			<description>Gai Lan, which is known as Chinese broccoli, can be found at many Asian grocers. But if you can't find it, don't despair, fresh tender broccoli can be substituted in a pinch (it tastes quite similar anyway). This makes a wonderful light soup which can be totally vegetarian if you wish. It does turn out a bit spicy with the full three peppers sliced in (with the seeds)(I used fresh red Thai dragons in the recipe), so adjust the heat to your own taste. I think this also might be nice with chicken substituted for the tofu- if you choose to do that, add about 10-12 ounces of chopped cooked chicken where you would add the tofu. Depends on how much you treasure the continued existence of your taste buds...and don't be scared by the long ingredients list, they're all simple and easy.

Serve this alongside something savory, follow with something cool and sweet, and vary the marinade and number of chilies according to taste.  I used long, skinny 'pyro peppers' in this version. 			<description>This is a recipe I came up with, combining 2 different recipes.  I really like this dish because it's so simple to make and healthy too.  Don't let the list of ingredients turn you off, it is actually rather easy and fast to make. The list of vegetables can be substituted with what you may have already such as tomato, edamame (soybeans), corn, bell peppers, broccoli florets, bok choy, etc. Tip: Using different colored veggies makes this dish very pretty! Try to cut everything in a similar size as well. I consider this to be a family style dish, which means usually it's served alongside other dishes.  So if you are serving more than 2 persons, I would suggest you add more shrimp, then serve this along with saut&amp;eacute;ed greens with garlic (i.e. spinach), and maybe add a soup to round out the meal.  I usually double the ingredients and also double the amount for the broth/soup so we can soak it up with the rice. I love it because it is healthy, low in carbs, sipmle to create and it is authentic.
This recipe sets off the soft,  cool smoothness of the tofu by adding a hot, highly spiced dressing.
Great for lunch by itself or dinner served with rice and steamed greens.
Wine Match:

			<description>Entered for safe-keeping, asking my vegetarian friends to review this for me.  From &amp;quot;This Can't Be Tofu!&amp;quot; by Deborah Madison.  Because hoisin sauce is very sweet, dice the tofu very small and serve it as a sauce over rice, with stir-fried spinach, green beans or broccoli on the side.  For interesting presentation, cut the tofu into triangles, brown them briefly in a little oil, and add them to the sauce. Per Ms. Madison, soft tofu packed in water has the best flavor and texture, both of which are more pronounced if tofu is not browned.  If you enjoy the pure flavor of soft tofu, heat the sauce with the tofu in it until it is just warmed through; if it reduces too much, add more water or stock to thin it out.
