I cut this recipe out of a June 2007 New York Times magazine.  The original recipe was published in 1989 and came from &amp;quot;The Food of Southern Italy&amp;quot; by Carlo Middione.  Put here for safekeeping, and will try this soon.  I will definitely lower the amount of oil way below 1/3 cup, which is what the published recipe stated.  If you are not concerned about your waistline, go ahead and use that much. 			<description>I adapted pinkcherryblossom's great recipe for spinach and chickpea curry to make this tasty vegetarian couscous. I changed the combination of spices a bit and substituted canned tomatoes for fresh ones.
It's very flavorful and filling but light at the same time. I use Near East couscous mix for the grain: it's ready in 5 minutes as opposed to real couscous which is very long to make. 


If you don't use spinach in the recipe, you might want to add a little water in step 3. You may also add other vegetables, such as carrot, squash, eggplant or potatoes. Boil or steam them aldente separately and add them in step 3.

I have to watch my food budget, so I also use supermarket lentils instead of the imported ones, and bottled lemon juice instead of freshly squeezed. You can, of course, use Spanish pardina or Indian, Egyptian or Ethiopian lentils if you like, as well as freshly squeezed lemon juice. The Tuscan kale is very good with this dish, and you could add arugula, watercress or beet greens to the soup. At the potluck, there was not a single vegetarian there, and they all liked this dip. Cayenne and grated carrot would probably be great in this and make it a more &amp;quot;traditional&amp;quot; spinach dip. Not only does the spinach and chickpeas provide vital vitamins and minerals, the chickpeas are good source of veggie protein.  Serving this over a bed of couscous makes this a complete Moroccan dish.  You can substitute the pre-packaged couscous if you like, though I prefer to buy it in the bulk containers and measure out the amount I  want to use.  This would  be delicious with a dollop of light plain yogurt on top to temper the spice. It can be made with any kind of berry, and another kind of milk could be substituted as well, but we have a dairy allergy at our house. 			<title>Vegan Spinach-Mushroom Quiche</title>

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower.
