			<description>Lovely with curries, particularly sea-food, this rice dish from Tamil Nadu is seasoned with lightly roasted coconut, cilantro, curry leaves, dried red chillies, and mustard seeds. It also contains a small amount of chana dal and urad dal, which, when roasted, provide a nutty taste and texture. 			<description>When DH &amp;amp; I go to the U.S., I always bring home 2 lrg bags of Pepperidge Farm Dressing Mix. Like all of us I expect, I doctor it up a bit to suit our preferences. The simple truth is that after many yrs of making many versions of bread stuffing, I finally decided you just cant beat it for flavor &amp;amp; ease of prep. After returning from the U.S. last mo w/my PFDM, DH went to Greece &amp;amp; I was alone at Thanksgiving. While not a holiday here, a local hotel advertised what they called a typical U.S. Thanksgiving meal &amp;amp; served it as a lunch buffet, so a friend &amp;amp; I went to ck it out. I really didnt expect to learn much that would improve my own fare, but I was so wrong! I learned how to make the best bread stuffing I have ever put in my mouth! For me at least, an added bonus was that it has a distinct Eastern European flavor (Czech, Polish or German in my view), will be perfect to accompany our roast duck on Christmas Eve &amp;amp; would also be excellent w/roast pork &amp;amp; turkey. As good as this is, I suspect all 3 countries would love to claim it as their own. I hope you try this &amp;amp; enjoy it. It is just wonderful &amp;amp; I will never make another! This stuffing is best made upto a day before - to allow the flavours to infuse &amp;amp; mingle......it can also be frozen for up to a month if you want to get ahead for Christmas or Thanksgiving! I stuff some into the neck cavity &amp;amp; under the breast skin - this keeps the breast from drying out; I then bake the rest in an ovenproof dish. Reduce it to a cup and add 1-3 tsp. honey and 1-3 tsp. Dijon mustard to the juice and spoon over the 8 hens. I like the way the cumin and curry sound with the raisins and nuts. Haven't tried it yet. 			<description>These marinated chicken legs come out beautifully glazed and juicy, and look like a lot more work than they really are!  I marinated mine for only one hour and they still turned out nicely.  Also, you can add sliced and scored potatoes to the baking pan if desired, to soak up some of the juices.

Note: I originally tried this recipe for one serving, so had to estimate the measurements of the marinade and stuffing.  The proportions are correct, but the amounts may need adjusting for your personal taste.
