Steak & Shake Chili

Steak and Shake was a franchise started in the Midwest. My father would take me there on special occasions. I loved their chili! This is a chili which would be ideal for children. It is very mild with a slight sweetness. I found this recipe on the internet @ I dunno4recipes. The recipe origionally called for 2 (15 ounce) cans of kidney beans drained, but I prefer the taste of chili beans better -- posted by James Craig

Grilled Shrimp With Polenta

Polenta, an Italian specialty now found on menus from coast to coast, is either served soft or cooled, then sliced and fried or baked. Chef Randy Windham's recipe for soft polenta topped with pesto-marinated grilled shrimp is comfort food elevated to a new level of flavor. For a hearty lunch or simple dinner menu, double the portions and accompany with a green salad, Italian country bread and a dish of oil-cured black olives.
Tequila Adobo BBQ Shrimp

This shrimp is a treat. I first had this at a restaurant down in Mexico. The taste always stayed in the back of my mind. Someone else had also eaten this dish at Pappadeaux's and I promised to help find the recipe. I found something similar, but couldn't quite get the sauce right. I must have been thinking about it pretty hard, because I had a dream about how to come up with the sauce. It was a simple solution too! Maybe I should have named this "Shrimp with Dream Sauce." -- posted by Dawn

Pink Adobe Apple Pie

This is a replica of a famous dessert served at a restaurant in Santa Fe. The recipe appears long, but includes directions for a 9 inch double crust pie and an optional sauce. You can save time by buying premade crust and skipping the sauce. The pie is a delicious blend of apples, spices, nuts and raisins. It's a local favorite in West Texas and New Mexico. -- posted by Dawn

When I was in college, I worked at Pappasito's as a waitress. I LOVED their brochette shrimp and I asked the cook for the recipe. He didn't give me the exact measurements, but he did give me the list of ingredients. I went home and played around with the quantities of the ingredeints and came up with what I think is very close to the real thing! -- posted by Kim D.

I found this recipe at the Kelloggs website, but since it is not posted here, I thought that it would be nice to have it here as well! (I made sure that I included the registered trademark symbol. :) To change it a little, you can omit the peanut butter, and they will be like rice krispy bar, except not! -- posted by Bec

Wonderful change from the usual red Spanish rice usually served with Tex Mex or Mexican foods. Similar to the rice served in one of my fave Mexican Restaurants in Houston, Guadalajara.
Candlelight Inn Guacamole (A Work in Progress)

This is my holy grail of recipes. I have tried for 12 years to sneak this out of this hole in the wall restaurant a stones throw from Cowboy Stadium. I have paid 2 cooks to sneak it out...both of which got fired before the recipe made it to me, and have spent 10's of dollars getting waitresses, hostesses and anyone else affiliated with the place tipsy for information. Well finally one night when I was spending quality time with Bampa at a bar named Studer's I sang his favorite patsy cline song and who should walk up, correction... stumble up, run into the jukebox, and then throw her arms around me but the head waitress. I quickly turned the conversation to the guacamole and she stopped me and said.."Sarah! I know you been lookin' for that thing for a longtime, and I dunno the recipe but I see em' make it everday so I'll tell you the secret! The use avocados, oil, and vinegar....thats all. No magical ingredients like you've gotten into your head. Now where's your momma and your auntie, baby?"
AND IT MAKES SO MUCH SENSE NOW! So here is yesterday's batch, and I'm going to keep trying every Sunday until I get it right. Next week I'm trying Tarragon Vinegar. But Dereck loved this recipe too. -- posted by Grimm's Restaurant Tales

Southwest Chicken Salad

This is a copycat from McDonalds..I went in a hunt for this recipe since I became obsessed with it. My obsession started because I added a chopped avocado to my McDonalds purchased salad and it was heaven. I got this from recipelink.com, the avocado is optional since it's not in MD's salad but sooo recomended. The dressing that the salad comes with is Paul Newman's Natural Southwest dressing, so sub that if you find it at the store if you don't want to make it from scratch. -- posted by Kitty Kat Cook
