Sweet and Salty Chicken Tenders

This is an adaptation of an Alton Brown recipe. I don't recall which episode it was, but I must say that these have become one of our favorites. We will often serve these with the Mac-Daddy Mac and Cheese recipe

We have found that you can fine tune the sweetness of the breading by altering the Captain Crunch to Rice Krispies ratio. Have fun with this and Enjoy! -- posted by Lord Bezoar

Meatball subs are so yummy. NOT on my diet though! So I decided to see if I could make them somewhat healthier. Viola! Though these are still NOT diet food, they are healthy, well HEALTHIER. These would be great football night food, after a night of trick or treating or any night you need something fast and easy. You could even make these vegetarian friendly using vegetarian meatballs and cheese. Enjoy! -- posted by mama's kitchen

Spam and Egg Salad/ Spread

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs. -- posted by PubRat

Jalapeno Dinosaur Eggs

This my adaption of Scotch Eggs, a classic appetizer. I dearly love the eggs but I can cut the cholesterol by at least half by substituting stuffed hot peppers instead. Try this one and I know you'll be pleased if you are a lover of chili peppers. Of course, if you are a true chili head, you can use habaneros, or other really hot peppers, which is what I do. -- posted by Max Thames

My family used to make these for special occasions - or random visitors! They can be baked and frozen, then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste, so I double the dry mustard. I'm gueesing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha. -- posted by Cadillacgirl

Pumpkin Fluff Dip

This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can. You can also use 2 tsp pumpkin pie spice for the spicing but it tends to be overpowering, the subtler cinnamon and nutmeg is better. -- posted by the80srule

Rockin' Hummus

I've tried a lot of hummus recipes but this is the first one that came close to Sabra - my favorite brand. I adapted this recipe from one I found online at a blog by Jonah Lisa. She states that it is the order in which the ingredients are combined that makes the hummus so creamy in the end. I don't know how true that is but I follow her method and always end up with great stuff that rivals my favorite brand. I use my blender but I'm sure a food processor would work great too.
Low Carb Jalapeno Poppers

I was craving poppers but didn't want super greasy bacon or high carb breading so I invented these... Sometimes instead of the garlic powder and seasoning salt, I use 2 tsp of a product called Johnny's Garlic Spread Seasoning which is just awesome - I buy it at Costco here in Canada. The number of jalapenos varies depending on the size you get and how much spread you put inside each half! Tried it with fat-free cream cheese and it just didn't have a good texture. Have also used shredded taco cheese blend right out of the freezer instead of plain cheddar! -- posted by Cadillacgirl

Baked Bacon-Wrapped Brown Sugar Smokies

I've seen other recipes for these little indulgent treats, but they cook them in a crockpot and I prefer to bake ours. Baking them in the oven allows the bacon to crisp, the liquids to be released from the Smokies, and the brown sugar to caramelize on them deliciously. It also allows to you control the fat content of them a bit more easily, as most of the bacon drippings will remain on the sheet pan after cooking. We usually make them during the holidays, but they're good for all year 'round, of course. So easy to make! -- posted by Julesong

Don's Queso Dip

My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. My mother likes to put this into a Crockpot to cook while she makes dinner. -- posted by Bekahbv

Chipotle Lime Wings

A smoky wing with medium heat. This way of preparing the wings is lower fat than deep fried and not as messy if you marinade them overnight and don't coat them in sauce again before serving. Also, if you are not able to find Tabasco Chipotle you can use any hot sauce with a little liquid smoke added. Toss them in a crock pot after they bake and they get extra tender and flavorful. -- posted by Scott Johnson

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm.
