Smoked Salmon on Irish Soda Bread Crostini

This is the PERFECT appetizer to kick off your St. Patty's Day meal. Think outside the box and give this unexpected appetizer a whirl. The crumbly bread with the tangy raisins and hint of caraway paired with creamy chive butter and cold smoked salmon goes perfectly with a black and tan or crisp white. Follow it up with a corned beef and cabbage main course and your Irish eyes will DEFINITELY be smiling.
Sticky Guinness Chicken Wings

This is based on my grandmother's recipe for Pot Roasted Chicken, a sort of fusion dish. It has a definite bite from the pepper and Guinness and is not for the fainthearted *wink* If you prefer something gentler, use half Guiness and half water. The original dish is a mixture of Asian and Western ingredients and cooking methods. This is my lazy version, which was inspired by Buffalo Chicken Wings. It's good with white or buttered rice or pasta or as finger food when you're having drinks. -- posted by danadooley

Green Tomato Spirals

These don't have to be cut into spirals; just thinly slice the green tomatoes instead. (I have a gadget that cuts potatoes, onions, etc into long spirals, like curly fries, and wondered how it would do with a green tomato. It did great!). These are best eaten right after frying as they tend to lose their crispiness the longer they sit. I serve them with ranch dressing. -- posted by mailbelle

Traditional Irish Shepherd's Pie

Posting this per a request. I've said it once and I'll say it again there is nothing Irish about Corned Beef and Cabbage, but Shepherd's Pie has always been and still is a staple of traditional Irish cooking. This is a really easy, but tasty recipe that the whole family will enjoy. It's nutritionally sound with all the major food groups represented. The British use lamb in their Shepherd's Pie, but we've always used beef. Do whatever you prefer or even try turkey if you're watching fat content. This sauce is lovely and rich and should go well with any meat. You can use fresh or leftover mashed potato. I usually use 3 tbsp of ketchup instead of the 2tbsp of tomato paste as I like the hint of sweetness, but traditionally the paste would be more sound! You can also make individual pies which are always a hit with the kids. This freezes beautifully too, so make two and save one! Just let it defrost and glaze with the egg and pop into the oven as directed. Enjoy! :) -- posted by Dewdropdeb

Ruby-Glazed Corned Beef

From the famous Silver Palate caterers, this is a step up from your traditional corned beef. Sophisticated sweet and tart flavors update the classic American recipe that makes an impressive centerpiece to your buffet menu. Baked to a beautifully glazed finish, the hot corned beef is sliced thickly and offered with additional Port sauce.
Vampire Deterrent

I got this recipe originally from my old next-door neighbor. I watched her make it one Friday in 3 minutes flat, and when she took the cover off her food processor the heavenly smell of garlic just wafted throughout the house and killed every vampire in the neighborhood. My neighbor calls this Moroccan Zchug, my friends call it That-Yummy-Garlic-Stuff and I just smile and pile it on barbecued meats, baked potatoes, whatever. I actually happen to like vampires -- my father was born in Transylvania -- so I hope none are offended by this recipe. Just a boring little note here: there are two kinds of people in this world, cilantro lovers and cilantro haters. I belong to the former, Sushiman to the latter. If you are like Sushiman, just sub parsley for the cilantro. Since I let him put a ring on my finger and pay for my electricity, I've been making it with parsley instead and it's just as good. -- posted by Mirj

Caraway Cabbage With Sausage and Potatoes

This is so much better when made with cabbage and potatoes straight from the ground. Most people I know use just a couple of tablespoons of spicy or hot sweet mustard, but I just use regular yellow mustard (and more of it) due to personal preference. I also use a lower fat pork & alligator sausage from Winn-Dixie that might not be available everywhere. I'm sure it would work with any kind. -- posted by sanguis

Northern Ireland Potato Soup

I actually got this recipe in my home-ec class in high school. My BF (and my ex-BF) loved this soup so much! It is perfect for cold fall days, and makes enough to warm up a family. So creamy! You can sub half and half for the heavy cream to save on calories, but the soup doesn't come out as thick so I just try to eat healthy the rest of the day to make up for it :) -- posted by Smoofinator

Scottish Cheddar Cheese and Spring Onion Tea-Time Scones

Another one of my Scottish grandmother's recipes! I have several cheese scone recipes posted on Zaar, but this one is one of my favourites. Spring onions are also called green onions or scallions. My mum still makes these regularly and serves them filled with cream cheese (Boursin is great!) and cooked ham, a tea-time scone sandwich! Try to use a mature Scottish cheddar - my favourite comes from the Isle of Mull, but any mature farmhouse cheddar cheese will work. Another idea is to make mini versions of these scones for delightful appetisers, spread them with a filling of your choice - very welcome with a chilled wine or sherry! -- posted by French Tart

A Pint of Prawns and Guinness Chaser - British Pub Grub!

Classic and traditional British Pub Grub! Cooked prawns (shrimps) served in a pint mug with a tangy garlic mayonnaise and a pint of Guinness of course - my idea of heaven! British pub grub is justly famous and this simple dish is also great when served at home. Serve these prawns for family gatherings, or St Patrick's Day, St George's Day, St David's Day, St Andrew's Day, Australia Day, football, superbowl, darts matches or ANY time you fancy simple, robust food with a pint of ale! I have suggested Guinness but you can serve these prawns with any real ale or your favourite brew. I have spiced the mayonnaise up a tad - if you are not a lover of spicy food, serve these prawns with classic mayonnaise. -- posted by French Tart

Chocolate Mint Brownies

Perfect for St. Patrick's Day, and it feeds an army! This recipe is from America's Best Church Supper Recipes/Taste of Home from Helen Baines of Elkton, Maryland. She says they get moister if they are left in the refrigerator for a day or two before serving if you can leave them alone that long. They are very rich but delicious. I couldn't find mint chocolate chips so I used Andes Mints instead. I also found it needed a little more cooking time, but that may vary by altitude and your stove.
The Best Party Punch Ever!

This recipe will make enough green punch to fill an average size punch bowl. If you are entertaining a large number of people and feel that you need to make more, just multiply all of the ingredients, with the exception of the sherbet. Recently I made this punch for my nephew's first birthday party. To serve aprrox. 50 guests, I multiplied the recipe by 4. Results vary depending on the size of the cups. To change the color of the punch, substitute a different flavor of Kool-aid with a MATCHING color of sherbet. (The two colors must match, othewise, the punch will turn brown.) -- posted by BeanPole
