Tuna and Bocconcini " Bruschetta "

Bocconcini is one of my favourite cheese. Traditionally made in Campania, Italy, it is a form of fresh mozzarella that is like a soft curd. I would not sub mozzarella in this. Bocconcini means "Little Mouthfuls", which they are! This is not your traditional bruschettta and the recipe is from the Dairy Farmers of Canada. Enjoy! -- posted by Nif

Lemon Cheese

This is the starter recipe in the book "Cheesemaking Made Easy" by Ricki and Robert Carroll. It is a wonderful book with helpful hints and tips. I've made the cheese twice. It was great the first time. The second time I must have made a mistake. This will make a spreadable cheese with a light lemon flavor. The yield is a guess. Store in the refrigerator for up to a week (that I can vouch for) in a tightly sealed container. Though the whey is nutritious, I can't help you with a recipe for it. NOTE: Though the authors don't say this in this 1982 book, don't use lactose free milk for cheese making. -- posted by dogsandwoods

Inspirational Goat's Cheese on Garlic Ciabatta Toast

Toasted goat's cheese on toast that has been spread with garlic paste.......and then served on mixed salad leaves - brilliant! I am hooked on Nigel Slater's new programme, "Simple Suppers", where he prepares and cooks food just the way I like it...........fresh, seasonal, unpretentious, flexible and hearty. This is one of Nigel's "Inspirational" recipes that was shown on his first programme. In the absence of ciabatta bread, I would be inclined to use any rustic bread........with lots of body!
Basil Parmesan Dip (Cooking Light)

This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams. -- posted by appleydapply

Instead of dipping your Hot Wings or celery sticks, into either ranch dressing or bleu cheese dressing, why not just take a forkful of this after your bite of Hot Wing? This is even good mixed up with diced chicken or turkey for a sandwich. Only, you might want to cut the celery a little smaller. I don't especially like Bleu Cheese, so I am putting it as optional.

Plan to prepare it soon and see what the end result will be. If you beat me please give your suggestion and ideas. Thanks in advance. :) You can replace the shrimp with crab meat.
Garlic Spread With Olive Tapenade

I originally made this to emulate the sandwich spreads you get at the Safeway deli. (Those sandwiches are super addicting, but we don't live near a Safeway anymore!) This is a pretty perfect match and is SO GOOD on sandwiches, but also makes a very pretty party appetizer if you spread the garlic spread on toasted baguette slices and then top with the olive tapenade.

I always use reduced-fat cream cheese and mayo. I have made this several times without the kalamata olives (they're more expensive so I don't always have them on hand) and we enjoyed it just the same.

Recipe yield and prep times are approximate...I'm horrible at paying attention to things like that... -- posted by Robyn's Cookin'

Pineapple Cheese Ball

Canned pineapple gives this cheese ball a little extra flavor and sweetness. I recently brought this cheese ball to a party and even those who claim not to like pineapple were raving about how good it was and said it was "addicting". This recipe makes two cheese balls, however, you may want to only take one cheese ball to your next party and keep the second for you and your family, as I'm sure there will not be any leftovers. I typically do not roll the the cheese ball in nuts, but do so if you wish. -- posted by Chef #396295

Marmie's Roasted Red Pepper and Garlic Bread Butter

This is an ,exquisite, mellow , really easy and somewhat fancy garlic bread. A must to try!
My Aunt Dawn told me of something that she makes that all her kids love and I thought I would try to imitate it.
This is what I came up with.
Often I make tonnes of roasted garlic and red pepper and freeze it for later ease of use. (fresh roasted red pepper is really nicest)

Hummus - Silky Smooth, from Scratch!

This recipe was published in the food section of my city paper from a local Lebanese restaurant. Amazingly smooth and creamy.

"Baking soda is the secret to silky smooth hummus; it softens the beans so they cook quickly and break down easily when blended. The hummus can be prepared up to two days ahead and stored in an airtight container in the refrigerator until ready to use." -- posted by biznana
