Now I'm the one who gets all the credit when I make it : ) My family loves it; I play the &amp;quot;guess-the-secret-ingredient&amp;quot; game (the vinegar) and no one ever has... though they've guessed everything from peanut butter to cheese! I love it because it's relatively &amp;quot;healthy&amp;quot; (no dairy, no eggs, low-fat), while it's still amazingly moist and chocolaty and dense. She used to make this dessert for my sisters, brother, and I when we were young. We all LOVED it, and I cherish the recipe... 			<description>Good things come with many names.  Swedish treat but also very common in Denmark.  I've posted this to a recipe request. They are very easy to make and easy to eat as well! If you can't get hold of thin wafers, use very thin sugar cookies--the one's that you can roll the dough into a log and cut very thin slices to bake. I give the mesurements in ml and grams. Use an electric whisk for the best fluffy mixture, I use my Kitchenaid.  These make 40 according to the recipe, but that depends on how big a base you use and how high you make them. 			<description>The Swedish Country Inn is a B&amp;B in Lindsborg, Kansas...&quot;Little Sweden USA.&quot; A town too small to have a stoplight, with cobblestone streets and Dala horses adorning all the houses, this hamlet is the heart of Swedish Kansas pioneer history and host to a huge biannual Swedish festival that draws thousands. How do I know? I went to college in that tiny town (our mascot was the Swede, go figure!). My mother often stayed at the Swedish Country Inn when she came to visit and became absolutely addicted to their rusks (kind of the Swedish answer to biscotti; dunk these in your coffee rather than eating them like biscuits). Just a note Zandbakeiser tins are little tart tins 2 to 3 inches in diameter with fluted edges, but if you don't want to go out and spend a bunch of money on this just use your mini muffin pans they work just fine. The lavender twilight lasts until 11 p.m. and the day breaks again at about 2 a.m.; above  the Arctic Circle, the sun doesn't sink below the horizon for weeks. This year, 2007, Midsummer Eve, the beginning of the three day official holiday,  falls on June 25. Throughout Scandinavia, families and friends gather  to decorate the maypole with birch leaves and wildflowers, make flower crowns for women and girls, dance around the maypole, sing summer songs and feast on  pickled herring, new potatoes, and aquavit. In addition, many families have their own special foods that they traditionally serve as the Midsummer meal. 			<description>This is a twist on the traditional way of serving cloudberries in Norway, I have added lavender and vanilla to enhance the  ephemeral flavour of this delicate arctic berry. A member of the rose family, cloudberry bushes produce delicious yellow/orange berries that are highly prized in Scandinavia. Smaller than blackberries and raspberries, cloudberries are picked at the end of July and the beginning of August.  The cloudberry is almost exclusively sold fresh or made into jam, but it's also used in liqueurs and as a filling in sweets and chocolates. 			<description>This recipe comes from my husband's grandmother.  In Swedish it is called Svenska Mandel Skorpar or Swedish Toast.  It resembles biscotti but has cardamon in it not chocolate nor anise.  It is wonderful with tea and keeps well if stored in a dry container.  The best flavor of cardamon is fresh--remove the outside pod, put the seeds into a plastic ziplock bag, put the sealed bag on cement floor, and pound with a hammer and you have ground cardamon. 			<description>Usually this includes a lot of additional eggs, sugar and butter but no flour - which makes it good as well but somewhat richer. I changed the recipe as i could not be bothered to whip the egg whites and care for the batter to cool down in order to add the yolks. So i went for a little four instead and gave it a try. What a treat! I love it! It is just too easy to be good :-)
Enjoy with vanilla icecream.
