			<title>The Day After the Feast Before Turkey Soup</title>

			<description>I had always been a great follower of Craig Claiborne and Pierre Franey of The New York Times, and learned to cook by following their recipes.  They printed this recipe in 1987, from which I learned to make a rich, delicious stock and heartwarming soup.  I have continued this tradition for 21 years now, and am posting this recipe here so that I am assured of never losing it!  Over the years, though, I have made some personalization to it.  For instance, my habit has been, after dinner, to remove all meat from the turkey frame.  I then immediately put the entire turkey frame in a huge stockpot with enough water to cover, and add the rest of the stock ingredients.  Instead of cooking it for 1 hour, though, I usually let it simmer for anywhere from 3 to 4 hours.  Before I go to bed for the evening, I strain the soup, let it cool, and refrigerate for use the next day.  That Thanksgiving Friday, I skim the fat off the chilled stock, and then prepare the soup as directed. This is my absolutely FAVORITE way to use up some leftover turkey meat.  Don't throw away that turkey carcass!  It's imperative here.  I don't think I would bother making this soup without the turkey carcass step because I feel it adds an incredible amount of flavor. I also like to add a few diced potatoes sometimes. 			<description>I don't like canned soups and my DH is allergic to MSG so in an effort to eat healthier, I came up with this wonderfully flavorful and robust soup that is super easy, filling, and easy to keep on hand. This freezes really well. I don't generally mesure but the great thing about this soup is it can be adjusted to suit your pallete. I kinda just emptied my cupboard and freezer with stuff I had on hand including left over turkey. Feel free to use chicken, tofu, or whatever you have on hand and the beef boulion could easily be substituted with chicken or vegetable if you prefer. I like making it in the Crockpot and letting it stew all day (just don't add the meat until 30 minutes before serving or else I think it get too tough), or on the stovetop is fine too.  Also my family is really into spice so I tend to use at least one habanero pepper but any chili pepper can be used or omitted altogether. The leftovers are wonderful!!
