This is a variation of that recipe that contains more traditional paella flavors and is made in such a way that creates a &amp;quot;socarrat&amp;quot;, the crusty layer of browned, caramelized rice at the bottom of the pan which adds a certain je ne sais quois to paella. The wider your pan is, the thinner the layer of rice will be and the more flavorful, chewy socarrat you will be able to create. The chorizo is cooked  so that it crisps in it's own spiced and yummy fat. Then the rice is prepared in the same pot so it absorbs any fat left in the pan, which gives it great flavor. This dish is served in restaurants near Barcelona either as a side dish or as part of tapas. This recipe calls for chili but you could substitute ancho or chipotle powder.

			<description>Alioli or garlic mayonnaise is so tasty &amp;amp; so easy to make at home, I also think it tastes much better than the store bought jars.
I first tried alioli while on holiday in Spain. It must've been during the early 1980's while in the Costa Blanca area.
At the time it was served with a meal, in a small dish (finger bowl size) &amp;amp; seemed to accompany every main meal.
So, I guess as I was the youngest it was down to me to try it, maybe I was the adventurous one in my family........or maybe I had no choice?  anyway, whatever the reason it tasted delicious!
