			<description>Russ and I love duck and I love to make stock with the remaining carcass, wing tips and that big neck. I remove the skin from the neck. We mostly eat marinated Asian style duck, so I pop the wings and neck in the marinade and then bake them alongside the bird for a while. I also strain off the fat and cooking juices and after removing the layer of fat, add the jellied juices to my stock. 			<description>My wife is a vegetarian but was sick one day and was craving some soup.  This is what I came up with.  I've found that the smaller you chop the seitan, the better the results.   

This recipe is vegan, but I've also made it for myself substituting with one can of canned chicken, 5 cans chicken stock, and 2 tablespoons of butter and it turned out great, too.    

If you can't locate vegan noodles, the shirataki noodles make a great substitute, but remember to rinse them in water and slice them in half with scissors before adding to the soup.  

The cayenne pepper really helps with a stuffy nose, but can be safely omitted without sacrificing flavor. The next night I stir in Tostito's Queso and or any leftover taco meat I have in the freezer.  I''ve even used it in a casserole by layering corn tortillas, cream of chicken soup with 1/2 cup sourcream stirred in, the soup with meat added, then topped with cheese or Queso.
We don't like food that is really spicy, so this soup has a mild kick to it.  Diced tomatos with Chipotle peppers are available in brands such as Red Gold or Best Choice.

Cauliflower is inextricably linked with the Comtesse du Barry, a favourite mistress of King Louis XV of France. Interestingly, cauliflower is known as the faux-potato in several low-carbohydrate and low-fat diets. This parmesan-flavoured cauliflower soup is a wonderful dish to have to hand during the busy Christmas season when guests are popping in. If you prefer it with more of a kick, use blue cheese instead of parmesan, or stir in a good pinch of garam masala.

To dress it up for pre-Christmas entertaining, strew the top with a few matchsticks of smoked salmon, or with crisped slices of pancetta and toasted almonds.

Or, if you want to be very Comtesse du Barry about it, slip in a couple of seared sea scallops at the last minute, then serve it with a dollop of cr&amp;egrave;me fra&amp;icirc;che and a spoonful of caviar.

			<description>Can be made with roasted ingredients or raw. 
Notes: I use whole chicken carcass with most of meat gone or approx equivalent, good to have some meat left on it, if you can handle it, break some of the bones to get the marrow out to make it taste richer. Also, i save my veggie cuttings (outsides of onions, potato peels, carrot tips) and use them . I just stick them in a bag and freeze them until I make the stock.  you can add 1 C white wine or change seasonings according to wishes or what is fresh and available. try not to make it more than minimally salty so can add when you are using it for other soups.

For roasted chix broth: roast chix &amp;amp; veggies for 20 min at 500 to carmelize.  Usually make this after I make roasted chicken and veggies for dinner and use left overs/remains.  Just roast extra veggies and include the parts you trimmed off on the ones you plan to eat--tips of carrots, etc. 

If I'm feeling ambitious, I pick out the chicken bones and freeze the veg remains for dog soup and delight my dogs. 

I also make this using the parts of veggies I trim off whenever I'm cutting up/using veggies--outer layers of onions, tips of carrots, etc.  I just stick them in a bag in the freezer and add them to the stock when I make it. -- posted by &lt;a href="http://www.recipezaar.com/member/403989"&gt;Papagayita&lt;/a&gt;</description>

The exception (Mongolian Hotpot With Chicken and Shrimp #327359) is listed as Mongolian style hotpot. This recipe, and several that will follow, are authentic Sichuan. The source is Fuschia Dunlop's Land of Plenty, which focuses on Sichuan cuisine. One of her other books, The Revolutionary Chinese Cookbook, discusses the Hunanese version of hotpot cuisine, which appears to be more similar to the Mongolian than is the Sichuanese. I haven't had this specific recipe, but I have had Sichuan hotpot at several Chengdu and NYC Chinatown Sichuan restaurants ... an absolutely wonderful meal. Fuschia spent several years in Chengdu as a student at Sichuan's most notable cooking school ...IMHO her books are among the most authentic and best sources in English for Sichuanese and Hunanese recipes. The basic process is as follows; Prepare the broth (this recipe) or multiple broths (plain, spicy, vegetarian, etc.). Prepare raw ingredients which will be dipped by each individual guest. Each guest will remove his/her ingredient when cooked to their preference, then dipped in a dipping sauce (there may be 4-12 sauces for the party) and eaten. When all are done with the dipping ingredients, the broth, now flavored from all the dipping ingredients, is served as a soup/broth. Enjoy!! The best part is you can make the chicken ahead, and then put the soup together in 20 minutes.  For a quick soup, this is really good. Now you can always use the seasoning and add add fresh vegetables if you want, but this is my version of a homemade tasting soup in less time than it takes to go get take out. Make some grilled cheese sandwiches or some ham and cheese and you have a great comfort food dinner. And a bonus, you have enough chicken leftover to make chicken salad sandwiches for the next day or chicken for another meal.
