all recipes which are published in the Los Angeles Times are first tested in the Times test kitchen, (where residential cooking equipment and techniques are used) before the recipe is published in the newspaper. In preparing this recipe, the nuns advise having two cooks available for the pouring and spreading of the hot liquid candy, it makes this step a lot easier. -- posted by lynnski / LA
