I was intrigued by the picture in the cookbook; however, mine didn't turn out looking like the picture!  I had way too many noodles and too little broth.  The cookbook, &amp;quot;Soups for Any Body&amp;quot; states that it is a mix between a soup and a stew.  Mine was pretty thick, so I would add more beef stock to the recipe.  I'd also serve more soy sauce with each serving, and allow each diner to add their hot pepper oil.  If you let your meat marinate while you chop the vegetables, it gets on the table pretty quickly! It is a deeply flavorful broth and we enjoyed it ever so much :) and have even put it on the menu at our Cafe Ponce. We serve this with a salad, homemade bread or some sort of biscuits (I know) but the residents' like biscuits and we use different recipes to see which they prefer. We also had to make a few changes with the soup but that is when we are making it for the whole home, as we have chicken soup twice a day! When we make it for the Cafe - it is the real thing. Adapted from 'Pasta Cooking' by Parragon....  the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way!  You don't want your soup to be over-loaded with any one vegetable.

I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken.  This is a great meal to make when time is short.  Lastly, I do not care for red peppers.  In most recipes, I won't include them. 			<description>A couple of notes about this recipe. 
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast. 
Secondly, I usually soak my lentils beforehand because it makes them cook quicker. 
Third, I put &amp;quot;2 oz&amp;quot; of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
