Spicy Orange Shrimp Ceviche

Makes a great appetizer, party snack, side dish or main course! Also try using assorted seafood such a tilapia, crab, scallops, etc.

I included the ketchup, but you can use sweet Ecuadorian tomato sauce as traditional or skip it altogether as I prefer! Some also like it on the side and let the guests choose. You can also place a dollop on the side of the martini glass as some restaurants do.

You can flash cook the shrimp if preferred by placing in boiling water for 2 minutes before peeling and deveining them. You can make this with only an hour or so of "cooking" in the citrus juices, as you prefer.

Also...I use 2-3 jalapenos and occasionally habenero for extra pep!

Serve with a crisp but fruity sauvignon blanc (rochioli or girard) -- posted by GoldsmithLissa

Grilled Pizza

This recipe makes 6 personal pizzas; serve 1 -2 pizzas per person. Pizzas can be kept warm in the oven or on a grill rack while the rest cook. Enjoy!!! This is one of the best pizzas I’ve ever tried! The recipe came from the Honolulu Advertiser back in 1999 from a restaurant called Al Forno’s. I clipped the article and forgot about it until just recently when I was going though and organizing my recipe cards. I tried it out and thought it was the best pizza I’ve ever tasted!!! Everyone who has tried it has agreed!!! -- posted by Ian Magary

Awesome Cucumber Infusion Summer Cocktail

Infusing vodka is really easy and gives your cocktails unique, pure flavors that can't be approximated by buying already-flavored vodka. This recipe also tells you how to make homemade sour mix, which is so much tastier than store-bought! This cocktail is always a huge hit at summer parties and barbecues. It's adapted from a cocktail served at the Delta Cafe in Portland, OR.
(This recipe is portioned for 16 drinks, but depending on the mix you like, you may end up with leftover juice, or sour, or vodka.) -- posted by CptShane

California Salad (Tomato, Cucumber and Onions)

Simple, refreshing and delicious! Juicy tomatoes, crisp cucumbers and crunchy onion combine with Miracle Whip to make an unbelievably delicious salad! You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine! **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! Fresh, ripe juicy tomatoes are the key to making this salad** Easily doubled or tripled, but yield will vary depending on size of the vegetables. "Cooking time" is refrigerator time! -- posted by The Frugal Cheflady

Dalmatian Salted Anchovy Salad

This meal is very old, probably from Greek and Roman times 2000 years ago. We in Croatia are very lucky because we can buy salted anchovies from direct producers who make these salted anchovies the same way old Romans did. And I must say, these home made salted anchovies are much, much better than grocery-stores one. Beside anchovy we also salt “srdela” a.k.a. sardine. Srdela is “heavier” to eat, and more cleaning work. It is very salty meal and a person should not eat more than three salted anchovies per day (that’s 6 fillets). This is how we prepare this meal in Dalmatia. -- posted by nitko

Dijonnaise Potato Salad

Jon's Spicy Citrus Shrimp

These shrimp are delicious and easy to prepare, look and taste very impressive. They have a nice background heat (that won't make you feel like your tongue is on fire), and the citrus flavour from tangerine, lemon and lime ties nicely with garlic and ginger. This recipe was created by my fiancee, Jon, hence the name. We serve it with toasted white rice (recipe #87090 will do the trick!) and a simple salad with balsamic vinaigrette.
This recipe is broiled in the oven (due to a surplus of snow) but would also be delicious grilled.

Famous Fresh Blueberry Pie

I live in Florida and it is difficult to make a non-runny blueberry pie due to the humidity, but this recipe is perfect. I got this recipe through trial and error of 5 different published recipes. The filling is dense enough so that little loose liquid is present, but you still feel like you are biting into whole berries when you eat it. This fixed my problem of getting a pool of liquid in the bottom of my pie shell. I recommend using only fresh blueberries.
Use a 9-inch deep-dish pie plate. Regarding the crust, the store-bought frozen crusts did not work properly for me. They either didn't bake on the bottom or resulted in an overflow of pie liquid into the bottom of my oven. I recommend the Pillsbury brand rolled pie crust dough found in the refrigerator section of the grocery store (by the biscuits/crescent rolls). These bake nicely, are easy to work with, and have an appropriate amount of moisture. Of greatest inspiration for the filling was from http://www.pickyourown.org/blueberrypie.php -- posted by MerryD

Boudro's Famous Guacamole- Riverwalk San Antonio

Boudro's is a Texas Bistro on the Riverwalk in San Antonio. They wheel out a cart and make this guacamole fresh at your table. It is the best I have ever had. You can skip the roasting of the tomato and peppers if you would like to save time and it still tastes great. I also seem to remember them adding chopped garlic when we were there because I think the waitor joked about it, but it was not listed in the recipe...I always add a couple of cloves. -- posted by PleasantNancy

Peach Freeze

This recipe is from the side of a large can of SPC Peach Halves in natural fruit juice.
Summer Vegetable Gratin

While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it. Good as a vegetarian main dish or a side. It's not quite the same as other vegetable gratins already on RecipeZaar. Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons). This can also be made ahead after assembly and before baking. Just pre-heat the oven. Try to buy the zucchini and squash of roughly the same diameter. I might serve this with bread to soak up the juices. To make this vegan, omit the parmesan cheese. They found this recipe on America's TV test kitchen. -- posted by Kumquat the Cat's friend

Red Pepper Vichyssoise

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche. Prep and cooking time does not include the chill time! -- posted by breezermom

Pasta Salad With a Kick

I used to hate all pasta salads until my best friend's mom made one a few years back. I tried a small bite of it and loved the flavor. The dressing used gives it a nice kick. I cook the pasta the night before and mix in the dry ranch, cucumber, pepperoni, olives, and half of the bottle of dressing to let the flavors mix overnight. The next day I add the cheeses and the remaining dressing. It's the perfect summer side dish and always goes quick at cookouts. -- posted by KeLynn

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403
