FYI - NOTE: It is true that previous USDA recommendations had directions for canning mashed winter squash, but USDA withdrew those recommendations. Any publications preceding the Complete Guide to Home Canning (September 1994 revision) are considered out of date.

The salsa was a hit. I was tempted to title this Witchin' Salsa (replace the W with a B), but this is more kid-friendly. For you heat-eaters (myself included), you can add cayenne, hot sauce, or replace the jalepenos with other chiles. I just had to go wimpy because of my mom. I swear, I can practicially DRINK tobasco. My mom enjoyed the gazpacho part with a grilled cheese. You can even spread the salsa on crusty bread and call it 'Bruschetta'. 			<description>Whipped this up tonight since we have been a bit vegetable deficient lately. I LOVE hummus, as does my fianc&amp;eacute;, so I thought this would be perfect. It turned out really well. This is based on my Lebanese friend's recipe for hummus--she is religious about hummus and tabbouleh, so I know I have the basic recipe down pat!! :-) Be sure to adjust anything you want; it is possible to make hummus more low in fat by reducing the amount of tahini or olive oil you add, and if you hate edamame, then omit it. Just make it up with water, stock, or the liquid from the can of garbanzo beans. 			<description>I originally got this out of Eating Well magazine, but have tweaked and played with it a bit.  I always make a batch to serve with soft cheeses, like real Gorgonzola, Brie--or Sean's favorite, Fromage di Afinois.  Really, really good.  Can use with just about any kind of dried fruit, though DH insists you can't do it without at least the apricots.
