Halibut With Roasted Grape Tomato Salsa

Being such a mild fish, halibut needs something to make it interesting! This recipe is much healthier than coating the fish with batter & deep frying. The juices are so good on a side of plain steamed rice. You can substitute with other types of fish or different kinds of tomatoes - just adjust the cooking times. If pearl onions aren't available, use a chopped red onion. -- posted by CountryLady

Cilantro Lime Fish

This is a good one for those of us who love lime, since that is the predominant flavor here. Use cod, flounder, or any firm white fish for this. I used Tilapia, and in place of the dried onion I used fresh. I served it with Recipe #120719.
If you are tired of the same baked fish recipe, then I think you will really enjoyed this..it's easy to put together and really good! Although the recipe calls for using sole, and that is the only kind of fish I have used for this recipe in the past, I imagine that you probably could substitute about any kind of thicker fillets for the sole, I am thinking flounder would be a good choice also. -- posted by KITTENCAL

Petrale Sole Rolls With Cauliflower Puree

This recipe is from the Orange County Register (3/16/05) and looks amazing. You can use any firm, thin white fish, as long as it's easy to roll up. The author writes "chopped chives add color and flavor to the cauliflower purée. Spoonfuls of the purée are wrapped with blanched chard leaves, making little oblong bundles, which are easy to roll the fillets around. The dish, cooked in the oven, is finished à la piccata, with shallots and some capers." The cauliflower puree and the chard leaves can be prepared the day before. She recommends serving it with Sauvignon Blanc. I haven't yet tried this recipe. -- posted by What's Cooking?

Soupe De Poissons Dieppoise - Spicy French Fish Soup

Most coastal regions in France have their own special seafood & fish recipes; this is an incredibly tasty soup from the Northern French port of Dieppe. It is a meal in itself - a tangy fish soup served with Rouille, garlic croutons and grated Gruyere or Emmenthal Cheese. There is a hidden "kick" by way of the added Cayenne pepper, which marries so well with the tomatoes & fish. I have posted a recipe for Rouille in RecipeZaar - this is an essential extra, the literal translation meaning "Rust" which points towards the colour - it is a very garlicky & hot mayonnaise based sauce. -- posted by French Tart

Victorian Era Fish Cakes

I absolutely hated fish cakes as a kid, probably because my mother bought cheap cod...They always tasted, I dunno, chalky? But thanks to this recipe that I found in The Great Victorian Cookbook by John Midgley, published in 1995, I may yet change my mind about fish cakes! Tweaked from the original recipe and placed here for future use and safekeeping! -- posted by Cookin'withGas

Linguado Com Salsa Verde/ Portuguese Fish in Parsley Sauce

I am working though posting some recipes from my Portuguese cookbooks, this one is
adapted from Portuguese cooking by Hilaire Walden. I like this recipe because it's great for the weight conscious, no butter, egg or milk in the sauce, it uses potato to thicken the sauce. I plan on making this
recipe but if you make it before I do, I would appreciate the feedback. You could use a leftover boiled or mashed potato, instead of cooking just one especially for this if you wanted to. -- posted by kiwidutch

Pan Sauteed Sole/Flounder Parmesan

From A Guide to Modern American Cooking. It is called Grilled Sole Parmesan there but I changed the name to reflect the cooking style. This is not grilled! I am putting here for future use. ***For the reviewer who wanted advice on how to prevent fish from sticking: try a Teflon or other non-stick pan and use plastic spatulas to move the fish around gently to avoid breaking the fish. Hope this helps. -- posted by Oolala

Petrale Sole With Meyer Lemon Beurre Blanc

From San Francisco Chronicle & SFGate.com. "Beurre Blanc is an elegant sauce for fish & adding the sweet juice of Meyer lemons makes a fine finish for Petrale sole, onf our prized local fish & one of my personal favorites. However, other delicate fish could be treated to the sauce as well or even firm fleshed fish like halibut." -- posted by Trnquilit
