			<description>Even my bf (who Ive never seen enjoy zucchini, even though he tries it each time I make it) loved this soup.  We both agreed it was too heavy, but the addition of the broth will solve that no problem.  Make sure you taste the soup throughout if you change anything (or even if you dont, to make sure your personal tastes dont dictate any changes) because until the addition of quite a bit of extra garlic and cheese it had a bitter aftertaste.  Ive gotta say, this is one of my original recipes that Im most proud of.  I served it with pasta. 			<description>this recipe was found at the chesse facory in wisconscin.  It is a vegetarian restuarant and although I am not when I visit I love to go.  I tweeked this recipe for my taste at home (chicken stock,, not vegetarion :) ) and they called for dried basil, but I say this recipe really needs the fresh basil.  this is good stuff. Feel free to add more basil if you like. 			<description>This recipe is so simple, and yet is the tastiest butternut soup ever!
I am quite sure that the chilli pepper has a great deal to do with its success, it really is just a hint of a burn, but brings out the rich, nutty flavour of the squash perfectly.
For this recipe to be truly wonderful, a home-made chicken stock is the ideal choice, so the little time it takes to boil up some chicken carcasses and herbs is well worth the trouble, there are loads of simple recipes for chicken and other stocks in almost every cookbook and on most cooking websites.  If you don't want to take the time to make your own stock though, then make one from a stock cube or powder.
I do not honestly know what can be used as a substitute for the butternut squash, if it is not available in your country, because pumpkin does not work well, although it does look similar to a butternut in colour.  
The texture of a butternut is much smoother and finer than pumpkin, and it is a lot sweeter.  Perhaps it is rather more like a sweet potato in both texture and colour than a pumpkin. -- posted by &lt;a href="http://www.recipezaar.com/member/1245459"&gt;ZAR-INA&lt;/a&gt;</description>

			<description>A few things to chop, but well worth the taste.  Fresh flavors, rich, but no cream. Herbs and fresh vegetables give this all it needs. The cheese and potatoes gives it a little creamy texture and then I love to finish it topped with a roasted tomato in bread crumbs.  It just seems to make it perfect.
A nice slice of fresh bread, any kind you have.  Some good bread sticks would be wonderful.
Now I like to make my own, but honestly I don't always have time.  A nice short cut ... Pillsbury bread sticks, but make a mix of melted butter, garlic, dried Italian seasoning and brush after you twist them up.  Then sprinkle on Parmesan cheese.  If you bake these on parchment paper or foil sprayed with Pam ... no clean up. I finally decided I needed to learn to make it because eating out was costing me way too much ;)  I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place.  This is quick and easy and I usually get rave reviews when I make this for a crowd.  I hope you enjoy it! :)

PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. All kinds of beans can be used, black beans do very well as do pinto beans, but regular red or dark red kidney beans are my favorite with this particular soup. You can also substitute pumpkin puree for squash puree! I think the green onion goes perfect with the mix but a small can of green chiles works well too. This is a great soup to have in the fall. The flavors of this soup are amazingit is somewhere between the tangy-spicy herbal flavor of Tom Kha Gai and the best butternut squash or sweet potato soup you have ever had with a little Thai curry mixed in for fun. It is spicy, sweet, tangy and rich all at the same time without being heavy or overly filling.  And it's vegan. How can it be velvety smooth without much in the way of rich coconut milk and absolutely no cream?
It was the addition of the potato that does it. This is a trick she learned when she was cooking for vegan clients as a personal chef. Rich taste, full of beta carotene, filling but not fattening &amp;amp; inexpensive  - gotta love these vegies! Used a Golden Butternut to make this soup last night. It was the first use of our version of Sherry Peppers (habaneros, cinnamon sticks, allspice berries, black peppercorns in dry sherry) - turned out mighty well. I subbed hot pepper  &amp;amp; dry sherry into this recipe as Bermuda Sherry Pepper is hard to come by. The squash cooked down to a beautiful thick orange base that did not need pureeing - the carrot bits were soft too but added a bit of texture which was appealing. Keeps well for reheating in microwave  without separating too. Posting at request of DN who wants the recipe after tasting. Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese!  Delicious!  Even my daughters loved it! A drizzle of maple syrup, chopped candied walnuts, cranberries, and a dollop of creme fraiche finishes this over the top. What a wonderful Holiday soup, but also just a good comfort soup. I make this often with grilled cheese. Smoked gouda, multi grain bread and maple smoked bacon make for an amazing sandwich. I often make a bunch of these walnuts for the garnish and store them in the freezer in a baggie to use throughout the Holiday season. 			<description>I don't like peeling and cutting butternut squash, so I use ready-cut squash when I can.  The prep time assumes you are using pre-cut squash.  (I have also tried frozen butternut squash and felt that the soup didn't come out quite as good, so I don't use it.)  If you want to use a fresh butternut squash, use one that is about 2 1/2 to 3 pounds.  I use almond milk (I like Almond Breeze) instead of cream or half and half.

You can save a little time by roughly chopping the onion and garlic, because it will be pureed later. 			<description>The combination of ginger and butternut squash is delicious and addictive. This recipe yields a creamy soup without the use of any cream. I love to whip this soup up with my immersion blender right in the pot. This soup also freezes well. You can serve it with a dollop of sour cream if you desire, although I serve it without a garnish. If you want to make this a completely dairy free soup, use dairy free margarine (Fleishman's unsalted, or Earth Balance.)
