The luscious coloured sorbet is served over a bed of diced apple aspic and is drizzled with high quality balsamic vinegar.  This recipe is not for beginners or impatient cooks, however most of the work for this dish can be done ahead of time.  The sorbet can be made 3 days ahead and stored, covered in the freezer.  The aspic can be prepared up to 2 days ahead of service, covered and stored in the refrigerator. 			<title>Fresh Peaches in Sauternes Soak With Angelica and Lavender</title>

			<description>This is a wonderful, light summery dessert, which never fails to please my guests, as well as my family and friends! Fresh peaches are soaked in sweet Sauternes with angelica leaves and lavender flowers tucked amongst them. Angelica is an interesting, aromatic tasting herb, and although I normally only use the stems to candy or crystallise (Recipe #248003) I have discovered that the leaves also make a great accompaniment when used with fresh fruit. Try to serve this fresh fruit salad in a large clear glass bowl for maximum impact; it just looks so pretty with the light shining through the fruit, juices and herbs! I find that the only thing that is needed to serve this is a good dollop of cr&amp;egrave;me fraiche. I have also made this with apricots and melon for a slight change. I like to use a combination of white and yellow peaches for this recipe  but please use local and fresh peaches regional to your area. Prep time includes the minimum &amp;quot;soaking&amp;quot; time. Lightly grilled ham on this burger is a nice addition.  This is a favorite to grill because it is simple, quick and satisfying.  I purchased a 6oz burger press for $6 and found that my burgers don't fall apart anymore and are perfect size everytime, making it quick and easy and delicious!  TIP: let your grill do the work, keep the lid closed while cooking and don't mess with the burgers while their cooking unless it's time to flip or remove. I have made this several times when cherry tomato season comes around. I have also frozen this with great results. NOTE: A basic passata is a sauce made of tomatoes, basil, water, preservative, however some types have more herbs and spices in them, so make sure you like what is in your passata as it will be a main flavour in your soup. You can substitute tomato sauce (not ketchup!) or canned tomatoes (put through the food processor). Sometimes I dont have passata on hand so I put a can of chopped tomatoes in the food processor (enough to equal the recipe equivalent) and add a bit of basil to it to taste. I don't add water because the canned tomatoes are already in liquid. Okay, well, maybe it's not really magic, but it's a great trick to save you from having to peel, chop, and de-seed all those tomatoes (which is the reason I almost never made sauce from my garden tomatoes until now).

We'll take care of the peels and seeds with a blender/food processor and a fine mesh strainer.  Yes, a couple of extra things to clean, but it's still faster than all that peeling and chopping!  Also, because the peels are cooked in the sauce, you preserve more of the nutrients in them.

This is a highly customizable recipe (really more a framework than anything else) - make it smooth or chunky, with meat or vegetarian, regular or low-sodium, or even use it to hide a few extra veggies (a tip for you parents of picky children - you can make them completely undetectable).  The quantities are inexact because there's so much variation in the size, taste and texture of fresh tomatoes, and anything else you add will change the flavor.  So you really have to adjust the seasonings and other ingredients to compensate.  This is part of the art of making tomato sauce, but don't be intimidated! I created this when I was eighteen and we did a lot of entertaining...usually bring your own meat bbq's lol.  I like it because it has everything in it, including it's own bacon bits, travels well, can be prepared ahead of time and gets rave reviews every time and is most always requested.  Note: Depending on what meat I am serving I will add an appropriate herb to my potatoe eg: if I am cooking lamb I will add rosemary to my potatoe. 			<description>I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says &amp;quot;All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels&amp;quot;
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
