			<description>A friend gave me a nice LEAN (hence the name) sirloin moose roast and I developed this recipe to prepare it -- it turned out just great. Other cuts of moose, elk, or deer can be used in this recipe but the sirloin cut is really tops for this particular method. I recommend trimming as much visible fat as possible from the roast prior to marinating. I believe it has been tweaked until absolutely perfect.  there are 2 distinct seperate groups of chili fanatics in the world that differ greatly in their opinions of the perfect chili.  some like it sweet, some like it spicy.  This recipe will have both coming back for more!  The initial mild sweetness slowly gives way to a smoky spicy flavor that really only comes on slowly after you swallow. You can add a cup of yellow corn, a can of diced chiles or chopped jarred pimientos just before the end of cooking time for a shot of color and flavor, or sprinkle in a few drops of hot sauce.  Also, instead of sausage, you could stir  in cut-up leftover ham, chicken or beef.  Or try chicken or turkey sausage. It's just one of those fast crockpot recipes that is also good. JEFF'S NOTES: This version of the Mexican Pork and Hominy stew, know as Pozole (or Posole), is hands down the best version I've had. Since it is made in a slow cooker it is easy, but the combination of fresh meats and spices combined with canned items, make this dish come together with a true depth of flavor. 			<description>I learned to cook from Palestinians, but I have altered methods.  I learned to cook the meat in this recipe by searing/browning it on all sides in a pan.  I changed that method to make the meat more tender and to create a meat stock to add to the stew for depth of flavor.  You can make this with lamb or beef.  Middle Eastern cultural preference is lamb but beef can be easily substituted (and using my method to cook it, nobody will know the difference).  Time saving tip: if you plan to use lamb, most commercial butchers are happy to remove the meat from the bone, remove the fat, and sometimes even cube the meat for you. But you have to ask for it!  Smaller/shorter okra are strongly preferred.  Bud-like okra can be found frozen in most Middle Eastern or Indian grocery stores. 			<description>This gluten free, dairy free, vinegar free recipe is one of my favorite to fix for any company and to have around during the work week. It has great, easy to find and healthy ingredients.  Made in the crockpot.  Can be ready for you to come home to (and smells incredible).  Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free.  Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also.  The more natural the better.  This is great even with gluten free cornbread.
