Stiff Porridge (Oshifima)

While staying with us, our friend Gerson, from Namibia talked about having this at every meal. Needless to say, while he was here in the United States he put on a pound or two. I really miss him!

This recipe is an adaptation of an African staple food, served at every meal to help stretch the meats and vegetables.

In Namibia, this dish could also be prepared with cassava. You can make this with water instead of milk, or you can try substituting equal parts tapioca flour for the corn meal. -- posted by Charlotte J

Velvet Coffee Creamer Tart

This recipe I got from a friend years ago.
The powdered coffee creamer give this tart a delectable flavour and velvet texture.
Quick and easy to make.
This tart must be made the day before as it must be put into the refrigerator for at least 20 hours. -- posted by JeanineD 2

Crocodile or Chicken Skewers With Cashew Nut Satay

Entered for safe-keeping for ZWT. By Simon King and David Myers from The Hairy Bikers (BBC series). They say crocodile tastes like a cross between a firm white fish and chicken. This will serve 2 as a main dish or 4 as appetizer nibbles. -- posted by KateL
