I "cooked" this up when I wanted a fuss-free dinner and all I had at hand were tomatoes, really soft bread, tofu, and hummus!
Grilled Tofu with Chimichurri

Chimichurri is a potent, hot and garlicky South American sauce that is usually served with grilled meats. Try it here with grilled tofu for a fiesty vegetarian dish that is sure to please. Make extra sauce and store it in the fridge for up to a month in an airtight container. It is great marinade for chicken, pairs nicely with any grilled meat and works well as a topping for baked fish. -- posted by rsarahl

Baked Curry Tofu

Tofu is a wonderful food that picks up flavors very well. In this case, the curry sauce is strong and bakes into the tofu which yields not only great flavor but also a nice chewy texture. Serve with sauteed spinach and basmati rice for a balanced meal. Leftovers can be used as sandwich filling with a little chutney. -- posted by rsarahl

Curried Crab Asparagus Cheesy Tofu Dip

You just can't stop eating this! Think of it as crab-artichoke dip, but with asparagus in place. The asparagus adds texture and color where artichokes get mushy and lost in the dip. I could eat the entire recipe as a meal. It may not make much, but it's worth it! Leftovers can be reheated the same way.
This recipe is from my mother's newspaper clipping recipe collection, so I'm not quite sure when or where it actually came from... I suspect it's from the 70s. I've tweaked it here and there - it originally called for dry soybeans soaked overnight, but I love edamame and they're much more widely available now than they used to be. Prep time includes chilling. -- posted by Julesong

Tlt (Tofu, Lettuce & Tomato Sandwich)

A smoky, mustard-chipotle sauce gives this baked tofu enough character to please even the most avid bacon fan. Make it a meal: add some oven fries and a tall glass of minty iced tea. To make ahead, prepare through step 4. Wrap the baked tofu in plastic wrap and refrigerate for up to 3 days. Note: canned chipotle peppers (smoked jalapeños) add heat and smokiness to dishes: the adobo sauce alone adds a spicy zest without extra heat. Look for small cans in the Mexican food section in large supermarkets. Once opened they will keep for up to 2 weeks in refrigerator or 6 months in the freezer. (I always freeze what I don't use in a recipe.) -- posted by Barb Gertz

Update: I tried this today and was really pleased with the results! I used it with recipe #161324 by Tigerduck and I couldn't tell it wasn't real sour cream. Of course you can tell its not the real thing when eating it plain, but it's still nice. Best alternative when mixing it with other ingredients you would use sour cream with though. I'm sure I'll get the same terrific results when I use it in a black bean soup I plan to make tomorrow. -- posted by Enjolinfam

Roasted Tofu, Asparagus and Radishes - Ww

This came from "Simply Delicious - Flexpoints Cookbook" from Weight Watchers. Out of all the recipes in there, this is the one that I want to try the most. At time of posting, I have not tried this. But I plan on doing so soon. I can't find tofu here in town so it will have to wait until I can get into the city to get some. The book says this is 2 points per serving. The numbers as presented here come up as closer to 3 points (2.9) but that is because it isn't counting on reduced fat tofu. Plus it isn't counting the balsamic vinegar. -- posted by Saturn

Tofu "chicken" a La King (Low Fat)

A vegan version of the classic Chicken A La King, this recipe uses tofu as the main ingredient. Delicious as a main meal and is liked by both vegetarians and non-vegetarians alike. I've served this to my very "Meat and Potatoes" type parents and they both love it. My neice, who is normally a very picky eater, will gobble this up as well so it's good for kids too. :)

Serve with a side of veggies or a nice salad and you have a delicious and healthful complete meal.

***note*** Feel free to adjust the amount of mushrooms and peas to your liking. Carrots go nicely in this dish is well, but it's optional so I left it out of the recipe. -- posted by grumblebee

Peanut Butter Fruit Smoothie

I received this recipe on an e-mail listserv. I love smoothies and I hope to try it soon.

This would make a good, energizing breakfast. I wouldn't have it as a beverage with a meal, though. Too many calories. -- posted by Valeria

Amber's Japan-Style Tofu Meal

This is my own version of recipe#171417. I changed it quite a bit and enjoyed so much that I must post it, at least for myself to remember! Just my personal take on things. Sounds long and complicated, but the truth is, suppers don't get much easier (or healthier) than this! -- posted by White Rose Child

Edamame With Garlic and Red Chilies

A great appetizer, this recipe can be heated up by adding more red chili flakes.
A great replacement for chips at a dinner party or while watching the game for those watching their carb intake. -- posted by Cooking on Lake Norman

Asian Tofu Salad

From RealAge:

"The best thing about tofu - besides its nutritional value - is the way it carries other flavors, such as the tanginess of this sesame dressing. Serve this warm salad with crunchy breadsticks and a tall glass of iced jasmine tea." -- posted by Anomalyk

Miso-Glazed Tofu on Stilts (Dengaku)

Dengaku is a popular dish at the tea houses that line the lovely Philosophers Walk in Kyoto. The dish takes its curious name from the Japanese word for “stilt.” The stilts in question are two slender bamboo skewers that are used to hold the piece of tofu over the coals for grilling. The recipe is from Steven Raichlen's TV show, "BBQ U". Tofu needs to be pressed for 1 hour. -- posted by blucoat

How-Do-I-Love-Thee Vegan Cheese

I can't quite think of the proper adjective for this cheeze recipe... it's wonderful mixed into calzones, dolloped on pizzas, baked on enchiladas. Did I mention it also makes terrific vegan cheese fries? Try it!
Real Vegan Yoghurt Cheese

Unlike most types of vegan cheese this is real cheese. At least it's made just like the same kind of dairy cheese would be made. It is quite low in fat and has a texture like low-fat cream cheese. The taste is also similar though not very tangy so you might like to add some lemon juice to the cheese. Make sure you use real soya yoghurt made from live cultures as it might not otherwise work. If you would like a savoury cheese, it's usually all right to use sweetened yoghurt and add salt afterwards, but don't use a flavoured variety (like vanilla). Of course you can also make sweet versions of the cheese to use in frostings and desserts or just as a sweet spread. I've heard that real oat yoghurt is also available and I'm sure this recipe would work with that as well. -- posted by Goldcrest
