Half-Time Chili II

This rich thick chili is suprisingly healthy using ground turkey (and no one needs to know)!!!! The basis of this recipe came from Bon Apetit 1996/Epicurious. I have made my own changes and used this recipe for 5yrs...potlucks, game nights, blizzards...
Ofcourse you can use ground beef/venison, different types of beans, but do not be afraid of the amount of garlic, it mellows out during the cooking. -- posted by Skrim

Chile Con Papas (Chile With Potatoes)

A New Mexican favorite meatless dish often eaten during Lent when traditional Catholics abstained from meat dishes. Quoted from the Bueno foods website. Another delicious chile - red or green! NOTE recipe calls for Bueno frozen red chile, but Zaar does not recognize this. It is not whole peppers....as might seem implied here. http://www.giftbasketsjust4u.com/pubs-us-bin/giftbasketsjustforyou/GBJstore.cgi?user_action=list&category=Frozen%20Chile -- posted by Mommy Diva

Three Bean Salad

Easy to make, delicious bean salad with a red, white and green theme that keeps well in the fridge. It's also very nutritious. Although it is oil and vinegar based, most of the oil stays behind in the bowl, so it is low fat, high fiber and low carbohydrate. You can make it on the weekend and have it available as a side dish all week. I've been making it so long I can't remember where it came from. It is great for covered dish dinners and is always a popular item because it is very colorful and appealing. -- posted by Chef #637313

Southwestern Tri-Tip Steaks

Loaded with cilantro and lime, this tri-tip steak is marinated in beer, wine and spices. The recipe as it stands produces a pretty mild result. Choose a dark beer for a richer flavor and, to increase the heat level, add more red pepper flakes or toss in a chopped up jalapeno pepper. (The seeds and membranes hold the most heat in a pepper, so you can further adjust heat levels that way.) -- posted by Sandi (From CA)

The Towering Inferno! Chilli, Coconut and Coriander Pork Burger

This is one of my own burger recipes; I made this up one evening when we both fancied a burger, but we also wanted one with a bit of a kick, plus I needed to use up some pork sausage meat! It is such an easy recipe and yet it delivers on taste - PLEASE adjust the heat to your own requirements; it is also a very BIG burger, hence the name! Serve this burger in a standard burger bun, maybe in a ciabatta roll, or with flat breads. A side salad and baked jacket potato would also fit the bill if you are very hungry. I am very proud to say that one of my photos of this burger came first in the Bring on the Burgers Photo Competition. The photo was called Blinded by the Light, and is the photo taken indoors with the strong back light. I won a Recipezaar apron, which I now wear all the time whilst I grill and barbeque! NB: You MUST use high quality, high meat content sausage meat or sausages for these burgers; the cheaper high fat content ones, will JUST not work at all! -- posted by French Tart

Spicy Mocha Cream

Awesome BBQ Pulled Pork, No Smoker or Barbecue Needed

Ok, so here it goes! I’m going to attempt to post this recipe, even though it calls for so many premixed ingredients, that I don’t know if it’ll actually POST here at zaar. This is by far, the best BBQ Pulled Pork you can make without any thing more fancy than a crock pot. If you allow to cook in the crock pot undisturbed for the entire time, you will get something close to the ‘bark’ that is created when you use a smoker/barbecue. -- posted by CHRISSYG

Chunky Chili

This is an amazing chili recipe passed down from my family. I would suggest mixing up different chili powders and adding them at different times to the crock pot. Also experiment with making your own chili powder - Recipe #97816 - that's what I always use. I also use good lean quality steak instead of regular stew meat, but please feel free to customize however you want! This makes a HUGE batch, I normally cut it in half and still have plenty. -- posted by pik5el

Make ahead freezer rolled cookies, This is an old family recipe of my Grandmother's. It has beenTHE Holiday cookie all of my life. It's the only one my (now grown) kids ask for each year in their Christmas package. They went to Iraq one year. They keep well, travel well but that's not the very best thing about these cookies.
Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

When I think of Mexico I tend to think of a bit of heat and fresh tomatoes and avocado. So, I threw them together to make one yummy burger. So, it may not be real tex mex but it comes out of the ideas of Texas and Mexico that float around in my,admittedly odd, brain. -- posted by Sarah_Jayne

Nachos cooked on tostados with beans, chili and cheese. Great for the game with cold beer. This is really good with leftover fajita meat, shredded chicken, cripy bacon, bbq brisket, pulled pork or taco meat. Another twist is subsitute chopped chipotles in adobo sauce instead of sliced jalepenos. You can always cut the tostados after pulling from oven and let guest apply thier own toppings. -- posted by sctdvdltl

Chocolate Chipotle Cookies

I found this recipe on a baking blog that I frequently read. These cookies have a Southwest flair that satify a chocolate craving with a little spicy kick!
Award Winning BBQ Pork Ribs

I have won many BBQ competitions with this recipe. They are outstanding in a smoker but, can also be done in the oven or on a grill. If you cook them in the oven use baby backs and reduce the cook time. Serve with potato salad and Cole Slaw. It takes years of practice to be able to cook great ribs, this recipe will help you out tremedously. I use Head Country BBQ Sauce if i am not making my own (Recipe #322637) but any good bbq sauce should work. You can purchase Head Country online at http://www.headcountry.com.
Slow Smoked Pork Ribs

temperature about 200 degrees, smoke and patience. A full rack of ribs can be smoked in about 4 hours but do take the time and go the distance. The longer you smoke the more flavor you will get.

I'm using a mustard rub to form a nice crust. Remember that you need to hit an internal temperature of 165 F before they can be served. Have a meat thermometer ready. -- posted by ~Rita~

Chicken-Chile Cheesecake

This tasty gem is supposed to be from the Feb.1992 Southern Living. I found it written on a scrap of paper in a recipe box that I bought at an estate sale so I can't be sure of it's accurate to the original. It can be used as an appetizer (serve with tortilla chips or crackers) or the main course. Use this recipe to get rid of leftover chicken (or turkey at Thanksgiving!). It makes 8-10 servings as a main course but at least double that as an appetizer. I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. I like spicy food but Malcolm does not, so I topped mine with loads of chopped jalapeno peppers and a sprinkling of chipotle chilli powder!! NB: I used Spanish chorizo sausage, which is cured; if you are using fresh chorizo sausage, it needs to be browned beforehand.(I made this original recipe with leftovers from KissKiss's Recipe #368069. However, ANY cooked chicken will do for this!) -- posted by French Tart

Spicy Shrimp Wraps

You don't have to heat up the kitchen to make this crowd pleaser. It is perfect to make, grab and go for a charming waterside gathering. We made this on the beach and placed the shrimp over bright green banana leaves and it looked so tropical! :) I could feel the the breeze from the Gulf - oh how beautiful! -- posted by Manami
