			<description>This was the product of a craving for Mexican food, a cold day and the contents of my cupboard, the result is a thick soup or a thinner veggie chili. It's quite versatile it makes enough for a few meals.  The day after I made this I discovered the leftovers make a delicious queso mixed with cheddar cheese soup, paprika and hot sauce to taste.  I am guessing at the amount of water since I just threw some in, add whatever you think will yield the right consistency.
*If you've never worked with jalapenos before broil them for a few minutes before trying to peel them and the skin will come off much easier. Ortiz, found this recipe among her collection of 70 fiery &amp;amp; flavourful recipes from south of the border &amp;amp; learned some new lessons on authentic Mexican cuisine. Her intro to the *Soups* section says Soups are a must for the midday main meal (comida). There are 2 types: aguada (liquid) &amp;amp; seca (dry). The 1st term is self-explanatory, but what is a dry soup? It describes a separate course (traditionally a tortilla or rice dish) served after the more conventional soup &amp;amp; before the main course. I never knew that &amp;amp; this dry soup sounds so good to me. 			<description>This is my mom's recipe. It has a spicy, hearty flavor, yet it is not heavy. It's also full of vegetables, which can be varied by adding carrots or potatoes, but the corn is essential. If available, try using Mexican zucchini, which is pale green and smaller than regualr zucchini. Also, the pasilla chilies cannot be substituted, as the flavor would change entirely. It is always served with lime wedges, chopped onion and a side of arroz blanco (such as Recipe #130916) and it is your choice to add it into the bowl of soup or not. I finally decided I needed to learn to make it because eating out was costing me way too much ;)  I looked through several recipes for the soup, combined some, and then tweaked until I came up with a recipe that was close to that of my favorite Mexican place.  This is quick and easy and I usually get rave reviews when I make this for a crowd.  I hope you enjoy it! :)

PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. I had gone to the store to get ingredients to make a boring yet delicious butternut squash soup, but decided that I didn't want to make it.  As I sat in my car in the parking lot of our local grocery store, I had remembered weeks earlier about my wife saying something about a tortilla soup that she had tried a while ago.  I myself have tried the soup, but having already left the house, I had no way of looking up another recipe.  After a few more minutes of thinking, I went into the store, bought a bunch of ingredients, came home and started cooking.  What follows is the result. 			<description>This delicious recipe uses all of the shrimp.  Be sure to buy un-peeled shrimp.  You start by making a sofrito and end with a broth that is incredible in its depth of flavor.  Let your food processor do the mincing.  Where you see shrimp soup listed in the ingredients know that I use cubes of  Knorr Sopa de Camaron that are about a Tbsp.  For some reason the Recipe Tsar won't let me use the term.  Feel free to add more of the Sriracha if you like.  I do.

			<description>Yes layered soup, well that was their name ... &amp;quot;Creamy Corn, Chorizo and Bean Tortilla Chowder.&amp;quot;  It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. 			<description>This is a version of Emeril's quick tortilla soup.  Easy tortilla soup with chicken broth base!!! Very yummy! 

I can't find fresh poblano chiles so have been using one Penzey's dried ancho pepper, seeded and chopped.  Also have been using 4 tablespoons dried onion and 1-2 teaspoons garlic powder if fresh not available.   

If you have fresh cilantro, use 1/4 cup chopped in place of dried.

You can control the heat of this recipe by the type of salsa you add- I usually use mild. Whatever heat you choose, it should be fresh salsa so the cilantro and other flavours are strong enough. If you really like it hot, add some chillies!
