This makes very good vegetarian dish also. I usually eyeball the amount on each ingredients. Easy to increase or decrease depends on your tastes. Make sure you get a firm tofu. 			<description>Unlike most types of vegan cheese this is real cheese. At least it's made just like the same kind of dairy cheese would be made. It is quite low in fat and has a texture like low-fat cream cheese. The taste is also similar though not very tangy so you might like to add some lemon juice to the cheese. Make sure you use real soya yoghurt made from live cultures as it might not otherwise work. If you would like a savoury cheese, it's usually all right to use sweetened yoghurt and add salt afterwards, but don't use a flavoured variety (like vanilla). Of course you can also make sweet versions of the cheese to use in frostings and desserts or just as a sweet spread. Feel free to serve this over quinoa or whatever grain suits you; soba noodles would probably be great too. Personally, I always omit the mushrooms because of an allergy; the veggies are really just suggestions anyway, so adapt and experiment according to your needs. Chopped peanuts are nice added to this, too, for added crunch. 			<description>A little different than some of the other recipes I've read, so I posted.  This came from the Buffalo News and is my favorite way to eat tofu.  It's important to put the noodles in before the spinach or the spinach with soak up all the sauce.  I always add some finely chopped onions to this recipe because I like them, but iIll post the original.  It's high in mono and poly-unsaturated fats (good fats), has a bunch of fiber, is a vegan meal, and most importantly, super good! 			<description>Thanks to Moosewood for their version of jerk tofu, which is what this is based on.  It calls for baking the tofu - I prefer to grill it on the BBQ.  Grilled tofu is so delicious!!  

You do need to press the tofu beforehand....that 30 minutes is reflected in the prep time, you may also wish to do that well in advance and just leave it sitting in the fridge.  I prefer to make this up well in advance and let the pressed tofu sit in marinade as long as possible before cooking.

			<description>Tofu and spinach... most people's reaction when they see those words is &amp;quot;Yuck!&amp;quot;, but try this and see if your reaction is still the same :) This is an incredibly easy and tasty way to pack the benefits of spinach &amp;amp; the protein content of the tofu to picky eaters. Toss it into your pasta dish, replace tomato sauce on pizza with this, etc. My favourite way to eat is is spread on fresh bread. The measurements make it really easy to remember the recipe and you only need to use 1 measuring cup! I recommend you use firm tofu rather than silky because it is more nutritious. Cyndi's Vegan Alfredo Sauce, which I've adapted just slightly by using almonds instead of cashews, is wonderful: really creamy and delicious, and packed with protein. It's great with vegetable 'pasta' and I also like it with Roasted Vegetables and Roasted Cauliflower with Lemon. You can use it whenever you want to add some extra protein to a meal. This will probably taste better and be healthier if it was made from scratch but since I have yet to cook with tofu, this will have to do. I'll make an addendum when I experiment some more.

Serve with Asian Grilled Vegetables (search for the recipe) and steamed rice or udon noodles. I use Sriracha Sauce for the marinade - green top, rooster on the bottle - stuff is the best and HOT!

This is the ultimate French comfort food. (Served with a side salad instead of fries so I don't feel as guilty, haha.) Definitely not vegan friendly because I don't think soy butter and soy cheese could do this right, but you're welcome to try it as such. A great sandwich to have on a rainy day curled up with a good book. IMPORTANT NOTE: Nutritional info is inaccurate because I had to use real ham as an ingredient input or else the recipe wouldn't submit, says that &amp;quot;tofu sandwich slices&amp;quot; (and many other variations I typed) are not recognized in the database. Overall fat and calories are really lower than shown, unless you're a meat lover using real ham. I use Smart Deli brand ham-flavored tofu sandwich slices, they're really thin which is why I use 6 pieces.
