Cherry Crisp Using Fresh/Frozen Cherries

I love this crisp recipe - you can easily use other types of fruit and has adequate amounts of fruit and topping. The topping is usually about a half-inch thick, so add more fruit to a 9x13 pan if you like a larger amount of fruit in compairason to topping -- posted by hermioneg

Kumquat's Kookin' Kaboodles' Limone Pistachio Gelato

Posted for the ZWT4-- Frozen Italian Dessert Challenge-- Part 1, this is an unusual and unique gelato recipe with some ingredients that are not necessarily traditional. Although lemon and pistachio are typical of fine Italian cuisine by their Mediterranean character, the ingredients take a curve ball by using both buttermilk and lemon yogurt to give both a solid base and a nice tartness to accentuate the lemon flavor. The Splenda was made as an option to accomodate those with special dietary needs, and the egg yolks and heavy cream, while not traditional, provide richness and act as a stabilzer for this yummy frozen dessert. -- posted by Sue L

I have been making this dessert for years, and it never fails to draw praise. While some people look down their noses at Jello desserts as being too kitsch, I believe taste comes first. This is light, refreshing, and it makes a beautiful, patriotic presentation.
The Towering Inferno! Chilli, Coconut and Coriander Pork Burger

This is one of my own burger recipes; I made this up one evening when we both fancied a burger, but we also wanted one with a bit of a kick, plus I needed to use up some pork sausage meat! It is such an easy recipe and yet it delivers on taste - PLEASE adjust the heat to your own requirements; it is also a very BIG burger, hence the name! Serve this burger in a standard burger bun, maybe in a ciabatta roll, or with flat breads. A side salad and baked jacket potato would also fit the bill if you are very hungry. I am very proud to say that one of my photos of this burger came first in the Bring on the Burgers Photo Competition. The photo was called Blinded by the Light, and is the photo taken indoors with the strong back light. I won a Recipezaar apron, which I now wear all the time whilst I grill and barbeque! NB: You MUST use high quality, high meat content sausage meat or sausages for these burgers; the cheaper high fat content ones, will JUST not work at all! -- posted by French Tart

Mango Garlic Rib Rub

I made this up with a few ingredients that I had in the house and it turned out great. I used country style ribs and grilled it on low. I usually like to slow cook ribs on the grill by placing the meat on one side with the burner off and heating the grill with the side with nothing on it, then browning some at the end. This takes hours and I didn't have time for that this time, but I'm sure it would have been even better. -- posted by Green Cuisine

Pumpkin Pie-Sicles (Popsicles)

This is from Family Fun's Nov. 2008 issue. I had some butternut already cooked (see Rita's Recipe #194908 for an easier way to cook the squash!) so I halved the recipe and it made 6 popsicle molds. It really tastes like pumpkin pie! My 5 yo was begging for another one right after the first one. I used half and half instead of the cream and pancake syrup, since I didn't have maple (it's up to $20 quart here!) I bet it would work with canned or cooked pumpkin too, although I'm not sure how much to use. What a great, healthy alternative to all that sugary, artificial colored popsicle junk the kids usually get. I also used 1/2 tsp pumpkin pie spice for the halved recipe, so I would recommend using the higher amount of spice, or even 1 tsp. Prep and cook time do not include cooking the butternut. -- posted by WI Cheesehead

Although I usually think of coleslaw as a summertime side dish, it seems to go really well with my Super Bowl spread.
My mom has been making this pie since I can remember, and now it is a staple in my kitchen. It uses quick cooking tapioca, and has a very fresh taste since you do not cook the blackberry mixture before baking. You can use fresh or frozen blackberries. I am always asked for the recipe when I take it to a pot-luck or gathering of friends. I love using Martha Stewart's Foolproof pie crust (Recipe #59026) for double-crust pies like this. -- posted by CindyMarie

Simple Cucumbers and Onions

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving. -- posted by CindyMarie

Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Kinda Sorta Tex Mex Burger

I threw these together tonight when getting in the mood for ZWT5. When I think 'Texas' I often think of good BBQ and beef. When I think of Mexico I tend to think of a bit of heat and fresh tomatoes and avocado. So, I threw them together to make one yummy burger. So, it may not be real tex mex but it comes out of the ideas of Texas and Mexico that float around in my,admittedly odd, brain. -- posted by Sarah_Jayne

Green Chili Guacamole

Not wanting to run to the store I raided the pantry and decided 'what the hey', I'll see what I can come up with. I couldn't have been happier with the result. Even a guy at the cookout that was from Mexico said it was better than his grandmothers. Now that's a compliment. I do recommend leaving it in the fridge overnight for best results.
Snowcapped Pink Strawberry Mountains(Strawberry Granita)

Brilliant with color and pure, intense flavor! You may use frozen, thawed strawberries, but you might need to add more sugar. Cooking time is freezing time. Would you like a little history?

History of Granita
According to Alan Davidson in the Oxford Companion to Food, (Oxford University Press:Oxford) the appearance of "water ices" is documented to have taken place in Europe in the 17th century around the same time as ice cream. There is some undocumented conjecture that Marco Polo returned to Venice from China in the 13th century and introduced ice cream or water ices to Italy. Further it is not known for sure if water ices were first found in Spain or in Italy. In any event the mixture seemed to have migrated to London at some later, undocumented time.

Granita is akin to but not quite the same as sorbet. The difference being sorbets tend to be smoother and less granular in texture. Both are made with water, a flavoring such as fruit juice or coffee and typically sweetened with sugar.

This is a great side dish or can use as entree. Terrific folded in a tortilla, even cold. Have also put on sub rolls with cheese for a vegetarian entree. I often double since this has so many uses later in the week for meals. Have also made a cold pasta salad with these chopped or a hot pasta dish topped with parmesan and added cooked cubed chicken. Use your choice of vegetables (asparagus, green beans), but this is what I like.
Gingered Blueberry Shortcake

I am always looking for ways to use blueberries when they're in season, and this one is a special summer treat! It's old-fashioned comfort food, with the candied ginger adding a sophisticated twist. My family was shocked at how good it was with so little sugar and fat (recipe from Cooking Light). NOTE: I have found candied ginger near the packaged nuts & dried fruits; just ask your grocer if you can't find it. I know they have it at Trader Joes and Whole Foods. -- posted by appleydapply

4th of July Clam Chowder

Rhode Islander's love clam chowder. This chowder has an intermediate consistency between traditional New England clam chowder that has a heavy cream base and a Rhode Island clam chowder which is a clear broth style. This chowder captures the best of both types with a rich milky base that is not too heavy but allows the flavor of the clams and other ingredients to shine through. This is a great chowder to serve on a hot summer afternoon. -- posted by tlt295

Hawaii Da Kine Burgers W/ Sweet-Chili Glaze & Goat Cheese

Sutter Home's 2008 Build a Better Burger ® Winner!!!!
"Da kine" is a key phrase in Hawaiian Pidgin, the language of the "locals." It can mean almost anything, but commonly refers to something good or genuine, or as in this case, "the best."

This burger is as local as it gets, both in taste and ingredients. The patties are tender and juicy, thanks to fresh papaya and sweet onion, and are spiced with Hawaiian Portuguese sausage, which is so popular in Hawaii that it is on every breakfast menu (including McDonald’s). The accompanying salad employs heating oil to its smoking point, a local cooking method, resulting in a dynamite burger accompaniment. To complete the Hawaiian flavoring, I added a sweet glaze (Hawaiians love sweet and savory) and was inspired by our award-winning goat dairy to create a mouth-watering ginger-infused cheese spread. Ho, dat's da kine!
