Spring Veggie Burrito Bake

I got this from a seasonal cookbook. Sometimes it's too early for fresh spinach, so I go for turnip greens. The tumeric adds a little flavor and gives the rice that yellow "Spanish rice" look.
Holiday Spinach

This is a variation of Giada De Laurentiis' recipe for spinach in her first cookbook. Her family makes it for holidays, but I like all the time.
African Spinach and Peanut Butter Stew

Found online at www.fooddownunder.com, while looking for economical 'African' recipes.
Tasty and nutritious, a vegetarian main dish or a good side dish. You could easily add garlic, cooking it with the onions, add some mushrooms, adding with the tomatoes, and I think some chilli, fresh, powdered or flaked, would also add a bit of spice to this very versatile dish! -- posted by Karen Elizabeth

Green Smoothie

This smoothie is often called a "Shrek Shake" at our house because it can have some odd colors to it. Nonetheless, everyone from the grown-ups to the baby loves it! It can be made with any kind of berry, and another kind of milk could be substituted as well, but we have a dairy allergy at our house. I have substituted kale for the spinach as well, but kale's strong flavor is a bit harder to mask and it may need a bit of sweetener if you go that route. -- posted by Chef #976904

Lighter Parmesan Spinach-Stuffed Potatoes With Vegan Variation

Entered for safe-keeping. From Evelyn Tribole's "More Healthier Homestyle Cooking." Calories, fat and cholesterol were reduced by eliminating the oil for cooking the spinach, using fat-free cottage cheese in place of full-fat cottage cheese, and eliminating the butter. Note (my addition), vegans can create a substitute for cream cheese by straining soy yogurt to make a soy cream cheese (pour freshly made soy yogurt into two layers of cheesecloth fitted into a strainer. Next, tie up the ends to form a bag and hang the bag over your sink or over a pot for a few hours. When it has stopped dripping and is spreadable) or by mashing a block of tofu with a fork and mixing in a few teaspoons of lemon juice. When time is tight, potatoes may be cooked in the microwave according to manufacturer's directions. -- posted by KateL

Spinach Chicken Noodle Soup

Friends and family who would formerly never eat spinach absolutely love this quick and easy soup. Instant chicken noodle soup mix, frozen spinach, and a simplified white sauce are a dynamite combination. It can easily be made more rich by adding cream or extra eggs, thicker with additional flour, or lightened up with skim milk and omitting the egg. It's also been made with only one packet of soup and a little less flour, and you can be REALLY fancy and make a proper white sauce with butter, milk and flour if you have a lot of time. The proportions/recipe are very forgiving. The recipe originally came from a friend of my mother's in the 1980s, and we called it "Swamp Soup" when we accidentally used a package of frozen whole leaf spinach instead of the chopped variety! -- posted by MerBot

Warm Mushroom & Wilted Spinach Salad

Growing up we used to have a salad like this all the time, and it was about the only way I would eat spinach. Still love this combination. I think this particular recipe originated from the side of a bag of mushrooms. I have tweaked it over the years because I don't like to cook the spinach, I prefer to just toss the hot hot dressing over the spinach, which just wilts it enough without cooking it. I'm always throwing bread loaf ends into the freezer, this is a good recipe to use some of them in. Toss the final salad with cheese if you like. Beware, your house will smell like vinegar!! -- posted by magpie diner

Spinach With Raisins and Pine Nuts (Espinacs a La Catalana)

An addictive melange of spinach, garlic, raisins, pine nuts and good olive oil, this is one of the best Catalan dishes. Its uses in the Catalan kitchen are many - in croquettes or egg tortillas, as a topping for cocas (flat breads), as a filling for savory turnovers or cannelloni, or as a base for baked fish. As a side dish, it goes with just about anything, and nothing beats it in the morning on toast, topped with poached eggs. The recipe is also great made with other wilted greens, such as chard or escarole.
Cooking Light's Citrus Chicken Cutlets

This is a fast, easy, and healthy recipe that makes a very moist and flavourful chicken. If you double the marinade you can pour it over some rice and have a complete (and delicious) dinner. Also, if you have the time, let the chicken marinate for longer- it will be even juicier. The marinade would also work well with a mild fish. Recipe is from Cooking Light Magazine (October 2006). -- posted by blucoat

Garlicky Baby Food Spread

This can be used to boost nutritional value for lots of recipes! Use in chocolate pudding, milk shakes, green icings, casseroles, etc. Green juice is an extremely nutrient dense food. One tablespoon is equivalent to eating 1/4 cup of spinach leaves. It contains iron, calcium, and enzymes for digestion, as well as chlorophyll and carotens for disease fighting power.
