Kevs Chili

My husbands chili recipe, created after several tries and various iterations of other recipes, we found this one to have a nice flavor and just the right amount of heat. We recommend using the Paul P. chili powders but of course you can use your own combinations of what you have on hand. A blend of various chili flavors in not overwhelming amounts seems to be the key to a spicy yet palatable chili. -- posted by Heather in Utsunomiya,Japan

Rich and hearty, but with lots of veggies that have been slow-cooked so that they seem to melt into the other ingredients. Don't scoff at the Tomato Soup in the recipe - it adds wonderful body and a bit of sweetness to balance the spice. If you like it hotter, kick it up with additional hot sauce.
Flexible, Quick White Chicken Chili

I LOVE white chicken chili and found a recipe on the back of a Bush's Best Great Northern Bean can that; after trying several different recipes on here, I found is the best base recipe. It can be made as is but I always add garlic and additional seasonings to suit our tastes and what I have on hand. I'm posting here so I don't have to keep searching the back of bean cans or have a random label floating around :) This could also be made as is or without chicken, hence the flexibility! -- posted by Kate Plate

Chicken and Bean Chili

Who says you have to cook all day in a crockpot. I use mine to simmer dishes such as this one so I don't have to watch the stove.
If you like the flavors of green chili chicken enchiladas you'll love this recipe. I use shredded Rotiserre chicken, Northern Beans and green chiles with a few of my favorite spices to make this hearty chicken chili. What's better than smelling sauteed garlic and onion to start, infusing with red pepper and cumin adding all into a crockpot only to simmer while you do other things. In no time you have a family-pleasing main course. Adjust the heat to your tastes! Add a kick with preprared Salsa for a more intense flavor. If you like soups/chilis or stews thicker, add the cornstarch slurry. Serve with cornbread, tortillas or crusty french bread. ;) V's family favorite! I serve this Chili over leftover spanish rice that I freeze just for this dish. Mmm -- posted by Vseward (Chef~V)

My Favorite Turkey Chili

I've been making this for YEARS!!! I've got this written on an OLD recipe card... it's yellowed and stained.... I've used it ALOT!!! and made it many many times... unfortunately.. since my cooking style is using a recipe as a GUIDE.. (I'm alot like Rachael Ray, I don't really "measure" I just pour, and say... that LOOKS like the right amount.. LOL it comes out tasting a BIT different each time.. but ALWAYS AMAZING!! everyone LOVES it!! Because I've had it since I was a teenager, I honestly can't tell you where I got this recipe from... I just know it's always been a favorite. All of that being said... please know, I have rarely used the exact measurements.. and I've always played around with the ingredients... adding things, not putting some things in sometimes... this is a great STARTER recipe.. and play with it as you like.. WONDERFUL for leftover turkey.. as it's not the SAME OLD "Leftover Turkey Sandwiches" (not that I don't like those...)
Mama's Simple and Easy Chili

This is a good and simple chili. Since I am seasoning challenged sometimes, I use McCormick packs with this, but it still turns out fantastic. I have to double the recipe in order for there to be leftovers the next day. Its also pretty cheap to make which helps with ever shrinking budgets. It does have a little bit of a kick to it, but its not real overwhelming, my 4 year old daughter ate it with no problem. I serve it with cornbread...yummy!

Serving size is a guess. One pot will feed 6 of us, 2 of the 6 being teenage boys. -- posted by HisHelpmeet

Pork Green Chile Stew

from www.laurasbestrecipes.com

My husband and I love our Harleys and like nothing more than stopping during our ride to try Green Chili in Colorado and New Mexico. I've made green chile many times, and I believe this to be the best method. It's my own recipe as I've removed unneeded seasonings or non-fresh ingredients... If you use chiles roasted from New Mexico and good quality pork shoulder, you don't need dried seasonings. I also believe these quantities of ingredients work best. I don't believe the nutritional values calculated by RecipeZaar are correct for this posting... so keep that in mind. Enjoy! -- posted by Chef #895101

Franks N' Fiber

This is a nice hearty warming fun flavorful fiber filled soup. It's adapted from a recipe I found in a Coca Cola cookbook. I'm sure you could play with it even more than I did adding garlic, carrots etc. It can also be made with a ham or beef bone omitting the bouillon cubes. It didn't specify the type of lentils but looking at the cooking time I surmised it was a whole type. I used whole red lentils (Masoor) which turned out perfect! I also added in some cooked crumbled bacon per my husband's request and it was great in it. -- posted by Engrossed

Mom's Chili

One of my favorites. My mom has made this for my birthday for more than 25 years. Its very warm and hearty on a cold day.

* hot chili powder can be used to make it spicier.
* This yields a big pot, extra freezes nicely in a ziplock for another day.

Jim's Award-Winning Chili

I started this recipe a lot of years ago, and have changed and improved it (I hope) a lot of times. My mother recently made a batch with this recipe and entered it in a contest where it won (in Yuma, and I think they KNOW their chili down there!) What makes this great, I believe, is the use of almost all fresh ingredients, keeping canned items to a minimum. Using FRESH vegetables, I believe, is the real key, especially if they are certified organic! Depending on the specific jalapenos, it will be mild to medium spicy. -- posted by Jim N.

I put this recipe together while trying to find something to fix on a Friday during Lent. It is a tomato based chili with imitation crab and shrimp. Has some heat to it, but not too spicy for my taste because I don't like food so overly spicy you can't taste any of the other flavors. It is fairly simple to put together too. You can serve it with rice if you like or just alone with some crusty bread on the side and a salad. -- posted by Leahcooks

Chorizo Green Chili Soup

So I am now in a lively debate with several friends about what, exactly, defines a chili. In any case, it's yummy. *nom nom nom* -- posted by Abi Fae

Shon's Chocolate/Cinnamon Chili

I've really been blessed by this site and the reviews have been very helpful in knowing which recipes are 'hot' and which ones are 'not'. I've never posted a recipe online before but thought I'd dip my toes in the water and see what you think of what I happen to think is a very good and easy chili recipe that I make. It's also an excellent chili for coney dogs as it is a little thicker than some chili. The cumin, the cinnamon and the chocolate make it special indeed in my book! Thanks for considering it, and God bless.... -- posted by SCFShon

Sarasota's Spicy Savory White Bean Chili

Comfort Food. The first time my Dad was going to try this ... he was not very willing. Turkey ... no beef, cinnimon and nutmeg ... what is that? A little heat to make it spicy and you have an amazing chili. He was hooked. I top it with my Pepper Jack cheese and fresh chopped up avocado and tomato and you have an amazing chili. -- posted by SarasotaCook

Melanie's Chicken Chili

Years ago, I started experimenting with a Chicken variety of my mom's old basic chili recipe. I think I've made this Chicken Chili at least 100 times. Every time, I guarantee it is slightly different. The only time I ever wrote down the recipe (of how I made it that day) was for my mother-in-law who won a Chili Cook off with it.

So here goes - I'm attempting to officially put it on paper. Some measurements may be slightly off (especially the spices) but the overall target flavor is the same. -- posted by Melanie B.

Chicken Taco Soup

I found this hearty recipe online several years ago and often make it instead of chili. Made mostly of canned ingredients, this soup lets the slow cooker do the work for you so you can go about your hectic schedule. This recipe is very adaptable to your personal taste. To add more kick simply omit the one can of diced tomatoes and add a second can of diced tomatoes with green chilies. -- posted by Chef #396295

White Chicken Chili

My grandma gave me this recipe. She got it out of Southern Lady magazine. It was kind of spicy when I made it, if you don't like spicy I would substitute the peppers for just a green bell pepper. Also, it calls for chipotle chili powder and I used just plain. Any white bean would be good in this, I substituted one of the cans of beans for a can of hominy and added a can of corn. The directions listed are my quick method of preparing this chili! -- posted by TerriB16

Turkey Chili

This is my mom's chili recipe with a twist. I'm not a big meat-eater so I use ground turkey, but you can certainly use ground beef if you like. I like making it in the Crockpot and letting it stew all day (just don't add the meat until 30 minutes before serving or else I think it get too tough), or on the stovetop is fine too. Also my family is really into spice so I tend to use at least one habanero pepper but any chili pepper can be used or omitted altogether. The leftovers are wonderful!!
