			<title>Scrumptious Chicken Curry, Coriander &amp;amp; Danish Feta Salad</title>

			<description>This is something we've been making for years.  If you're in Australia you can use the specific brand of ingredients otherwise find yourself a good substitute.  The cooking time for the chicken will vary a little but mine usually takes about 15 - 20 min - you have to keep an eye on it and don't burn it.  ***The chicken needs to be cooked in a nonstick pan on a low heat (I turn my stovetop a quarter) - if the &amp;quot;sauce&amp;quot; is sticking to the bottom you need to lower the temp***  You can vary your own amounts of lettuce, tomato, cucumber, coriander and danish feta to taste and make the salad as dense or light as you wish - the amounts below are just how we like it.  It's honestly really difficult to mess this up - as long as you get the chicken right you're fine!  You could add olives etc to this salad but be careful as he feta makes it salty. 			<description>I really loved my friend's lemon chicken pasta recipe.  Unfortunately, the only ingredients I had from her recipe was chicken &amp;amp; pasta.  So I substituted most of the ingredients.  Surprisingly, it was simply great and everyone liked this one more than the original.  I make this over the summer months and this is definitely our favorite pasta recipe. My sister-in-law likes it so much that every time she has a dinner party, she makes this. 			<description>I adapted this recipe from the December issue of the excellent Australian Delicious Magazine. I added some duck leg-meat, as it was on hand, and this was a great addition. I omitted the garlic from the original recipe, as I felt it would overpower the other flavours. The original recipe also included 1/2 cup brandy - I didn't have any so didn't add it - instead I added the juices of the duck, which had been roasted in honey and allspice.
It was simple to make, and had a beautiful presentation and flavour. Serve cold, accompanied by a fruit relish - I used a cherry relish as it was served for Christmas lunch.

This chicken cooks much quicker than a regular whole chicken because of the method that I use. Only 2 ingredients makes this a quick last minute delicious dish. Adjust the amount of rub used according to your own taste; I use 2 tablespoons total. If you don't have rub, you can just use some salt and pepper. 			<description>Idea I came up with for something quick and healthy that can be mostly prepared in advance. I used a large cooked chicken breast cut-up but would also be a good use for leftover roast chicken. Makes 4 large tacos so I think would be a complete meal for two or a light snack / lunch for four, if using the smaller shells you'll probably be able to fill six of them. I listed a gherkin because that's what I used but you could also use a small handful of diced cucumber. Because it's served slightly chilled I think this would make a nice and quick summer meal at the end of a hot day. You could also use a low-fat Greek yoghurt and/or omit the feta.
