			<description>Wheatberries can be used like barley, but take longer to cook. In fact, it seems near-impossible to overcook them, so they require far less attention than other grains. 

I make this frequently as a school lunch for my son, and it's dead easy to cook at the same time as dinner, which is why I've included a recipe for only one serving. Apologies for the vague measurements, I eyeball everything, just as our great-grandmothers would have done.

His mother would go every day to the market to purchase fresh items and one day she made this dish for us.  You must make the pasta from scratch as it isn't available commercially.  Basically make a big sheet, cover it spinach and cheese, roll it up, boil, slice and serve. 			<description>Growing up we used to have a salad like this all the time, and it was about the only way I would eat spinach.  Still love this combination.  I think this particular recipe originated from the side of a bag of mushrooms.  I have tweaked it over the years because I don't like to cook the spinach, I prefer to just toss the hot hot dressing over the spinach, which just wilts it enough without cooking it.  I'm always throwing bread loaf ends into the freezer, this is a good recipe to use some of them in.  Toss the final salad with cheese if you like. I'm posting the way I most recently had it, but the wild leek pesto is a rare treat, it's available to me only in the spring at the farmers' market.  I usually don't add any pesto in, but now that I've tried it, I might experiment with others to see what works (arugula might be nice!)

Toss it into your pasta dish, replace tomato sauce on pizza with this, etc. My favourite way to eat is is spread on fresh bread. The measurements make it really easy to remember the recipe and you only need to use 1 measuring cup! I recommend you use firm tofu rather than silky because it is more nutritious. These little herb tarts are so summery and make wonderful picnic food, as well as interesting appetisers. I have wild, woodland and cultivated sorrel in my garden, but prefer the tangy almost lemon and vinegar taste of wild sorrel leaves in these little tarts. Serve these warm or at room temperature with lightly dressed salad leaves and a glass of crisp, chilled Chablis or Chardonnay. Notes on using sorrel leaves: Sorrel is one of those ingredients that feature all too rarely in our kitchens, yet its bite and acidity make it one of summer's top temptations. When you're cooking the larger, mature leaves, strip out and discard the stalks, just as you would with spinach, before cooking. 			<description>This luscious spinach and cheese dish comes from Northern India, the home of paneer, a fresh cow-milk cheese similar to ricotta.  It's sold near the feta and haloumi in supermarkets, either of these two cheeses can replace paneer here, but the results wont be exactly the same.
When I made this, I did use a soft feta, which melted into the spinach and gave me the most creamy rich curry you can imagine.
I also upped the amount of the garam masala, to give a hotter result,  and I sauteed some shrimps in garlic and butter, and served them with the curry, we enjoyed an excellent meal!

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower.
