Condensed Cream of Chicken or Mushroom Soup (Gluten Free)

This recipe is to be used for substituting when a recipe calls for condensed cream of chicken soup. Make a large batch of the powdered mix and store in your pantry so you have it on hand when needed. The powedered mix below will make 4.5 cans of condensed soup or 9 cans of regular soup. To make regular soup, simply cut the amount of powedered mix in half when cooking. This recipe is based on Bette Hagman's Cream Soup Base. -- posted by Emily Elizabeth

'creamy' Mushroom-Barley Soup

This hearty soup uses only a few simple ingredients and tastes much richer than it actually is. Make this vegetarian by swapping the beef broth out for your favorite vegetable broth, and change up the kinds of mushrooms you use to find your favorite combo. Reconstituted dry mushrooms can be used for a portion of the fresh, as well. -- posted by Elle_mnop

Russian Wild Mushroom Soup With Farro

Farro is an ancient type of wheat that was one of the first grain crops to be domesticated, thousands of years ago. Nutritious and with a low GI, it is available in health food stores and in some supermarkets, but if you can’t find it, pearl barley or spelt can be substituted. -- posted by English_Rose

Porcini Mushroom Soup

This is an easy and delicious soup. The porcini mushrooms add richness and depth of flavour not often found in vegetarian soups. For a lighter broth, skip the purreeing step. The soup is based on a recipe from "Gourmet Magazine" (Dec. 2008).
Soup, without dill and parsley, can be made 3 days ahead and chilled. Add herbs after reheating. -- posted by blucoat

Chicken Hot Pot With Mushrooms and Tofu

Cooks in Asia serve hot pots communally, setting a big pot of bubbling broth on the table alongside a platter of raw ingredients (like vegetables and thinly sliced chicken) for dipping. It’s a fun way for guests to feel like they have a hand in making their own meal. In his version, Ethan Stowell gives each person at the table an individual bowl of sliced mushrooms, tofu and scallions, then adds piping hot chicken broth loaded with chunks of tender cooked chicken. Serve with a light-bodied, unoaked Chardonay: 2006 Ruffino Libaio . Appeared in October 2008 edition of F&W Magazine.

This is a very nice creamy soup rich with an earthy and somewhat nutty flavor. I quickly threw it together without thought and the results were stunning! Porcini Mushrooms are the king of all mushrooms. Italian chefs affectionately refer to the Porcini (the piglet) as a ruling class of the delicious fungi. The meaty texture and concentrated flavor will wow your taste buds and have you going back for more! Enjoy!

Caramelized Leek and Mushroom Soup With Crisp Cheese Croutons

A light soup rich in flavour and topped with crunchy, cheesy croutons is a lovely start to a festive meal. If you would like a deeper mushroom flavour, use cremini or other exotic mushrooms. The flavours benefit from being made ahead, so make the soup a day or two ahead and reheat before serving, which also makes for easy entertaining. Be sure to make the croutons just before you serve the soup, for the crispiest texture. The aroma as they toast in the oven will tantalize everyone's taste buds. A hard cheese that can be very finely grated is best for the croutons. Try Parmesan, Romano, Manchego, Asiago or very well aged Gouda or cheddar (at least 5 years old). Use the finest grater you have to shred the cheese. From LCBO magazine. -- posted by Hag chef

Huitlacoche [wee-tlah-KOH-cheh] AKA Mexican Corn Truffle is a fungus which grows naturally on ears of corn. The fungus is harvested and treated as a delicacy. In Mexican homes, cooks traditionally use white mushrooms for this soup, but it is also delicious with other varieties or a combination of mushrooms.

This is a recipe that continues to evolve. After making again tonight, I decided to write it down. Browning the beef and adding wine really adds to the richness. I prefer to boil the noodles separately so that everyone can add as many noodles as they like to their soup. This way the noodles don't soak up all the broth while simmering.
Roasted Onion & Mushroom Soup

This recipe is one I created by combining my Roasted French Onion Soup and elements of a mushroom soup found on 'Zaar; the mushrooms are made rich and succulent by roasting them with garlic while the onions are roasting. I make it using a combination of button, cremini, portabella, and shitake mushrooms - I love how the portabella mushrooms add depth and enhance the mushroom flavour. It can be served as is, or done up like french onion soup, with toasted crusty bread and melted old cheddar on top. If you're not a vegetarian, you could use beef broth instead of the dark vegetable stock. -- posted by Katzen

Korean Chicken Soup

Food & Wine Magazine, December 2008 edition - Perfecting Chicken Soup, recipe by Grace Parisi. It is a deeply flavorful broth and we enjoyed it ever so much :) and have even put it on the menu at our Cafe Ponce. We serve this with a salad, homemade bread or some sort of biscuits (I know) but the residents' like biscuits and we use different recipes to see which they prefer. We also had to make a few changes with the soup but that is when we are making it for the whole home, as we have chicken soup twice a day! When we make it for the Cafe - it is the real thing. It also works on colds like Jewish Penicillin ;) -- posted by Manami

Forest Mushroom Bisque

Canlis, Seattle, Washington. Bisques are creamy, rich soups based on a flavorful puree. The foundation of this one is a generous amount of fall's wild mushrooms, one of the more prized culinary treats each year in the Northwest. At Canlis, the chefs often use chanterelles, hedgehog mushrooms, or morels when they're in season, though the bisque is also delicious made with cultivated varieties such as shiitake mushrooms. The flavor and texture of the bisque will vary with the type (or types) you choose to use. It's made extra-rich with heavy cream at the restaurant, but you could lighten the bisque a touch by using half-and-half instead.

Delicious Veggie & Herb Ravioli Soup

I received this wonderful recipe from my sister. I love that the only preparation needed is to chop up some garlic and herbs. I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken. This is a great meal to make when time is short. Lastly, I do not care for red peppers. In most recipes, I won't include them. Thankfully I tried this with the red peppers included, and I can't imagine this soup without them. -- posted by Leilani

This recipe came into being one night when trying to use up the last of my somen. Easy and quick to fix, very little clean up time too! For those that don't like tofu, use a firm tofu that has been frozen at least 24hrs and then thawed (this will give the tofu a more "chewy/meaty" texture).
Tom Yum Soup With Vegetables

Thai Tom Yum soup is a delicious and aromatic Thai soup. I crave this soup ALL of the time. I have brought this to parties and people always rave about it. Now friends always ask me to make it whenever we're getting together. I made it completely from scratch for years. A few years ago, I started using the paste and prefer it. I find it to be more flavorful.
Tom Yum is distinctly known for it's hot and sour flavor. My version maintains the distinct hotness and sourness of the traditional soup but it also is slightly sweet and spicy. I make a side of jasmine rice and serve it with the soup.
I noted the ingredients and amounts I use however, I encourage additions, deletions and alterations. I don't care for the mushrooms and I love broccoli which may come as a surprise to some. Broccoli is not a traditional component of this recipe but it's healthy and I find that it goes nicely with the broth. Play and have fun! -- posted by Proserpine79

Laurel's Potato Soup

Rich, creamy and addictive low-fat, low-sodium potato soup. I was trying to recreate the soup from the deli without its punishing 28 grams of fat and way too much sodium. This soup is named after my daughter, who requested it :-) -- posted by summerbabies
