Spinach Salad With Pineapple, Prosciutto and Shallot Dressing

I can't wait to try this from the Sun-Sentinel, Feb. 28, 2008. The note above the recipe says that "This is a play on the original spinach salad; it can be served as a starter or offered alongside roasted chicken, pork or duck. The addition of pineapple adds sweetness and body. Baby arugula leaves would work well instead of spinach." -- posted by Oolala

Artichoke and Rice Salad

Inspired by a 1960 classic; this side dish calls for Arborio rather than conventional rice, resulting in a chewy and creamy textire. Martha Stewart is using this dish in her mother's day luncheon menu. Didn't include cooling times.Have made a few subtle changes so that it can be vegetarian, as well. -- posted by Manami

Spinach Salad With Craisins

This recipe is from the Ocean Spray cranberries website. This is a very tasty side salad with any meal. I love craisins and usually add a little more than the stated amount. The almonds are optional, but I think they really add a lot to the recipe. Walnuts are also a good alternative. -- posted by DesertRose15

Tasty Grilled Chicken Salad

This salad is perfect for a summertime lunch or light dinner. It is easy to prepare ahead for a picnic or potluck: just assemble immediately before serving. Time-Saving Tip: I use the pre-prepared grilled chicken breasts from the grocery store to make this quick and stress-free after a long workday. Keep in mind that the "cooking time" is actually the minimum "chilling time." -- posted by D.
Spring Spinach Salad

I don't remember what book I got this from but it is a big hit at potlucks. People always ask for the recipe. The orginal recipe calls for pears, but sometimes I use green apples. I save the oil that I toast the pine nuts in and use it in the vinaigrette. Also, I often use a bag of spinach with carrots. If I am short on time, I buy precooked chicken breasts or elimate it altogether. -- posted by Luv2cook4fun (Chef #878311)

Found this in a drawer with the ingredient quantities, as we use more of each, but I don't know from where it came. This is easy and with some chicken and some fruit, the meal is complete. Didn't account for chilling time. -- posted by Manami

Artichoke Heart Salad

Whoever created this recipe called it "Mushroom Toss," which I never understood, since the mushrooms are no more important than the other ingredients in this salad. So I am re-naming it after the artichokes - equally random, I suppose, but they're more interesting than the mushrooms. (FYI: ignore the ounces on the ingredient list - I have no idea how many ounces a bag of spinach weighs, but the site needs the amount to be specific, so I made it up. This goes for the jar sizes, too - just use whatever you find in the supermarket) -- posted by Kishka

Becky's Grandma's Egg & Spinach Salad

This delicious salad was served at a party and I asked the hostess, Becky, for her recipe. This was from her Grandma. The original recipe called for 16 ounces of spinach (torn), and only 6 slices of bacon. I have listed the recipe as Becky prepared it, she used about 2 1/2 bags of baby spinach and 18 slices of cooked bacon. The salad will get too weepy if left sitting too long, so plan to eat it all right away, this doesn't keep well once the dressing has been added. When I made this, I used a 250 g bag of baby spinach, about 8 strips of bacon, half the dressing, and I still used the 3 eggs. -- posted by HeatherFeather

Wheatberry Salad

Wheatberries can be used like barley, but take longer to cook. In fact, it seems near-impossible to overcook them, so they require far less attention than other grains.

I make this frequently as a school lunch for my son, and it's dead easy to cook at the same time as dinner, which is why I've included a recipe for only one serving. Apologies for the vague measurements, I eyeball everything, just as our great-grandmothers would have done.

You can substitute 1/2 cup barley, but check the package for cooking directions. Also, any vegetables you prefer can be added, these are just the ones I like. -- posted by Ginsugirl

Could there be a more delightful dish to usher in the beginning of the warm weather season than a delicious, crispy salad? As an added bonus, this salad is as pretty as a picture and tastes as good as it looks!
We have used both the Yellowfin tuna (also known as Ahi tuna) marinated in lemon dill and olive oil, and the one with roasted garlic in olive oil. Both are equally delicious.

Warm Mushroom & Wilted Spinach Salad

Growing up we used to have a salad like this all the time, and it was about the only way I would eat spinach. Still love this combination. I think this particular recipe originated from the side of a bag of mushrooms. I have tweaked it over the years because I don't like to cook the spinach, I prefer to just toss the hot hot dressing over the spinach, which just wilts it enough without cooking it. I'm always throwing bread loaf ends into the freezer, this is a good recipe to use some of them in. Toss the final salad with cheese if you like.
Classic Spinach Salad

This is a favorite salad of mine when I want something that's quick to prepare. If I have some pre-boiled eggs in the refrigerator I can get this on the table in about 5 minutes. (Note: the recipe calls for 3 tablespoons of jarred bacon pieces; however, I usually fry 3 slices of bacon, crumble them and use in place of the jarred bacon. This makes the prep time about 10 minutes longer.) -- posted by TasteTester

Curried Egg Salad With Caramelized Onions

This dish was part of a menu that Monica Bhide had where she had eighteen guests, eight different diets,- and one cook to try and please them all. Monica's newest cookbook is Modern Spice: Inspired Indian Flavors for the Contemporary Kitchen (Simon & Schuster, 2009) ." I took it as a challenge! I like to throw dinner parties and I pride myself on creating memorable meals.I wrote cookbooks, damn it. So what if the Jack Spratt nursery rhyme was coming to life in my house.(Remember Jack Spratt could eat no fat, his wife could eat no lean.)" So it was with this fervor that she had a great party even though she swore that next time she was ordering pizza!
Gomae - Japanese Style Spinach Salad

This is Chef floWers version of Spinach Gomae. It's a side dish I often ordered at my favourite Japanese restaurant (before it closed down.) I found a visual version on you tube and since I couldn't find a recipe on www.recipezaar.com I thought I would add it to Zaar's collection. We all love this salad and my daughter can eat the whole serving (if I let her). I often double the recipe, so she can have extra greens, well it worked for Popeye The Sailor Man.
