			<description>My husband and I have been trying to figure out a great way to cook tofu and we have never gotten it JUST right... until now! Here was the problem: we had always been cutting the tofu vertically (slicing it from the top), never horizontally (slicing it from the side) too, so it always was too thick, leaving it very squishy. 

Anyway, here is a sandwich base that tastes like it's awful for you.. and yet it isn't! Very little fat, fairly low calorie, very filling, and completely vegan.

			<description>I love tofu...I like how it picks up the flavor of whatever sauce it's coated with.  I especially liked this recipe where the tofu is browned a bit before having the sauce poured on top.  This can be served warm or at room temperature.  It would be a good addition to a bento box (Japanese boxed lunch). I needed to make a dish for a vegetarian, a person who is lactose intolerant, and two toddlers along with other guests who were none of the above.  I messed around with a few recipes and came up with this one that pleased everyone.  I was even asked for the recipe, and one person asked to take home the leftovers.  The recipe is fairly flexible.  You can also add 1 can of corn and/or 1 chopped bell pepper, or a small can of chopped green chilies (drained). 			<description>If you must live dairy-free and still love bagels here is something for you to try.  I found this on a vegan website while looking for mock cream cheese to make smoked salmon spread with.  I tried this and liked it!

If you don't have cashew paste or cashew butter you can put about 1/2 cup of cashews in the food processor until they get like peanut butter...  then measure out 3 1/2 Tbsp. for the recipe. 			<description>I LOVE spinach dip!  Healthy alternative and fun way to eat tofu.  I was going to make this today before posting this, but ran out of time.  I'll give an update once I make it which if I can help it should be very soon!  This is another one of my new recipes from Neva &amp;amp; Jim Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.  Cooking time does not include time needed for dip to chill which is 2-3 hours. Update: I know honey isn't vegan which is why I listed or sugar, but I personally don't mind using honey.  So, if you want this meal to completely vegan for you, don't use honey. Just bake a potato, peel it, grate it, fry it in a pan with some veggie oil and layer it on top of the bread. I have eaten many yummy bowls over the years and Ive tried to dissect the flavors of the sauce and come up with a recipe thats close, and here it is.  This sauce is egg free, dairy free, gluten free and sugar free.  If you have nut allergies I suggest you stay away, sorry.  This sauce is great with rice and beans, pasta, a topping for chili and basting for chicken on the grill. To use on salad I simply added a couple of spoonfuls to chopped romaine lettuce, and then tossed to coat the leaves evenly, much like a thick Caesar salad dressing.  Because it gets so nice and thick, I think this would be a great dip for raw veggies, chips or pitas. Dr Weil's note: Baked, pressed tofu is available refrigerated in health-food stores and Asian grocery stores.

ETA: I made this tonight. Sorry, I didn't time the prep. Lots of chopping of course. I used PAM instead of oil in my well-seasoned cast-iron skillet and didn't miss it. I found the flavoring mixture tasty but it stayed runny. You could either add it earlier in the stir-frying to see if it cooks down or add some cornstarch. 			<description>Unlike most types of vegan cheese this is real cheese. At least it's made just like the same kind of dairy cheese would be made. It is quite low in fat and has a texture like low-fat cream cheese. The taste is also similar though not very tangy so you might like to add some lemon juice to the cheese. Make sure you use real soya yoghurt made from live cultures as it might not otherwise work. If you would like a savoury cheese, it's usually all right to use sweetened yoghurt and add salt afterwards, but don't use a flavoured variety (like vanilla). Of course you can also make sweet versions of the cheese to use in frostings and desserts or just as a sweet spread.
