Hot Rod Chili

As alot of you know this, some cars have V-8 motors and some people call them " Hot Rods ". I had some V-8 juice that needed to be used up and I wanted chili, so this recipe and the name for it was was born.Like a V-8 motor this chili has a bit of a kick. I can't take the credit for naming this, my SO came up with the title.:) Depending on how thick or thin you like your chili, just adjust the amount of V-8 juice. And then adjust the seasonings according to your tastes.
Southwest Tortilla Casserole

This is a twist on a taco casserole. I love to create in the kitchen. I made this last night, and the family loved it, so I thought I would jot it down while it is still fresh in my mind. This does have a kick to it and I would suggest that if you don't like spicy you can modify to your taste. I hope you enjoy as much as we did. -- posted by singn8

Chicken-Chile Cheesecake

This tasty gem is supposed to be from the Feb.1992 Southern Living. I found it written on a scrap of paper in a recipe box that I bought at an estate sale so I can't be sure of it's accurate to the original. It can be used as an appetizer (serve with tortilla chips or crackers) or the main course. Use this recipe to get rid of leftover chicken (or turkey at Thanksgiving!). It makes 8-10 servings as a main course but at least double that as an appetizer. Great for parties! -- posted by Realtor by day, Chef by night

Deliciously Versatile Bean Burgers / Veggie Burger

This is a delicious and easy way to get more beans into your diet. This is an extremely versatile recipe, and you can easily change the taste by simply changing the seasonings. The recipe below is just a guideline for your own creativity, and I tend to adjust the ingredients based on what I have on hand. This is extremely healthy and the low cost can't be beat. Serve plain, in a tortilla, pita, or bun, topped with the sauce (below) tomato, onion, lettuce, etc. -- posted by C.
Courtney's Texas Margarita Chicken

It was a hot Saturday in July in Texas. My friend, Courtney, had a cook-out beside the pool and grilled this delicious chicken. It was flavorful, aromatic and juicy. Perfect accompaniments would be cilantro-lime rice, black beans (just add tomatoes and garic!) and, of course, a cold brew.

Quick Turkey Chili

This started from a basic 30 minute chili recipe, but built into quite a project. The spices and their amounts should be, of course, tweaked to taste. Choose a beer you like to drink. I've tried Negra Modelo, Pacifico, and Blue Moon. Negra Modelo's been my favorite so far, but each of these beers has been really good. Try to go with a fattier turkey (the 93% vs. 99%), but if your supermarket only has the 99%, substituting 1 1/2 tablespoons of butter for a tablespoon of olive oil has worked for me in the past. -- posted by I'm cookin', good lookin!

Tomato Salsa for Canning

This is a great salsa to can and enjoy in the winter. I played around with several recipes I found, and just adjusted until this one matched my family's taste. We really like the citrus lime flavor over the vinegar that is used in so many recipes. It can technically be water-bath canned, but since that usually requires cooking down for a while prior to processing it gives it too much of a "cooked" flavor. I pressure can mine in order to process it in less time and without extended stove-top cooking (just bringing to a boil then placing in jars) which allows for a fresher taste. -- posted by Chef #627916

Smoky, Spicy Tomatillo Salsa Verde Aka Canned Green Hell!

I wanted to preserve my Recipe #97531 and came up with this. Adding the lemon, lime juice and vinegar for acidity to preserve the salsa. Green tomatoes can be used in place or along with the tomatillos. After opening the canned salsa you can drain some of the liquid so not to watery. Do NOT thicken with flour or cornstarch.
FYI- don't like heat replace the hot chili's with bell pepper that you roasted. -- posted by ~Rita~

Elise's Quesadilla Pie

This recipe comes from Elise of Simplyrecipes: This version of a quesadilla pie is a casserole made in a pie dish with stacked flour tortillas and layers of cheesy filling, baked until browned and crispy. The beauty of quesadilla pie is that it's a great way to use up leftovers and odds and ends. The essentials are the tortillas and the cheese; after that it's up to you as to the variety and type of filling you want. Black beans are good, as are onions, chicken, tomatoes, mushrooms, or summer squash. All can be layered in with the cheese. Add as much chile as you want for heat and flavor. -- posted by FeelinYummy

El Torito Southwestern Caesar Salad

El Torito Restaurant's Caesar salad has been a popular favorite for decades; I obtained the recipe in 1994 when it was published in the Los Angeles Times and have made it many times since.
Green Hell Chili Verde With White Beans and Pork

Another long prep recipe, this hearty and spicy stew is an excellent part of a harvest meal or just perfect for colder days. All of my recipes take a while and produce copious amounts of leftovers, and lend themselves to quick meals later. Green Hell Chili Verde with White Beans and Pork is no exception. Everything from scratch, whenever possible. Adjust the heat by either adding or subtracting fresh jalapeno peppers. Green tomatoes can substitute for tomatillos, or use both if you want. The beans need to be white, but Great Northern beans work really well. Corn flour or wheat flour are important - using cornstarch makes it slimy. Better Than Bouillon makes an excellent Ham Stock concentrate (FYI). -- posted by E. J. Hilden

3-Bean Vegetarian Chili (Goya Beans)

This came off the side of a Goya can of beans (to give credit where it is due) and I'm thinking about subbing the crushed tomatoes with a 28-oz can of pumpkin. Putting it here for safe-keeping. The topping listed came with the recipe but I prefer just to use some cheese to make chili cheese fries or nachos. I also would like to add extra salt and pepper because tomatoes have a natural sweetness, and most vegetarian chilis are too sweet because the tomatoes and beans make up for the lack of beef. -- posted by the80srule

Easy Southwestern Macaroni

What I imagine southwestern macaroni would taste like...a little twist on classic mac n cheese, if you will.
Chili Con Carne

This recipe came from my Pillsbury Cookbook. This has been my favorite way to eat chili since 1995. The recipe listed here includes my modifications. When in season, I have substituted the green chilis with a habenero and another time with a habenero plus 2 tabasco peppers.
Tortilla Soup With Chicken & Veggies

During our first storm of the season, I decided to make Tortilla Soup. I had never made it before. I found a recipe to work from, added and omitted a few things, and came up with this. It was a hit. Most of the things I cook are too spicy for some people, but I think this turned out perfect. My local grocery store offers freshly cut raw chicken and veggies, specifically for fajitas. These are ingredients I always have on hand and can whip this up a head of time or in the morning. Measurements can be altered to taste. If you like spicy, savory add more, if not, add less. The salsa gives this quiche a nice kick and the flavors of cilantro, sausage and potatoes add to the taste and textures. This is a family favorite in my house.
Ranchero Beans

These are great on a cold night for dinner. While this recipe is for being doen on the stove top, I've often done it in the crockpot. I just don't saute everything, but throw it all into the crock, including the already fried bacon. Aso, when I use the crockpot, I'll often substitute out the can of beans for a multi-bean pack that I'll soak overnight (start them out in hot water) before I cook them in the crockpot.
Fabulous Fajitas

This recipe is based on wonderful fajitas served at a small authentic Tex-Mex restaurant near where I used to live. I have used this with both chicken and steak, flank steak or skirt steak, and it works great. I also mix a batch of the dry spices together and use a tablespoon or so when I make fajitas. The red onions, while not traditional, add a nice color to the fajitaas, but sweet yellow onions are more traditional. Note that the preparation time listed includes time to marinate. -- posted by UrbanDesiMommy

Chipotle-Pumpkin Soup

This is a nice twist on traditional pumpkin soup. Chipotle chiles give this soup a pleasant heat and smokiness without making it too spicy. Garnish with toasted pumpkin seeds or a light drizzle of pumpkin seed oil -- posted by swissms
