			<description>I found this recipe in a Betty Crocker computer cookbook. So good ol' Betty gets kudos for this DELICIOUS side dish. The boyfriend loves it so much he asked me to cook it when his father and step-mother were in town. (I think he was trying to impress them with my cooking abilities because he had me make my Stuffed Summer Squash also, which I have yet to post here on 'Zaar, but its coming).  Anyway, the water chestnuts add an awesome crunch and they go very well with the lemon. we like it spicy, so watch the pepper sauce. 			<description>I never could cook short-grain East Asian-style rice until I learned this method from Japanese cookbooks. I knew what I was after: the rice should stick together enough that mouthfuls can easily be picked up with chopsticks, but not be at all sticky or gummy. Each grain should be white and smooth, almost pearl-like, and should taste subtly not just of starch but of delicious grain. For a long time, my short-grain rice was not only not perfect, it often turned out gummy or scorched. I had been able to cook any kind of long-grain rice quite well for years; with that I seem to pick up on some cues I can't quite put into words, maybe just the timing, or some change in the smell. This knack didn't translate to short-grain rice, and I continued to struggle until I read some Japanese cookbooks. As soon as I tried this method, I was able to produce nearly perfect short-grain white rice right away. The cues for how to cook the short-grain rice are in the sounds it makes while cooking. 			<description>This is director Robert Rodriguez's version of the recipe with some of the measurements modified and simplified so you're not squeezing 10 lemon halves and wondering how much 8 cloves of garlic is to a cup. I also don't use banana leaves...too much cash and I'm here to save you some money. Trust me, the pork tastes just as good as the leaves are only for show.

Let me also say that Annatto is also known as &amp;quot;Achiote Seed&amp;quot;. You can get it at any Spanish market in the city in which you live...and I would ALSO recommend using the powder version of ANY of the spices with the exception of cloves and all-spice berries.

My pork is also hotter because I'm a spice-nut.

Last, but not least, the pork: get it de-boned by your butcher or deli clerk. This takes a minute or less at the store and is VERY worth it. Otherwise, you will spend a LONG time trying to cut around a hand-sized bone inside the meat.

I also like to marinate the meat overnight which is the reason this recipe takes HOURS to prepare. If this isn't your thing, one to two hours will do as well but an overnight stay in your fridge will allow the juices to better penetrate the meat.

Also, you want the following items:

1) Coffee/spice grinder
2) 1 Large Chef's Knife/Santoku
3) Blender
4) Measuring Cup/Spoons
5) 1 1/2 Gallon Ziploc Bags
6) Casserole or Baking Dish
7) Aluminum Foil (the big, wide foil, not standard)
8) Rubber gloves (for cutting the peppers; if you don't have these, use plastic bags to go over your hands)

If you have a coffee grinder, make sure you're not gonna use it for making coffee in the near future because your coffee will have that spice taste.

			<description>I have had this rattling around my head for a while and finally made it after obtaining some beautiful rather large shrimp from the farmers market today  thank you Mr. Fish Guy  Please dont leave our farmers market.  Originally my craving in order to be satisfied twas to be over thinly sliced neatly arranged boiled /roasted baby red potatoes lightly topped with fresh shredded parmesan cheese. Yummmm, that would have been spectacular with the sun-dried tomatoes.  However, Im out of potatoesand parmesan cheese, sigh.  So here is yet another smoked basmati rice dish.  Please forgive I really am more creative that rice rice rice.  Its all about the presentation!!! You will need a pretty presentation plate  but even a nice 10 glass pie plate will do. You will need a steamer for the shrimp. You will also need clarified butter.  I just happen to be someone that buys 4 pounds of butter at a time and clarifies and seasons it with various spices for general usage.  Think about it (no more shredded morning shredded toast :o]).  You will always have spreadable butter that is lightly seasoned for savory or sweets with cardamom, cinnamon, and fenugreek, I forget what else I might have put in the last batch on a whim, but those are my basics for clarified seasoning. Clarified butter keeps nicely for several months on the shelf or longer if in the fridge.  Yes, in a glass mason jar of course.  If you dont mind the heavier flavor  just buy Ghee.  I personally like a lighter flavor and not so nutty from their high temperature clarify process. But I do also have some Ghee on my shelf for certain dishes.
