Broccoli Cheese Soup (W/ Cheese Whiz & Bacon Bits)

This recipe is so easy! Five ingredients!
*I haven't perfected it yet but here are a few things I've done so far:
*After adding the half-and-half, I add a little water mixed with skim milk in the empty half-and-half container and pour into the soup and then heat it. Or you can add a pint of water if you wish. This just dilutes the soup so that it isn't soo rich when using just the half-and-half.
*I use almost all of a 16 oz. jar of Cheese Whiz instead of 8 oz.
*Just a hint when grocery shopping, I found that Hormel's bacon bits no longer come in a glass jar but they now come in package form. Also, I wasn't exactly sure how many ounces the package is so I guessed. -- posted by Lynsey Beth

Broccoli Cheese Soup - Ww

I've been experimenting with reduced fat velveeta cheese in soup and came up with this yummy soup. The cheese is not overwhelming, but it does provide a creaminess to the soup. The flavors are very simple, not fancy in any way - but it tastes great and is very low in calories too!
Roasted Squash With Maple Syrup and Sage Cream

Barbara Lynch isn't choosy about which squash to include in this deeply flavored dish, which gets finished with a sage-infused cream sauce - she with whichever varieties look best at the farmers' market - but delicata and
and butternut are among her favorites. From: A Chef's First Thanksgiving found in Food & Wine Magazine, November 2006 edition. It seems to be a lot of work but it is really worth the while! Made it last week and the residents loved it. -- posted by Manami

Buffalo Wing Soup

A family favorite moderately healthy and delicious. I really don't measure you can add more or less of every ingredient to taste. I tend to over do the veggies and lighten the butter if I want healthy, overdo the cheese and use real half and half or sour cream if I want hearty and rich. You can also cook the chicken breasts in water with the veggies and omit the broth or use velveta in place of cheddar if you prefer a milder cheese. -- posted by Bess McDonald

Bacon Potato Soup With 4 Cheeses

It sprung out of my head on a winter's night--a mix of beer cheese and potato soup recipes and turned out delightful. Both my picky eater son and hubby loved it. I think you could throw in some broccoli or spinach and it would be even more heavenly. (I didn't dare because my boy wouldn't eat it if it were green.) The carrot along with the cheese gives it a lovely orange color. -- posted by Annz Recipez

Apple Cheddar Onion Soup, Ala the Orchid

Absolutely gourmet, especially served in a hollowed-out
red Delicious apple, as was done at the Orchid Restaurant in Baltimore, circa 1988. I DON'T usually do the apple thing, though. Just a couple of tips: Don't use frozen apple juice; it's a bit too sweet. Cider is better.

Two Cheese Potato & Cauliflower Soup

I found this recipe before I decided to follow a lower fat diet, so I often reduce the cheese amount and it works just as well. I've also combined it with the Weight Watchers Baked Potato Soup #261058 for a nice lower fat recipe. I use broth when doing the baked potato version. Also adding roasted garlic is quite tasty. Can do the potatoes peeled or unpeeled. The cauliflower can be fresh or frozen. -- posted by Chef Johnsonville

Cauliflower and Parmesan Soup

Soup fit for a king (and his mistress)

Cauliflower is inextricably linked with the Comtesse du Barry, a favourite mistress of King Louis XV of France. Interestingly, cauliflower is known as the “faux-potato” in several low-carbohydrate and low-fat diets. This parmesan-flavoured cauliflower soup is a wonderful dish to have to hand during the busy Christmas season when guests are popping in. If you prefer it with more of a kick, use blue cheese instead of parmesan, or stir in a good pinch of garam masala.

To dress it up for pre-Christmas entertaining, strew the top with a few matchsticks of smoked salmon, or with crisped slices of pancetta and toasted almonds.

Or, if you want to be very Comtesse du Barry about it, slip in a couple of seared sea scallops at the last minute, then serve it with a dollop of crème fraîche and a spoonful of caviar.

ENJOI! -- posted by Ashlin

Cheese Soup

I found this recipe from Idaho Sampler Cookbook, and I like it because it's not just cheese and milk. I left the skin on my potatoes (personal preference). I think I would like this with added broccoli and cauliflower. I'd throw in some jalapeno jack cheese or red pepper for more heat. The recipe is great as it is and very easy, but feel free to substitute with ingredients you have on hand or simply prefer. If you are concerned about cleaning the cheese off the pot, leave it separate and add it to individual bowls. Thank you Cleo Simon from Camas County (Fairfield) for your delightful and simple Cheese Soup! Serving size is estimated because it wasn't listed. -- posted by AmyZoe

Sopa Seca De Tortilla Con Crema (Mexican Dry Soup)

I visited my best friend (Magga) over the Easter holiday & borrowed a few cookbooks from her. I was immediately drawn to *Taste of Mexico* by Elisabeth L. Ortiz, found this recipe among her collection of “70 fiery & flavourful recipes from south of the border” & learned some new lessons on authentic Mexican cuisine. Her intro to the *Soups* section says “Soups are a must for the midday main meal (comida). There are 2 types: aguada (liquid) & seca (dry). The 1st term is self-explanatory, but what is a dry soup? It describes a separate course (traditionally a tortilla or rice dish) served after the more conventional soup & before the main course.” I never knew that & this “dry soup” sounds so good to me. (Times were estimated & 15 min allowed for ingredient prep + assembly) *Enjoy* ! -- posted by twissis

Smoked Gouda Corn Chowder

A friend's son created this for one of our soup luncheons- delish! Try not to boil the soup, as this will cause it to break and have an unwanted texture. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble ½ lb. bacon. Use the bacon grease instead of the butter for the roux. Add the bacon back to the soup with the salt and pepper. (You will use less salt because of the bacon.) -- posted by gnet

In addition to all that, the soup is truly yummy!
Yummy Potato Soup

This is more of a recipe I came across and tweaked to give it an even better flavor than before. It's similar to loaded baked potato soup, except that I don't care for sour cream or chives so I personally do not add them. However, if you would like to make it that way, I recommend a fourth cup of sour cream added in and about a fourth a cup of chives. You can tweak the amounts of those as well, based on how you liked your baked potatoes, but those amounts should give a good even flavor of everything. Please feel free to experiment with the amounts of seasonings if you'd like, but the ones provided should make it just right. I tried to write this so that even the most novice cook would have no troubles, so if you're more experienced please excuse me for pointing out the obvious at times in the directions :) -- posted by Cypress

Cheddar Leek Soup

This is from the November 2009 Canadian Living Magazine and is easy and delicious. I use aged cheddar (it's white) and I shred enough until my box grater is about 3/4 full.
Sarasota's White Cheddar Cheese Soup

A flavorful soup with simple ingredients. This can be lunch, an easy dinner, or serve this with grilled brats/onions and a side of broccoli apple slaw (my favorite). Just add store bought broccoli slaw in a bag, add some apples, pears and your own dressing and you have a nice dinner. There are also many great recipes on here for slaw of every kind. I think originally this was adapted from Cuisine at Home or Cooking Light, but I have added my touches which I enjoy. Now when I make this, it is usually for friends, so there may be 8 or more of us, so I always make a big pot. You can easily scale this down and just make half, but it is so good that I go ahead and make this and enjoy it throughout the week for a nice snack, lunch or a quick dinner. Why not have a big pot of soup in the refrigerator you can just heat up for a quick bite when. -- posted by SarasotaCook

Horseradish Cheddar Beer Soup

This hearty soup is adapted from a recipe by Jenny Levison, owner of Souper Jenny, a Buckhead GA cafe that serves hundreds of bowls of soup a day from a menu that changes daily. Jenny's soup-making tips include "tasting everything as you go, using recipes as a guide. Read through them and substitute if you need to adapt to what you have on hand or your taste, and then try it!" She suggests using a dark beer like Guinness; others prefer pale ale ... but use a lighter beer if you'd like. I especially like the combination of horseradish, cheese and beer in the basic recipe and suggest adding spices, etc., to heighten flavors as desired. I've included Optional Additions that might give you some ideas but are not part of the original recipe.
Sausage and Wild Rice Chowder
