			<description>My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

You just mix all the ingredients on the stove and come back and hour later.  The onions get meltingly soft and sweet.  It'salso great with some crumbled blue cheese. 
If you use homemade pasta, which is more absorbent than spaghetti, you should start with 1 tbsp more butter when making the sauce.
TO MAKE AHEAD : You can cook the sauce entirely in advance up to the point where you add the parsley. 			<description>The original recipe came from the San Francisco Chronicle.  The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach.  If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use.  However, I have used tuna in water when it was all I had in the pantry.  Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version.  Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!!   I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it.  This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). When I made this I miscalculated the time, so I put in the fridge and the next day added 1 can tomatoes w/green chilies and some leftover WW cheese and cooked for 30 minutes or so. Although delicious this is a time consuming recipe -- the original recipe says 2 1/ 2 hours but I took 3 hours to make this plus the another 1/2 hour to reheat the next day --- so be prepared! If possible, use leftover rice as fresh rice will be too moist.  Leftover rice from Chinese takeout works well too.  After making the dish the amount of garlic didn't seem excessive to me, but use your judgment.  Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times.  I reduced the oil as it seemed excessive.  Use 1/2 cup if you'd prefer.  For a vegan dish, omit the eggs.   I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!

The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
