Tagliolini With Pecorino Romano and Black Pepper

Don't let the number of ingredients fool you, this dish offers a lot of flavor despite it's simplicity. Be sure to get high quality ingredients; it makes a big difference in a recipe with so few ingredients and it's still ridiculously cheap to make. Even the pepper is important, don't use the powdery stuff that's been sitting around for a year, splurge on some high quality peppercorns; you won't regret it.

The lack of oil is one of the most notable things about this recipe. While some add oil or butter to this dish, you'll find it really isn't necessary. Instead you use the starchy pasta water to create an emulsion sauce with your cheese which will stick to the pasta beautifully. As for the pasta itself, taglioni is a particular cut, but this recipe would work just as well with something thicker like tagliatelle or fettucine.

Although it's an old Roman favorite, I got this recipe from a recipe blog called "Rachel Eats" which I highly recommended. I wanted to post it on here to give it a wider audience. -- posted by OwlMonkey

Cool California Sesame Shiitake Noodles

"California is known for trend-setting cuisine and much of that is based on the culinary influence of its citizens, including a large Asian population. Here’s a simple take on a cold noodle salad. Add baked tofu, chicken or shrimp if you wish, but it’s delish as is!" Recipe from Whole Foods website. NOTE: I just made this delicious recipe. I only used 4 oz of noodles and then added WAY more veggies (cooked broccoli slaw and sliced baby bella mushrooms). I also added 2 T of peanut butter which I highly recommend. Served ours WARM (instead of cool) with some shrimp on top. -- posted by JanuaryBride

Frozen Baby Meal 1 of 6 (Spaghetti)

This is one of six frozen baby meals I used to make for my son. A friend gave me the combination and with minimal preparation you save yourself time and money. All six are really pretty good and I've made them for myself in a pinch. I would either try to use leftover meat from other dishes I'd prepared or intentionally make extra to use for these meals. My son used to have a three-compartment baby tray with lid and I'd put one or two frozen cubes in the first slot, a little baby vegetable in the second slot and a little baby fruit in the last slot and he was set for lunch. I'd have his tray ready the night before or in the morning and by lunch the frozen cube(s) had almost thawed and just needed a little warming in the microwave. The serving sizes are difficult to determine since it is dependent on the age of the child. -- posted by Queen Puff

Chicken Tetrazzini - a Lighter Guilt Free Recipe

This recipe was originally a Taste of Home recipe that originally called for leftover turkey. I've since made additional changes, including steps for cooking the chicken.
Unlike the common Tetrazzini recipes out there this doesn't involve creamed soups nor half and half. In the end..you won't even miss it. This is a terrific comfort food that won't leave you feel guilty in the end. -- posted by Johnsdeere

Summer Shrimp Scampi With Linguini

I adapted this dish from a Tyler Florence recipe one evening while trying to come up with a way to use an abundance of fresh basil and tomatoes from my garden. I had made a batch of fresh pesto with toasted pine nuts the day before. You can make your own or use ready made from the grocers. AND I used large frozen shrimp (lets face it, most grocers more than 25 minutes from the ocean only sell frozen anyway!). The combination of shrimp and tomatoes with a little garlic and basil seemed like a natural for a summer evening dinner. Add a little toasted sour dough garlic bread. My family polished off the whole platter. -- posted by Pegasus from SF

Frozen Baby Meal 3 of 6 (Chicken Soup)

We love Carbonara, but not all the fat that comes with it. Here is my version that is a little lighter.
Spaghetti, Roasted Asparagus, Beans With Lemon and Walnuts

Now, I know I have another lemon pasta dish with asparagus ... This isn't the same. Even though It is close, I consider this more a main dish where the other to me is more of a side dish with the mayonnaise and cheddar cheese as a dressing.

This is a quick dinner with tons of flavor. No onions and sauce is creamy but still light with the lemon flavor. The roasted vegetables and baby arugula just make all the difference. I copied this from a restaurant I ate in Northern FL a few years ago and it was so good.

Note: if you want you can down on the cream a little and add some of the pasta water to thin out the sauce. You could also use a lighter cream if you want. I usually start out with 1/2 cup, and then add a little more. But 1 cup is really which I think works best.

This is a great light vegetarian dinner, but you could always top with some sliced chicken or serve it on the side. -- posted by SarasotaCook

Baked Cheesy Ham and Spaghetti Casserole

This is a favorite dish of mine for leftover ham. I like to use a mix of parmesan and white cheddar or you can use a monterey jack cheese if you prefer that, but it is just creamy and comforting. I love to bake a ham once a month. I cut it up and freeze and that way I always have a quick meal waiting to be put together. So many people only cook ham on holidays, but it is a great resource and inexpensive. Give this a try for a nice way to use your leftovers and good comfort food on a chilly night. -- posted by SarasotaCook

Spaghetti Alla Puttanesca With a Tweak

I found this recipe in an old edition of Guideposts magazine. After reading about "pasta puttanesca" in the first book of "A Series of Unfortunate Events", I had to try making it! I adjust the recipe by adding a small chopped onion, and (due to my husband's preference) far less garlic than it initially called for. I was also out of chili pepper, so I tried a few other seasonings. Due to a wheat allergy, I actually made 1/2 lb rice spaghetti and 1/2 lb regular spaghetti. It was fantastic and is now one of my top five favorite dishes. -- posted by Jainene

Basic Garlic and Oil Sauce for Perfect Pasta (Rachael Ray)

If you like pasta, you're going to LOVE this recipe from Everyday With Rachael Ray's magazine (Oct '09). She has a "secret ingredient" that adds an unexpected zest to the ordinary ingredients: anchovies. She notes in her recipe that " even if you think you don't like anchovies, you should try this recipe--it'll change your mind." Further, she points out that "once you heat anchovies, they stop tasting like fish and start tasting more like salted nuts." So: try it, you'll like it! If you must, don't say anything to the diners--and ask them if they like it, before you reveal the "secret ingredient." -- posted by Debber

The Realtor's Shrimp Scampi W/Spaghetti

This will blow you away. The first time you serve this, you'll be ok because they don't know how great it's going to be. The second time you serve this, you better put it on the table and get out of the way FAST cause they are going to knock you down trying to get to it. It's a recipe that I have developed through years of making it over and over and over. This is the best version I have been able to create. NOTE: This recipe is to be used with 1/2 pound of spaghetti. If you are using 1lb of spaghetti, double the recipe because there won't be enough sauce for a full pound. If you are doubling it, don't double the lemon juice or it'll be too tart, just bump it up to 3 Tbsp. and only bump the lemon pepper up to 3/4 tsp or it will be too salty for some people.
This recipe is from the April 2005 Chatelaine magazine. I made this for dinner tonight and everyone enjoyed it. We thought that the only improvement that could be made is to this recipe would be to add some sliced mushrooms to the chicken component. A variation would be to use asparagus instead of broccoli and shrimp instead of chicken.
