Kittencal's Easy Never-Fail 5-Minute Chocolate Fudge

You will be surprised at how easy and delicious this fudge is and it sets to the perfect texture! --- if you prefer a less sweeter taste then remove 2 tablespoons of white sugar after measuring the 1-2/3 cups --- evaporated milk may be replaced for the cream, using good-quality chocolate chips for this will only improve the flavor--- for easy removal from the pan, line pan with a large piece of foil overlapping on both sides, to remove the fudge lift up foil, remove foil from bottom of the fudge then place the block of fudge onto a flat surface and slice into small squares, or you may slice the fudge in the pan --- you will love this fudge! -- posted by KITTENCAL

Antipasto Platter

I made this for our Christmas party and it was big hit! I made it a day ahead for maximum flavor. I used a large can of ripe olives since DH loves them. Cooking time is marinating time. While it may not meet the definition of a "true" antipasto, it is delicious and has just the right amount of ingredients. -- posted by Lvs2Cook

Traditional Super Bowl Sunday Pulled Pork Sandwiches

Actually, these are good any time of year, but I have been serving them on Super Bowl Sunday for the last 7 years or so! As a matter of fact, my oven broke once just as they had finished cooking, and we all agreed there was no better last meal to have!!! The prep time on this is super easy, but the cooking time is long and slow. Unlike most other recipes, this starts with a wet rub. I usually make this the night before the big game, and reheat later on Sunday. I have yet to try doing this in a crock pot, so if someone does, please let me know how it works out. For barbecue sauce, I like Sweet Baby Ray's, but I'm sure your favorite will work just as good. -- posted by JackieOhNo!

Family's Favorite Hamburgers

I don't like burgers that have a ton of unidentifiable ingredients in them so I decided to keep this one simple. It works perfect for any condiment or topping. My favorite burger is the Rodeo Burger from Buzz Inn in Washington so I felt this would work well with those toppings. Sauteed onions, crispy bacon, barbeque sauce, and cheese. This kept everyone guessing about what was in them because they do keep very moist and at the end of the night as everyone was leaving, I couldn't even count how many people said "The hamburgers were great" as they said good night and thanked us for dinner. I work the meat for a while and sprinkle the salt over just a little at a time so it gets distributed and I know for sure that there isn't a huge salt pocket that will get stuck in one of the patties. Sorry, I don't actually know serving size because we didn't even use all the meat up and patties size will differ; freeze unused meat for later if it hasn't been thawed. -- posted by Christineyy!

Crock Pot Shrimp and Artichoke Dip or Crab and Artichoke Dip

This is so perfect for entertaining or to serve on Game Day. This dip stays soft and warm the whole time, doesn't get cold and solidified like many other artichoke dips I have made. You can make either the shrimp version or the crab version, or even substitute clams if you prefer.
Also, I have added a small can of drained water chestnuts on occasion.
** Also, I use my small slow cooker for this recipe and just leave it on all day - think it's a 2 quart cooker ** One more note - one of my girlfriends loved this so much that she made the recipe as is and served it over linguini for Sunday Pasta. -- posted by BlondieItaliana

Cheesy Beef and Spinach Manicotti

The filling amount should be plenty to stuff 14 shells with maybe a small amount left over --- to remove the bitterness from the spinach, cook firstly according to package directions --- to save time you may cook the ground beef/spinach mixture up to step #4 and refrigerate for up to 2 days. For easier stuffing, warm the mixture in the microwave to just room temperature before adding in the mozzarella cheese and eggs, then proceed with recipe as stated --- ground beef or bulk Italian sausage may be used successfully. This recipe was developed and tested using both on different occasions. I prefer the Italian sausage meat, you could use half of each if desired --- also see my recipe #72308. -- posted by KITTENCAL

These make wonderful finger food at a get together, for a nice presentation place each warm square in a paper muffin liner and you may make them up well in advance and heat/crisp in the oven just before serving--- make as spicy as desired by adjusting the cayenne pepper, the butter is melted in the baking dish firstly, do not add to the mixture, prep time does not include cooking the spinach firstly and servings is only estimated it will depend on the size you cut the squares --- warning these are extremely addictive, you will love these! -- posted by KITTENCAL

This is buttery tender dough that produces an excellent flavored and textured cookie --- servings is only estimated it will depend on how thick you slice the dough, I get about 12-15 cookies per roll if sliced just over a 1/4-inch thick, you may of coarse slice them thinner or thicker if desired and adjust baking time slightly --- plan ahead the dough needs to chill for about 4 or more hours or until very firm and may be frozen for up to 3 months. -- posted by KITTENCAL

Playoff Chili

I got this recipe out of Southern Living Magazine. It's a very mild chili with beans that was a hit with my kids. Very easy to make, and is listed as a Tailgate party Chili. Don't fret about the beer in the recipe, it cooks off and the kids don't even notice it. Since I'm from Texas, I used Shiner Bock ,which added a hint of flavor. -- posted by Kitsmomma

Crock Pot Potluck Pierogies With Sauteed Onions and Butter

Great idea for a football party, graduation party, any potluck get-together. I was assigned a hot side dish for a potluck work luncheon, served aside of hot dogs and other party appy's, and decided to try this out in the crockpot and it worked. It went over well; many people went back for seconds and came looking for the leftovers the next day.....it was the only dish that was gone! Very simple indeed, but it's one of those dishes that you hardly lift a finger yet it goes a long way. Would go great aside of hamburger BBQ, sausage sandwiches, bratwurst, hamburgers, etc or make as a main dish. Perfect if you don't have an oven or have limited oven space for your party cooking. I have figured on 16 servings/3 pierogies per person and prep time includes sautee of onion and butter. -- posted by TheDancingCook

Old English Crabmeat Appetizers (Very Easy)

I got this recipe from an older lady one day at my local grocery store. She was grabbing for a jar of this Kraft "Old English" spread so I asked her what she used it for since I never heard of it... So, she told me this recipe & I went immediately to find the ingredients, went home, made it & WOW, it was great! It's served on English Muffin Toast Points & would make a great appetizer for gameday, dinner parties, cocktail parties, etc. -- posted by BlondieItaliana

Creamy Coleslaw With Bell Peppers & Red Onion

Although I usually think of coleslaw as a summertime side dish, it seems to go really well with my Super Bowl spread. I serve pulled pork with baked beans and some of this lovely, creamy coleslaw, then sit back and collect the compliments! Again, this makes a LOT, so adjust accordingly. This recipe is easily increased or decreased. Use a 16-ounce package of coleslaw mix for every six guests. -- posted by JackieOhNo!

Bacon Bites

This recipe was featured in an email today from the www.kingarthurflour.com website and has gotten rave reviews! Superbowl food!!! :-) "These little savory gems are simple to put together in advance, can go directly from the freezer into the oven, and combine three of the most irresistible snack foods on earth: bread, cheese, and bacon. You can vary the filling in any number of ways (see our tips, below). Make sure you let the bites sit for 5 minutes before serving; the cream cheese gets mighty hot, and you don't want to burn anyone's mouth." -- posted by senseicheryl

Super Bowl Chili

This is the recipe I make every year for the Super Bowl, for my boyfriend and two dozen or so of his closest beer-drinking, football-watching friends.

The problem with trying to find a good chili recipe is that what makes a "good" chili is a personal opinion; my idea of a great chili may be very different from yours. My chili is heavy on the meat, garlic and spice; rather rich-tasting, hearty, thick, fiery, and smoky. If that sounds like something you'd enjoy, I'm also going to include plenty of advice on how to adjust it to meet your tastes.

Enjoy.

Notes: To cut down on fat, lean, turkey/chicken Italian sausage can be used, without affecting the flavour or texture of the final meal. Extra-lean beef can also be used. -- posted by ClarenceKitchenDiva

Spicy Sausage, Peppers and Onions (Crock Pot)

Spicy sausage, pepper and onions. Takes very little prep time and is great for potlucks. Inexpensive and makes alot. Very delicious kids and adults both liked it is very filling. I first took it to a church game night that was just supposed to be snack food but knew I would want something a little more filling than chips had several requests for the recipe. Which made me have to think because when I first made it I used what I had in the house. This is what I remember using. I used Bar-S brand polish sausage which is just a cheap sausage a pack of 3 lbs is about $4 ( found in with the hot dogs in the refrigerated section lunch meats and stuff). Could be used as an entree ( just serve it on a whole bun) snack or starter for a party I think. -- posted by awmeme

The Best Salsa Ever

I like a thin and spicy salsa for my tortilla chips, eggs, tacos and more. This is a very simple version of something you might find at a salsa bar in a Mexican restaurant. If you like it chunky you might consider diced tomatoes and less water. Not bad for something you can make with a $1 can of tomatoes and some ingredients in the spice rack. For a milder version you can skip the habanero sauce and use your favorite hot sauce. -- posted by NorCal Will

I was fiddling around with trying to make a yummy Pulled Pork for my stepson Jesse's wedding rehearsal party. I did one butt in the oven without soda and one in the crock pot with soda. I had never used soda pop in a recipe before but I heard it was worth a try and YES it was! The Crock pot recipe turned out so tender, moist and delicious, (according to the thirty something guests...this was a real hit.) Well worth trying and very easy to make.
Melanie's Chicken Chili

Years ago, I started experimenting with a Chicken variety of my mom's old basic chili recipe. I think I've made this Chicken Chili at least 100 times. Every time, I guarantee it is slightly different. The only time I ever wrote down the recipe (of how I made it that day) was for my mother-in-law who won a Chili Cook off with it.

So here goes - I'm attempting to officially put it on paper. Some measurements may be slightly off (especially the spices) but the overall target flavor is the same. -- posted by Melanie B.

Pumpkin Fluff Dip

This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can. You can also use 2 tsp pumpkin pie spice for the spicing but it tends to be overpowering, the subtler cinnamon and nutmeg is better. -- posted by the80srule

Chicken Seafood Gumbo

A northerners attempt at good gumbo soup. Uses chicken, shrimp, crawfish and andouille sausage. Easy to make, basically dump and go.

I make it in a 12 quart roaster oven.

Can easily make smaller amounts by division. -- posted by SAM the Nuke [:-{)
