Spicy Sweet Potato & Onion Soup

This is my own recipe , it's easy to make tastes fantastic. This is for 1 serving as i make it to take to work for lunch. I've never actually measured the herbs and spices as you should make it to your taste but below is a rough guide. Add more or less depending on what you like.

The water level should be filled in your pan about an inch above the ingredients level. You can add more water once cooking has finished if the soup is too thick. -- posted by Leah567

Creamy Potato and Bacon Soup.

Quite simple, not alot of work involved. Produces a wonderful soup full of flavour! I made this recipe a few weeks ago on a very cold day. As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. I suggested the microwave because making the bacon cripsy is much easier this way. -- posted by Ambien.

Ajiaco Bogotano (Chicken and Potato Soup, Bogota Style)

Ajiaco is a typical dish in Colombia. It has a lot of potatoes since Bogota is in the mountains and potatoes are plentiful. This recipe calls for yucca which can be found in the produce section or frozen (Goya). If you cannot find it, just use Yukon gold potatoes, both will all but disintegrate and thicken the broth. Corn on the cob is cut into 1 inch rounds and thrown into the soup. They are easier to cut if you rotate the corn, eventually the cob will break. Once you remove the cover, you'll get a burst of sweet corn aroma. An avocado half is served either on the side, so you can take a spoonful of avocado and dip it in the soup. -- posted by Ice Cool Kitty

Satisfying Potato & Chorizo Soup

It's a rainy summer's day, soup was a great idea. I love making this because it's pretty quick for homemade and it strikes a good balance for adults and kids. All depending on who your audience is, choose a mild or spicy chorizo. I haven't made this without using the immersion blender to mix it up. I'm sure it would be fine, I would be tempted to cut things quite a bit smaller if that were the case, and maybe not preboil the potatoes. The original recipe called for kale, but to please all palates I have subbed carrots. You could sub a wide variety of complimentary veg such as spinach or another leafy green. Something with a pop of colour. -- posted by magpie diner

Pampered Chef Loaded Baked Potato Chowder

This is a quick and simple recipe for potato chowder. I threw in 2 cups of fresh garden broccoli into the chowder instead of serving it as a topping. The recipe tells you how to make it using Pampered Chef products, but I boiled my potatoes on the stove and heated the cream cheese and milk mixture on the stove after combining. I didn't use the microwave. I thought it needed a little something extra for flavor, and I added regular onions, garlic, and cayenne pepper to the ingredients listed below, but you decide. I also used a handful of green onions instead of 2 or 3. If you're cooking for someone who is picky about ingredients, this is the recipe for you. Recipe is posted as if you have the Pampered Chef kitchen gadgets, but keep in mind they're not required for this recipe. -- posted by AmyZoe

Sarasota's Broccoli, Zucchini and Potato Soup

A few things to chop, but well worth the taste. Fresh flavors, rich, but no cream. Herbs and fresh vegetables give this all it needs. The cheese and potatoes gives it a little creamy texture and then I love to finish it topped with a roasted tomato in bread crumbs. It just seems to make it perfect.
A nice slice of fresh bread, any kind you have. Some good bread sticks would be wonderful.
Now I like to make my own, but honestly I don't always have time. A nice short cut ... Pillsbury bread sticks, but make a mix of melted butter, garlic, dried Italian seasoning and brush after you twist them up. Then sprinkle on Parmesan cheese. If you bake these on parchment paper or foil sprayed with Pam ... no clean up. They are easy quick and simple. -- posted by SarasotaCook

No-Chicken Soup

This is my "trademark" recipe--I make it every single week! It is so rich and flavorful I like it more than "traditional" chicken soup. Although the secret ingredient--sassafras--isn't essential, it deepens the flavor. Powdered sassafras leaves can be found in supermarkets in the spice section. It's also called "fil'e" or "gumbo fil'e." If your market has a "Cajun" or "Creole" section, you might be able to find it there too. It's a classic Cajun seasoning, but it's also good in just about everything. -- posted by Theodwyn

Smoked Gouda Corn Chowder

A friend's son created this for one of our soup luncheons- delish! Try not to boil the soup, as this will cause it to break and have an unwanted texture. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble ½ lb. bacon. Use the bacon grease instead of the butter for the roux. Add the bacon back to the soup with the salt and pepper. (You will use less salt because of the bacon.) -- posted by gnet

This is wonderful for any occasion. I even make this during the summer, when its 95 degrees out! You can purchase the Bay Scallops frozen or fresh..I prefer fresh but either is great! In case you don't know.. Bay Scallops are small and Sea Scallops are the large ones. Both can be used for thi soup but the Sea scallops are more beneficial to the soup. -- posted by Rachel<3

Yummy Potato Soup

This is more of a recipe I came across and tweaked to give it an even better flavor than before. It's similar to loaded baked potato soup, except that I don't care for sour cream or chives so I personally do not add them. However, if you would like to make it that way, I recommend a fourth cup of sour cream added in and about a fourth a cup of chives. You can tweak the amounts of those as well, based on how you liked your baked potatoes, but those amounts should give a good even flavor of everything. Please feel free to experiment with the amounts of seasonings if you'd like, but the ones provided should make it just right. I tried to write this so that even the most novice cook would have no troubles, so if you're more experienced please excuse me for pointing out the obvious at times in the directions :) -- posted by Cypress

Potato and Leek Soup

Growing up in Scotland this soup was a favorite of mine. Over the years I have adapted it to suit my tastes. This is the full fat creamy version I use for Xmas and Thanksgiving a true treat for the holidays! But it is very easy to adapt it by using milk or half& half instead of creme fraiche, which I do at other times of the year. This freezes well, I reheat and add creme fraiche just before serving. There are creme fraiche recipes on this site the one identical to mine is Judi Caston's #34037. The servings are for holiday meals, if only for a dinner it serves about 4-6 -- posted by mrs mack

Potato Cheese Soup

This recipe was given to me by a friend and I just love it. Good comfort food! The first time I made this, I followed the directions exactly and baked my potatoes for about 1 1/2 hours at 500 degrees. I passed the recipe on to my mom, who just boiled her potatoes and she said it turned out perfectly, so by all means, make things easier on yourself. Just thought I'd post orginal directions as they were given to me. I used an immersion blender to make the soup creamy, but still left a few small chunks of potato to add texture. Add liquid as needed. Yummy! This makes a huge amount, so feel free to half the recipe. -- posted by Lydia's Mama

Family Favorite Vegetable Soup

This soup is chock full of veggies! It is wonderful with a loaf of crusty French Bread on a cold winter day. It is a family favorite. If I have kale in my garden I chop about a cup and throw that in. If I don't have fresh zucchini, I add in zucchini that I have dried over the summer. Sometimes I will throw in a handful of lentils. -- posted by Chef Cindy Rose

Roasted Beet and Potato Soup

I recently roasted five pounds of beets and have been using them for side dishes. I decided to make soup last night, and it turned out quite nice. You may get more servings, but we really like our soup and 4 servings is all I got. I am sure that canned beets would also work quite well. I like evaporated milk because it brings richness with fewer calories, but half-and-half would also be good. I don't usually have fresh celery, but 1/2 cup of chopped celery could be used instead of the flakes and 1/4 tsp fresh ground pepper instead of the peppercorns. Add an hour to the cooking time if you need to roast fresh beets. -- posted by duonyte

Sweet Potato Lentil and Lime Soup

Made for cold weather, this hearty warming soup hits all the right spots. The lime, mint and Greek yoghurt are essentials and compliment the earthy flavours of the garlic, cinnamon. ginger lentils and sweet potatoes perfectly. I've adapted this recipe from Sophie Grigson's vegetable book. Pure bliss in a bowl. . . -- posted by robd16
