			<description>This is one of my all time favorite dishes. I've been experimenting for a year now and I think I've finally got it perfect. This recipe is for an 18&amp;quot; pallera cooked on an open flame (a weber grill works perfectly). For a smaller pan and stovetop cooking half the recipe.
Note: Some purists say an 'authentic' paella doesn't mix meat and seafood. I see it as a matter of taste, and most of the paella I've had from various regions throughout Spain has been mixed. 			<description>This Paella--Arroz de almejas a la marinera--comes from Penelope Casas who says that in Valencia, paellas tend to be either meat or seafood -- and not both. This delicious paella owes its intense clam flavor to its use of two kinds of clams. The larger ones are steamed open, then the meat chopped and the broth used as the paella's liquid. The smaller ones are placed in their shells directly on the paella to steam open while the dish cooks. To cleanse clams, place them in a bowl and cover them with heavily salted water (think seawater) and a tablespoon of cornmeal or flour. Leave for a few hours or overnight. This is a variation of that recipe that contains more traditional paella flavors and is made in such a way that creates a &amp;quot;socarrat&amp;quot;, the crusty layer of browned, caramelized rice at the bottom of the pan which adds a certain je ne sais quois to paella. The wider your pan is, the thinner the layer of rice will be and the more flavorful, chewy socarrat you will be able to create. Translated from &amp;quot;Atrevete a cocinar&amp;quot; by Karlos Argui&amp;ntilde;ano. I don't know if this is authentic Cuban cuisine, so don't tell your friends that it is unless you're sure! I've always enjoyed this in the more southern reaches of Spain, and sometimes they include a plain, bun-less hotdog alongside the rice, egg and banana. Karlos Argui&amp;ntilde;ano doesn't use scales or measuring cups, really. But I'm trying to be a precise as possible for Recipezaar users. When I put 150 g he actually says to use an espresso-cup full, and where I put 100 ml (or 1 deciliter) he says to use half a tumbler glass full. A tbsp is a soup spoon, which is about 15-25 grams depending on if it's level or heaping. A skimmer is very handy for the egg frying and serving. The tomato sauce should be as basic as possible, with just a little garlic flavor. 			<description>This savory spanish rice dish is an easy one-pot meal with just enough spice to warm you up from the inside out!

I was looking for a Spanish dish to take for a theme dinner party and came up with this simplified hybrid of a few recipes I'd researched.

This recipe can easily be adapted to suit your tastes... add oregano to the chicken seasoning if you like that flavor, omit the shrimp, or even add additional shellfish such as clams or mussels if you like.

The dish comes together very quickly after the initial ingredient prep.  Be careful not to add too much liquid, the finished dish is nice if the rice toasts and forms a slight crunch on the bottom.
