			<description>A simple, sweet, classic, southern-style coleslaw dressing. Reminds me a bit of KFC coleslaw. I found this recipe in a Southern Living BBQ magazine years ago and have made it ever since. Make sure to make it the night before you serve it for maximum flavor. *This recipe calls for 2 20 oz bags of cabbage and 2 10 oz packages of shredded carrot so it makes a lot. I use 1 16 oz package of slaw mix and only use a little more than half of the dressing. 			<description>You couldn't get any more authentic.  This was taught to me by my Cajun maternal grandmother who was taught by her maternal grandmother.  I've never run across a gumbo recipe with &amp;quot;parsley meatballs&amp;quot;.  These are optional.  I asked my mom about this and she said that this was probably used to &amp;quot;extend&amp;quot; the gumbo because there were usually so many mouths to feed.  It's a great addition and worthy of the effort.  An observation:  never have I eaten Gumbo until recently that has been deboned and this was always at restaurants.  Oh, using a baking hen results in a more velvety texture and I have to honestly say that I've never used a fryer. 			<description>Yellow cake, made with just egg yolks, just like the little old ladies from back home in south Alabama used to make. I haven't had it in so long, and searched and searched for a recipe that looks like it could be it. If handled with care, as all good homemade creations should be, this one really &amp;quot;takes the cake.&amp;quot;

This one I have made a couple of times to get it just right. I found it at joyofbaking.com. I've kept the recipe the same, but just perfected my handling of it after a couple lax mistakes:

This cake DOES NOT do well if frozen after being baked and cooled (I like to ice my cakes while frozen). It dries out and crumbs up WAY too easily after this.

Moreover, DO NOT overmix the batter. Since this is not my recipe, I am posting it as-is to maintain the integrity of it because I do not like to &amp;quot;plagiarize&amp;quot; others' recipes. Even if I could say &amp;quot;I just made it my own.&amp;quot; The recipe says to mix for 2 whole minutes at one point, but please do not. KEEP IN MIND to mix just until moistened and homogeneous. 

You kind of have to baby it. I made this cake in humid, hot Alabama weather, and still got 2 dry, crumbly batches as described above, so please do not overlook.

When I finally got it right, it's the kind of cake that makes you close your eyes after your first bite because you can't believe how amazing it is. I used fresh, quality ingredients every time - even the mistakes - and don't want you to have to waste the ingredients I did. No room for error, unfortunately - but well worth it. And more to be proud of.

Great side for just about anything  (especially grilled foods) with a light flavor - which doesn't end up competing with your other dishes.  Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things.  :)  We tend to like the gorgonzola cheese lately, but feta also works really nicely.  It all depends on what your main dish flavor is and your preference. 			<description>In our early married years my husband always talked about his grandmother's pickled corn but with a child's view point the only thing I could get out of him was that she pickled it on the cob in ten gallon crocks, that he and his brother used to get into before it was ready, and that it was really good. So after doing some searching when we didn't have a computer, I found some general directions in the Foxfire Wood Stove Cookery book and Carla Emery's Old Fashioned Recipe Book. I played around with proportions and found the right combination. If you are from W.Va., Kentucky, Georgia or anywhere along the Alleghany Mountain Range you will probably be familiar with this pickle. The flavor of the brine is similiar to saurkraut but the corn flavor still comes through. Good with mash potatoes.Hope you enjoy it.(yield depends on size of ears and method of canning. 			<description>This Texas-style chili recipe gets its name from the fact that I spent 10+ years creating and tweaking it in an effort to create a &amp;quot;heat-free&amp;quot; chili.  In the last 10 years, however, I've really acquired a taste for the spice, so I've started adding chipotle for heat because I really like the flavor it adds.  If you want a chili that even kids can eat, leave out the chipotle.

			<description>I could live on this!  Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant.  Give it a try, you won't be disappointed I promise.  The secret is the roasted red peppers and the butter.  Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later!  The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave.  Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make. 			<title>Sarasota's Florida Boiled Seafood Pot</title>

			<description>I know everyone has seen a low country boil with sausage, corn, potatoes, onions, etc.  Well this is Florida's answer to a Seafood Low Country Boil ... and their version.  I have been doing this for some twenty years.  Now, I will give you my recipe to serve 12, but just cut it in half or a third and add what you want.  This recipe isn't about exact amounts, but more about the method and order of cooking.  These are what I like to add, but if you don't like or can't afford the lobster, add more snow crab, shrimp, clams or mussels. So don't worry, what ingredients you have, but follow the order that everything is cooked.  My ingredients include:  onions, potatoes, corn on the cob, kielbasa or smoked sausage, artichokes, lemons, lobster tails, clams, mussels, snow crab and shrimp. Don't think you need a lobster tail per person, but I do 1/2 corn cob and 3 small potatoes per per person and 1/2 sausage (more sausage if I know there is not a lot of seafood lovers) and then the seafood. So this is my process for 12. I cook mine for this amount in a turkey cooker with water, beer and Old Bay seasoning, The turkey cooker than has a strainer so it is easy to drain, but a small pot on the stove will work for a small group of 3-4.  Remember ... Rule of thumb 2-3 small red potatoes, 1/2 - 1 sausage link, 1 artichoke heart, 1/2 cob of corn, 1/2 onion, and then seafood per person, so just add what you can. Personally, I could eat 2 lobster tails, my dad 1 lb or more shrimp, and my best friend, all the mussels, so just do a little of everything, and I think they will be all very happy.  Now, it sounds like a lot, but the entire dinner cooked in one pot. Just melt some butter, cocktail sauce on the side and a some grilled or baked bread. Cover your table with newspaper and pour it all in the center and let everyone just help themselves.  Simple paper plates. We eat everything with plastic, except for a crab cracker and small pick to get the crab meat out. Rolls of paper towels on the table and just relax and have fun. You can also add some sour cream for the potatoes, salt and pepper of course and maybe some dijon mustard for the sausage if you wanted, but there is so much flavor I never find that necessary, but add what you like. Don't try to make it fancy ... just enjoy. When done, pack up the leftovers and plates right in the center of the table, wrap up the newspaper and throw away. There are tons of low fat recipe options out there but the always take out the walnut. Side Note: Many people use &amp;quot;Splenda&amp;quot; as a sugar substitute, if you get an icky aftertaste try Stevia, like &amp;quot;Truvia&amp;quot;.  I personally prefer &amp;quot;Sun Crystal&amp;quot;, a mix of natural sugar cane and stevia. After she mixed everything together she warmed the soup in the microwave. Since I didn't want to dirty up alot of dishes, I just decided to heat everything on the stove top. 			<title>Grits and Shrimp</title>

			<description>I'm from ohio and I had never heard of grits and shrimp.
But it sounded so good when a friend mentioned it to me that
I had to investigate. After looking at several recipes, I
decided to try to make my own version of this delicacy. I
let my teenage son (Little Chef Berry) taste it and he
begged me to make more after he devoured the remains. I
