Fire Roasted Tomato Salsa

I had always wanted to create my own salsa, and I think this is a winner. Hope everyone enjoys. Add or delete ingredients to your liking. Like it hot, add more jalapenos, or if you like it really hot try a hotter pepper. If you like it milder, use less jalapeno, and/or raise the amount of fresh chopped tomato. It is a versatile recipe.

Creole Tomato Bruscetta

This was published in The Times-Picayune in anticipation of the Creole Tomato Festival this weekend. That is the festival for the tomato variety called Creole. Can't find a Creole tomato? You are missing something good then, mon cherie. The Cerole tomato was made the LA state vegetable (though we all know it is a fruit) in 2003. Why? "cause they are sooo darned tasty! Use any red, robust full-flavored tomato you can get your hands on - it will taste delicious! -- posted by Buster's friend

Irish Nachos?

This is NOT my recipe - it's Rachael Ray. Usually, I wouldn't post something like this, but it was a 60 second segment between commercial breaks where she gives you cool ideas to mix up old recipes. This aired yesterday and I ran out and HAD to try it. I LOVED IT! I had to post it. Even if no one here ever tried this and reviews this - at least I know if I ever want to find this recipe again - it will be here. -- posted by BBCFan

Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Caramelized Onion Dip

Taken from the CHOW newsletter:
"The addition of goat cheese mimics the zip of Lipton’s famous onion soup mix. We’ve updated classic onion dip by swapping the pack of dehydrated Lipton soup mix for real caramelized onions and goat cheese—but the sweet, salty, tangy flavors you remember are all there. Reminisce with a bag of potato chips. This may be made up to 2 days in advance and refrigerated in a covered container; stir before serving." *Cook time is chill time* -- posted by alligirl

Dad's Pickled Onions

These are my FAVOURITE!!! I love them. I could eat them every day if I was allowed. I had massive cravings for them when I was pregnant with my youngest son......And had none on hand which was inconvenient as I had to wait three weeks after bottling before I could eat them. :) Needless to say, they are fabulous. I think that my Dad got this recipe from my Nana. He likes to reserve the sauce once he has finished a jar and throw in more onions. Not sure where it originates from.....I have only seen one recipe on here that is similar.....please try.
Shrimp Bites Wrapped in Greens

Isabel Cruz's Spicy "Shoestring" Party Menu for a Sultry Late-Summer Night - CBS Morning Show, 09/01/2007. The San Diego-based chef likes to marry the tastes of Latin American cooking she grew up with to the Pacific Rim tastes she's come to know as a Californian. But most of all, Cruz likes to keep her cooking clean, fresh, flavorful and healthy - she likes to go for flavors that pop and offer contrast to one another. She has 5 restaurants on the West Coast, from Portland, Ore. down to San Diego, Ca:). She has also published a cookbook "Isabel's Cantina."Growing-up, Isabel's friends were Puerto Rican, Cuban, Peruvian, and she also spent time with her Asian friends learning Japanese, Chinese and Korean cuisine. Thus, was born her fusion of different flavors. "This is a Thai appetizer of shrimp wrapped with coconut, peanuts, and chiles in a leaf. She likes to use raw collard greens as wrappers for these spicy little snacks, which she drizzles with a little guava sauce to complete the hot-sweet Thai flavors while also bringing these bites further into the Latin realm. Prepare these ingredients in advance, and then assemble these at the last minute." She was given a $60 budget to create a dinner menu for 6 people - thus: Chef on a Shoesting. -- posted by Manami

Fried Chicken Liver, Bacon & Tomato With Ranch Dressing

Jon Shook and Vinny Dotolo from Caramelized Productions Food & Wine Magazine, July 2009 publication. From: Best New Chefs and Their Easiest Recipes. Jon and Vinny soak the livers in buttermilk and coat them in flour, then repeat the process for extra-crispy results. "I'm into livers of all kind now", says Dotolo especially duck and lamb." I tried this with great trepadation and it was really very good, believe it or not! This is a staff favorite at F&W test kitchens and here as well! I just have never had livers as a salad before - so I just dug in and was wonderful! ;) Their wine suggestions:earthy chicken livers, smoky bacon and creamy ranch dressing make this one salad that can easily stand up to a red wine. Beaujolais, made from the Gamay grape, is light-bodied but full of flavor, and an ideal choice. Look for the lively 2007 Georges Duboeuf Beaujolais-Villages or the berry-rich 2006 Chateau de La Chaize. The have a show on the FoodNetwork which escapes me now.
Tomato, Mushroom, Artichoke Flat Bread

This recipe came from the Organic Marin cookbook, attributed to Bungalow 44 Mill Valley - you can make with any veggies you have on hand - it is sooo fresh tasting- the original recipe calls for Heirloom tomatoes only. We added the mushrooms and artichokes as one of my daughters does not like tomatoes. The dough can be made ahead of time and kept refrigerated for up to 2 days. I like to put some fresh herbs like rosemary in to the dough. -- posted by green eyed lady

Little Wild Sorrel and Herb Tarts With Melted Goat's Cheese

A delicious and different way to use sorrel leaves - sorrel is usually used in soup and omelette recipes. These little herb tarts are so summery and make wonderful picnic food, as well as interesting appetisers. I have wild, woodland and cultivated sorrel in my garden, but prefer the tangy almost lemon and vinegar taste of wild sorrel leaves in these little tarts. Serve these warm or at room temperature with lightly dressed salad leaves and a glass of crisp, chilled Chablis or Chardonnay. Notes on using sorrel leaves: Sorrel is one of those ingredients that feature all too rarely in our kitchens, yet its bite and acidity make it one of summer's top temptations. When you're cooking the larger, mature leaves, strip out and discard the stalks, just as you would with spinach, before cooking. Avoid aluminium or cast-iron pans, though, because the oxalic acid in the leaves reacts with the metal and affects the flavour. -- posted by French Tart

When it's much too hot to cook, don't. Chill out with a no-cook meal, and spend more time at the pool .... Not in the kitchen! Hummus is so much more than a dip for pita bread .... It makes a quick and tasty sandwich or wrap filler too.
My mum made the best pasties on earth, but she's gone so I had to make them today from my memories. Pasties were a food we ate when we were poor, so there wasn't much meat in them compared to veg. Swede turnip is very important in pasties.
Ultimate Taquitos OAMC

These taquitos are perfect for a healthy lunch, snack, appetizer, or dinner. I love that you just pop them from freezer to baking pan for a last minute meal. They are our favorite OAMC meal and they disappear very soon after I load the freezer with them! The hot-oil dipping step makes the tortillas very easy to work with and also makes it so when you take them out of the freezer, all you have to do that night is toss them in the oven to heat -- no frying mess on eating night. I have learned to have extra tortillas and extra oil on hand so I don't have to run to the store to get more in case the batch goes further than I planned! -- posted by StephanieZ

Ww Couscous Salad

This is a filling, low points salad. If you really want to make it lower points, cut the amount of couscous you use (my usual couscous is 9 points per cup). I actually use 1/3 cup couscous for 3 points and leave out the olive oil from the dressing to make it really lean. As written, this recipe provides a total of 12 points but using 1/3 cup couscous and no olive oil gives 3 points only. Serves 2 as a lunch or up to 4 as a side dish. Cook time includes half an hour for the salad to chill in the refrigerator. This is easy to increase for large groups or take-to-work lunches. -- posted by Shuzbud

Homemade Corn Tortilla Chips, Easy Cheap Mexican Snack Food

Corn tortillas (used in making Oaxaca-style quesadillas) are available at international and Latin grocery stores, and if you live in a large Latin-American community like I do then you can find corn tortillas in bags of 20-30 for like $2 or less at major grocery stores. Flour tortillas probably won't work as well for this and definitely won't have the corn flavor and base. Never spend money on premade again! You can also control how large or small you want to make them (and keep them seasoned or not) not to mention salt content if you're watching sodium intake. 32 chips is all I could fit on my convection oven's cookie sheet so feel free to use more tortillas; the methodology is all the same. You won't believe how easy it is to get restaurant-style tortilla chips without any icky unnatural ingredients! -- posted by the80srule

Courgette Patties

These were vaguely meant to be courgette fritters, I didn't have any feta so used some cream cheese I had instead - they are quite soft, almost blini-like. Great served with tzatziki. I used mint as I had some, I'd swap that for dill or maybe chives? The courgette I had was quite a large one, use more than one if your courgettes are smaller. -- posted by Moyni

Crunchy Indian-Style Sandwiches

I think this would be rather nice in wraps or rotis as well! Zaar insists on calling my 'poppadoms', 'pappadams' .. I don't know why ...

Roasted Butternut Squash and Leek Soup

This is my adaptation of several squash recipes I've seen. This is a great recipe for a first course of dinner, lunch or snack. It can be prepared up to 2 days ahead of time (bring to work!). Reheat refrigerated soup before adding garnish.

For vegan option, use Vegetable stock rather than chicken stock, substitute olive oil for the butter and omit the cream. Make sure to use a vegan wine as well. -- posted by Austin Vegas

Nick's Salsa

This salsa is my future brother-inlaws recipe. There's nothing fancy about this salsa but I just can't seem to stop eating it. When Nick made this salsa he used the fresh lime juice. -- posted by internetnut
