			<description>I got this recipe from a friend, who served it to me one chilly night. It is very much a &quot;comfort food&quot; for me and quite easy to make with leftover chicken. When you are adding the eggs, be careful to add them very slowly and make sure the soup is not too hot, otherwise your eggs will split. I find it helps to take the soup off the burner for a few minutes before adding the eggs. Hot deep-fried rice balls are added to a simple chicken soup; the recipe (a Chinese soup by way of Honolulu, Hawaii) is originally from The Complete Book of Soups and Stews and was found on the Epicurean Online site. 			<description>My Vietnamese fianc&amp;eacute; absolutely loves Chao Ga. He and I edited a version we got to make it easier for our family. It's a thick rice soup. The rice gets soft and it's very comforting when sick. You can use just long grain white rice if you do not have glutinous rice. It's a great way to use leftover chicken, and sometimes I poach an egg on top after the rice has cooked to have more of a comforting feel.
Sometimes you need to add more chicken stock to keep it soupy, so I check it a couple times while cooking. I've found that you don't have to flip the tortilla strips if you use foil on the bottom of your baking sheet.  Also, the rice is partially cooked so as to not overcook the rice while simmering in the soup. Add more chicken broth if you like it more soupy, or add more rice if you like it thicker. The result depends a lot on how &amp;quot;sticky&amp;quot; your rice is and how much broth it absorbs. If fish sauce is unavailable, just add salt and pepper to your individual serving. 			<description>This recipe is out of a cookbook called eating well, healthy in a hurry. I love how simple this recipe is to make. It is great on a cold night and so healthy! I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce. 			<description>You will need a large stock pot for this soup.  This recipie has morphed from the original (which is so old I don't know where I got it from).  I don't like a lot of fat in my cooking, but if you don't like 24 oz of evaporated skim milk, you can substitute 36 oz. of half and half.  I also reduced the amount of butter from the original recipie from 1/2 cup to 1/4 cup. So if you want it richer, just add more butter or half and half.

The easiest way to get the cooked chicken and the 7 cups of broth is to make your own chicken broth using chicken pieces. I finally decided I needed to learn to make it because eating out was costing me way too much ;)  I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place.  This is quick and easy and I usually get rave reviews when I make this for a crowd.  I hope you enjoy it! :)

PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them.
