Sweet Onion Pie

A delicious savory pie from The Times-Picayune. Reasonably healthy when coupled with a nice salad or bag of crunchy vegies, this is a good source of economical protein that tastes great. Excellent warm & at room temp. Travels well for picnics & potlucks. I like cutting into 6 slices & wrapping each one in Saran wrap & putting back into pan for knoshing on the boat. Scattering 2 to 3 inch chives tips across the pie before baking is very pretty. -- posted by Buster's friend

So Easy It's Silly Fruit Soda

I got lazy and reduced my fruit soda making down to this. I'm almost embarressed to post it, but thought others would love this quick and easy way to make a cup of cold fruit soda! You can make just as much or little as you want at a time! I keep my freezer stocked with fruit juice concentrates, and 3 or 4 bottles of club soda are always on hand.
Light Tomato-Based Barbecue Sauce

Found this sweet & piquant BBQ sauce recipe in The Times-Picayune. Makes a whole lotta sauce but if it's good it goes fast! Fourth of July is right around the corner & we are already using the gas grill every day to keep the house cool. Gonna have to fire up the charcoal smoker soon! Also, this stuff keeps a long time in the upper back part of the fridge.

Buttermilk Coleslaw Dressing

A simple, sweet, classic, southern-style coleslaw dressing. Reminds me a bit of KFC coleslaw. I found this recipe in a Southern Living BBQ magazine years ago and have made it ever since. Make sure to make it the night before you serve it for maximum flavor. *This recipe calls for 2 20 oz bags of cabbage and 2 10 oz packages of shredded carrot so it makes a lot. I use 1 16 oz package of slaw mix and only use a little more than half of the dressing. Less is more with coleslaw as the cabbage releases water as the dressing soaks into it.* -- posted by jacknalecsmom

Ham Steaks

This is an easy way to get the Glazed Ham Taste without cooking the whole Ham. The longer you let them marinate the more they taste like curred pork chops that are so expensive. This is simple and can be made on the grill or cooked inside in a frying pan.
Grits and Greens

This recipe calls for stone ground grits...I usually get them at the farmers market or at the seafood festival. You can substitute regular grits. Another option to reduce the fat and calorie count is to substitute turkey bacon or turkey ham to sprinkle on top of the dish. This dish is equally at home as a breakfast dish or as a side dish. Cooking time does not include the time to cook the bacon. -- posted by breezermom

Coonass Filet Mignon

According to CajunCulture.com, not only is the origin of the term "coonass" disputed but also its acceptable usage. Some

Cajuns take pride in the word and display license plates saying "Registered Coonass" while others see it as an ethnic slur.

Either way, this is some good mock filet mignon.

Blackened Portobello Mushroom Salad

A SPEEDY cajun themed main-dish salad. Recipe from Cooking Light, May 1998. It is very highly rated on their website. After making this recipe, I have to say I was pleased. I marinated my mushrooms for about 30 minutes and they had great flavor. I used Emeril Essence (left over from another recipe) as the Cajun seasoning. My only suggestion would be to cut the mushrooms very thin so that they aren't rubbery after cooking.
Rob's Basic Baked Rice

My DH found this recipe in a Paul Prudhomme book and has adjusted it to our preferences. Great side for just about anything (especially grilled foods) with a light flavor - which doesn't end up competing with your other dishes. Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things. :) We tend to like the gorgonzola cheese lately, but feta also works really nicely. It all depends on what your main dish flavor is and your preference. Cooking times can vary - we find 70 minutes works perfectly for us. -- posted by Mommy Diva

Chicken Hash

This chicken hash is great for using up leftovers, and tastes great. It can be served in pastry cups (add a little cooking sherry to make it "fancier"), over cornbread waffles, or with fried eggs on top. I've even seen it served over rice.
Black-Eyed Pea & Hambone Soup

This one is a favorite in our house. It is low cost, healthy with the vegies & peas & puts a lowly hambone (preferably with some good gristly bits & meat clinging to it) to great use. Don't fear the grisstly connective tissue - it cooks down & gives wonderful body to the soup/stew. Seriously. Giving the hambone a nice browning in the pot is key to getting a rich flavorful brown soup. Serve with a good crispy cornbread for a wonderful meal. Even better when made a day ahead of time - doubles well. -- posted by Buster's friend

Southern Black-Eyed Peas (Vegetarian)

I can't remember where the original for this recipe came from; the original called for a ham hock. As with most stews, its better to refrigerate overnite before serving, but who wants to do that?

To compensate for the lack of hog jowl I usually add quite a bit more thyme. Usually at least a second teaspoon towards the end of cooking the peas.

Adding a jalapeño when cooking the vegetable can add some kick. -- posted by jdoerck

From the Family Suppers cookbook which I sent to my swap partner FloridaNative. This is super!! I just had to try it. You can also make it a spicy cornbread by subbing out the cinnamon and adding 1/2 tsp crushed red pepper flakes and reducing the sugar to 3 tbls instead of 1/3 cup.
Rosie's Sweet Potato Pies

Found this in the Times-Picayune. It was reposted in response to a request who lost his copy of it from Hurricane Katrina's flooding. Too many treat the sweet potato the same as pumpkin when making pies. It has a different more subtle flavor that benefits from judicious use of only nutmeg to let its own glorious flavor shine through. Only difference between this & our own recipe is we roast rather than boil our sweet potatoes. Posted as printed in The Times-Picayune. NOTE - this can be mixed aheaad of time & stored in the fridge to be poured into prepared crusts when ready to bake (a great thing when the oven is full!). -- posted by Buster's friend

Greek flavor with a Southern twist. I love Southern-style creamed spinach, but I also love the combination of spinach and feta found in Greek cookery.
Lemon Soup--Almost an Aperitif

Now that summer is past, I have found this most refreshing welcoming drink for next year (or even now). It is served in a champagne glass when you arrive at the Levy-East Home (a bed and breakfast in Natchitoshes, Louisiana on the Cane River). Don't let the name fool you...it reminds me of a liquified lemon icebox pie. It can even be used as an opening course.
Sarasota's Florida Boiled Seafood Pot

I know everyone has seen a low country boil with sausage, corn, potatoes, onions, etc. Well this is Florida's answer to a Seafood Low Country Boil ... and their version. I have been doing this for some twenty years. Now, I will give you my recipe to serve 12, but just cut it in half or a third and add what you want. This recipe isn't about exact amounts, but more about the method and order of cooking. These are what I like to add, but if you don't like or can't afford the lobster, add more snow crab, shrimp, clams or mussels. So don't worry, what ingredients you have, but follow the order that everything is cooked. My ingredients include: onions, potatoes, corn on the cob, kielbasa or smoked sausage, artichokes, lemons, lobster tails, clams, mussels, snow crab and shrimp. Don't think you need a lobster tail per person, but I do 1/2 corn cob and 3 small potatoes per per person and 1/2 sausage (more sausage if I know there is not a lot of seafood lovers) and then the seafood. So this is my process for 12. I cook mine for this amount in a turkey cooker with water, beer and Old Bay seasoning, The turkey cooker than has a strainer so it is easy to drain, but a small pot on the stove will work for a small group of 3-4. Remember ... Rule of thumb 2-3 small red potatoes, 1/2 - 1 sausage link, 1 artichoke heart, 1/2 cob of corn, 1/2 onion, and then seafood per person, so just add what you can. Personally, I could eat 2 lobster tails, my dad 1 lb or more shrimp, and my best friend, all the mussels, so just do a little of everything, and I think they will be all very happy. Now, it sounds like a lot, but the entire dinner cooked in one pot. Just melt some butter, cocktail sauce on the side and a some grilled or baked bread. Cover your table with newspaper and pour it all in the center and let everyone just help themselves. Simple paper plates. We eat everything with plastic, except for a crab cracker and small pick to get the crab meat out. Rolls of paper towels on the table and just relax and have fun. You can also add some sour cream for the potatoes, salt and pepper of course and maybe some dijon mustard for the sausage if you wanted, but there is so much flavor I never find that necessary, but add what you like. Don't try to make it fancy ... just enjoy. When done, pack up the leftovers and plates right in the center of the table, wrap up the newspaper and throw away. NO DISHES!! -- posted by SarasotaCook

Oven Dried Tasty Tomatoes

I am on a low carb diet and I had a craving for Margherita Pizza so I decided to come up with my own twist with all the flavor and none of the carbs. -- posted by Misha Bella

Easy Oven Barbequed (Barbecued) Chicken

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine. -- posted by Bone Man

Deep South Crisco Cake

This is a delicious pound cake made without the addition of milk... My mom would ask me, when I was a kid, what kind of cake did I want for my birthday. My answer was always "Crisco Cake!" This is also the only cake requested for Christmas dinner this year!

Do not scrape off the crust that forms on the top of the cake.. it is the best part!!!! -- posted by monagrays

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403
