			<description>One of Emeril Lagasse's favorites. This is a soup his mom would always cook. He describes it as a stick-to-your-ribs soup. Enjoy!
*Note: the dried beans need to soak for at least 8 hours. You could do that overnight*   (For a quick soak, bring the beans and water to a boil over high heat and cook for 2 minutes at the boil, then remove from the heat and allow to stand for 1 hour. Drain.)

It is a deeply flavorful broth and we enjoyed it ever so much :) and have even put it on the menu at our Cafe Ponce. We serve this with a salad, homemade bread or some sort of biscuits (I know) but the residents' like biscuits and we use different recipes to see which they prefer. We also had to make a few changes with the soup but that is when we are making it for the whole home, as we have chicken soup twice a day! When we make it for the Cafe - it is the real thing. I was in a hurry, and wanted to use up a leftover cooked chicken breast.  What to do?  I diced it up, added a can of white beans, some spices and Swiss cheese, and five minutes later, lunch was served!  This was so good, the melted Swiss cheese provided a lush, creamy tanginess to the dish. 			<description>Some people think that New Orleans cuisine is Cajun cuisine.  It isn't.  It's Creole cuisine, where most sauces and gravies are prepared with tomato.  To delight in true Cajun cuisine, one must travel west of New Orleans into Acadiana, where, in my opinion, the food is much better!  Just be sure that you like spicy, because most of it is highly seasoned.  My mother taught me how to make Gumbo.  I usually make enough to freeze in portions so that I'll always have some on hand. 			<description>This is a hardy and healthy pot of soup. You can add other vegetables if you like, like peas or chopped green beans. Occassionally, I'll add a cup of cooked rice, pasta or noodles.  A bowl for lunch or dinner will satify anyones hunger or sooth and comfort an ill one. Great way to use up veggies.  It is also low fat content because you will cook the chicken without the skin. There are two prep periods but worth a little extra work. Sometimes I will cut up everything before cooking so it is ready to go. Anyone I have served this soup to not only compliments the flavors but feels that old fashioned grandma touch of healing. 			<description>Ajiaco is a typical dish in Colombia.  It has a lot of potatoes since Bogota is in the mountains and potatoes are plentiful.  This recipe calls for yucca which can be found in the produce section or frozen (Goya).  If you cannot find it, just use Yukon gold potatoes, both will all but disintegrate and thicken the broth.  Corn on the cob is cut into 1 inch rounds and thrown into the soup.  They are easier to cut if you rotate the corn, eventually the cob will break.  Once you remove the cover, you'll get a burst of sweet corn aroma. PS. This soup has a mild heat.  If you like it spicier, add a can of chopped chilies or a diced jalepeno.  I've also substituted the Rotel tomatoes with a really good chunky salsa when I couldn't find them. My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.

As I sat in my car in the parking lot of our local grocery store, I had remembered weeks earlier about my wife saying something about a tortilla soup that she had tried a while ago.  I myself have tried the soup, but having already left the house, I had no way of looking up another recipe.  After a few more minutes of thinking, I went into the store, bought a bunch of ingredients, came home and started cooking.  What follows is the result. I don't particularly like soups myself but this version turns it into almost a stew..i guess a real stoup, steaming mashed potatoes with gravy over them, chicken and veggies and even a pot pie decoration :) I add just a couple of tbs of dark rum or brandy to it, it gives a touch of extra depth.

I found this recipe on chaosinthekitchen.com and have had it open for days i so don't want to lose it, finally posting it  here.  She suggests using separate frozen veggies if you go frozen since they are normally more tender than the mixed but either way. or fresh of course. It was kind of spicy when I made it, if you don't like spicy I would substitute the peppers for just a green bell pepper.  Also, it calls for chipotle chili powder and I used just plain.  Any white bean would be good in this, I substituted one of the cans of beans for a can of hominy and added a can of corn. My favorite ... fresh vegetables, stock and herbs taking hours to make my own roasted stock, slow cooked and fresh made pasta. Well, I love it and for a special night, I actually go through all that work.  But, working full time, that opportunity just doesn't come around that often. So version #2. Now, I normally don't like packaged seasoning, and frozen foods are usually as a last resort, but hey...we all have a life, jobs, family and sometimes... shortcuts just have to be made and this is one. The best part is you can make the chicken ahead, and then put the soup together in 20 minutes.  For a quick soup, this is really good. Now you can always use the seasoning and add add fresh vegetables if you want, but this is my version of a homemade tasting soup in less time than it takes to go get take out. Make some grilled cheese sandwiches or some ham and cheese and you have a great comfort food dinner. And a bonus, you have enough chicken leftover to make chicken salad sandwiches for the next day or chicken for another meal. 			<description>This was in a small cookbook I bought at a Christmas Holiday Sale, probably 10 years back. It was submitted by Ellen Yatze, from Ft. Myers Florida.  Ellen, it is a great soup! It is funny how going through my old recipe boxes, I have all these old hand written recipes, I have yet to type up - ones I simply forgot about. The title says it all. But what I like about this is how quick it cooks up.  Other than chopping your chicken (I used a store bought rotisserie) and basil, and cooking the bacon, the rest is open the can or jar and add to the pot. Simmer for 15 minutes and you have a hearty soup.
