			<title>Caramel Apple Cheese Ball</title>

			<description>One of my favorite treats is caramel and apples, most usually just the store-bought caramel will do.  I'm not terribly fussy when it comes to something like that.  However, if I'm entertaining, which I used to do quite a bit, I want to go a bit farther than a tub of dip and a cut-up apple.  This was delicious and when I read the recipe in gourmet class, could NOT wait to try it.  The first time I got to sample it, I didn't make it; the girl next to me did.  She didn't like it.  I told her she was nuts.  It's a bit unusual for a cheese ball, but hey, who says the norm is always the way to go??  The cheeseball is an alternative to &amp;quot;straight&amp;quot; dipping apples.  I like to drizzle the caramel on top of the nuts when serving.  I have also just spread the mixture on a graham cracker and topped with an apple slice.  It's up to you to  use the caramel. 			<description>This is a creamy Italian-style sauce that I regularly serve warm, over hot noodles or cold, spread on crackers.  The combination of the sour yogurt, tangy garlic and bitter walnuts makes for a nice, balanced sauce.

This recipe works best with a yogurt that contains 5% milk fat or higher.  Add enough so that the sauce is a bit wetter than you'd like because the dry ingredients will absorb a fair amount of liquid.

It has been suggested that it be served in martini glasses on small bed of a mesclun mix with a cocktail rye or some type of rye cracker. The pumpernickel cocktail bread just doesn't cut it. My version comes out light green and looks a lot like guacamole, tastes fresh and herby and has a creamy mouth feel.  The miso and nutritional yeast add a nutty/cheesy depth that you notice but can't quite put your finger on... and the garlic adds a raw zip that is really nice if you like that kind of thing!  I love, love, love that this is something I can make that has no added fats or oils.  Hope you love it too!
