			<description>The best Corned Beef I've ever made was in the Crock pot. (You can substitute water for beer, but the flavor won't be the same)

NOTE:  If you make more than 3-4 lbs., cook it on HIGH.  I've made 6-7 lbs., and it won't be done after 9 hours on LOW.

			<description>This is a combination of a few different recipes Ive either found online or in cookbooks. I like using the crock pot (ease of use, easy to clean) and found all the corned beef and cabbage recipes for the crock pot lacked either flavor or texture or were too bland to be counted for much more than a side dish to something with flavor (like Shepherds Pie). Im not fond of the garden-variety corned beef brisket you find in supermarkets, but believe anything can be made to taste good, and so this recipe was developed to do just that. Id hold back on adding anything other than the addition of an onion. Ive tried this recipe with carrots, celery and onions and found the flavors did not mesh well save for a lone onion (the sweeter the better).

NOTE: If you are using a ceramic insert crock pot or a crock with any hot/cold sensitive material, fill the crock pot 3/4 full with warm water and heat the crock pot on high for at least 45 minutes prior to adding in the brisket and liquid. 			<description>This is a modified recipe from one that a friend gave me.  This is perfect if you love stew, and the beer is in no way overpowering.  It makes the beef nice and tender, in fact you can cut the beef with your spoon.  I prefer the potatoes unpeeled, and for carrots I've used baby carrots instead of 3 regular carrots sliced, which works good too.  Enjoy with a nice glass of Guinness.

I suggest not substituting the Guinness for another beer in this recipe, I've tried it with Blue Moon and it does not work.
