			<description>I haven't tried this yet, it's in response to a request. It looks really easy and fun. I had put it aside to make with the kids, and at least now I won't lose the recipe, lol. It's from Quick Cooking. They say 5-6 cups of sugar--I'm guessing you start with 5, and add more if it doesn't seem very easy to handle. Ask the butcher to butterfly the leg (removing the bone and opening the leg to make a flat piece of meat) and then back home spend five minutes with a sharp knife trimming up his or her handiwork. You will divide the leg into individual sections, following the muscles. 			<description>Plan ahead for your Easter feast!  I read an article in The New Yorker magazine regarding a letter from Ecuador by Calvin Trillin about a Spanish soup that he adores called Fanesca, a thick and hearty soup heavy on the beans, which is only available during holy week.  Well, the article didn't come with a recipe but I found several on-line, all more or less the same.  Don't let the number of ingredients put you off, it will come together relatively quickly.  Seeing as how I'm a vegetarian, I omitted the salt cod but I am leaving it here in case you are not but making it an optional addition.  If you do add it then you'll have to start this recipe the day before.  Note that the rice, beans and vegetables should all be cooked before adding and that will take you less than an hour if they are all cooked simultaneously (see instructions).  If you cook everything ahead of time this recipe comes together in 15 minutes. 			<description>Simnel cake is an English tradition, formerly made by girls on Mothering Sunday (Mother's Day, in March in the UK), but now the cake has become an Easter tradition.  It is usually decorated with a layer of marzipan, and 11 marzipan (almond paste)balls around the edge, to represent the apostles, (minus Judas Escariot, for obvious reasons). I make 18 large muffins with the batter and bake for an extra 5 or so minutes until they look a little crispy. Note: The original recipe called for 3 eggs and no oil, so I assume you could substitute either an egg or 1/4 cup applesauce for the oil in the recipe. Also, don't cut back the sugar!!! 			<description>Asparagus is one of my favorite culinary ways to welcome spring.  I almost always make this recipe for Passover, which falls at just the right time of year.  It would also be great for Easter for the same reason.  This is a pretty flexible dish -- you can play with quantities, change up the onions, etc. and it still turns out delicious.  I have been replacing much of the butter with olive oil, and that works fine too. He had forgotten to get reservations at my favorite restaurant for Mother's Day brunch so he made this instead.  It was better than my favorite restaurant!   The original recipe says it serves 4.  But it is very rich and it's enough food for 8 if you're serving with a side of fresh fruit. 			<description>One of my recent cake inventions - a standard Victoria Sandwich Sponge with a few delicious additions! Fresh oranges and lemons, lemon curd, crystallised violets and mascarpone cheese make this basic sponge cake moist and special enough for the Easter Sunday tea-time table, or for Mum on Mother's Day! I used lemon curd for the icing, but orange curd would also work if you wanted a mellow flavour. I have a recipe for crystallised violets on Zaar, Recipe #216296, and if you don't have any fresh violets, use any sugar paste flowers or cake decorations that work for you - the object is to make a Posy of flowers! This makes a big cake with one layer, you can cut the cakes again and make a three layer gateau if you wish. This cake disappeared quite quickly, but if you have any left, it keeps EXTREMELY well in a tin for up to one week.
